HOMEMADE ALMOND BUTTER



Homemade Almond Butter image

Homemade almond butter is healthy, affordable and even more delicious than store-bought! It's easy to make, too. You'll just need a good food processor or blender. Recipe yields about 1 2/3 cup almond butter (that's 16 ounces, the equivalent of a jar of almond butter from the store).

16 ounces (3 cups) raw almonds
1/4 teaspoon salt
Optional: 1/4 teaspoon ground cinnamon
Optional: 1/2 teaspoon vanilla extract
Optional: 2 tablespoons maple syrup or honey

Steps:

  • Preheat the oven to 350 degrees Fahrenheit. Spread the almonds across a large, rimmed baking sheet and toast the almonds for 10 minutes, stirring halfway.
  • Let the almonds cool until they're just warm (not hot), about 10 minutes.
  • Transfer the almonds to a high-speed blender or food processor. Blend until creamy, pausing to scrape down the sides as necessary. You're going to think it'll never blend, but be patient! The almonds will go from flour-like clumps, to a ball against the side of the food processor (keep scraping down the sides and breaking up the ball), and finally, it will turn lusciously creamy. If the mixture gets crazy hot along the way, stop and let it cool for a few minutes.
  • Once the almond butter is very smooth and creamy (no sooner!), you can blend in any add-ins you would like. I always add salt, for more flavor overall. You can also add cinnamon for a hint of spice, and vanilla and/or maple syrup for almond butter that tastes more special than store-bought.
  • Blend until the add-ins are evenly dispersed. When I added maple syrup, I had to let the mixture cool, and then blend a few additional minutes, to make it creamy again.
  • Let the almond butter cool to room temperature, then transfer the mixture to a mason jar and screw on the lid. Store in the refrigerator for up to 2 weeks, or until you see or smell any signs of spoilage.

EASY peanut butter overnight oats made with just 5 ingredients and 5 minutes prep time. Naturally sweetened, vegan, gluten-free, and so delicious.

1/2 cup unsweetened plain almond milk ((or sub other dairy-free milks, such as coconut, soy, or hemp!))
3/4 Tbsp chia seeds
2 Tbsp natural salted peanut butter or almond butter ((creamy or crunchy // or sub other nut or seed butter))
1 Tbsp maple syrup ((or sub coconut sugar, organic brown sugar, or stevia to taste))
1/2 cup gluten-free rolled oats ((rolled oats are best, vs. steel cut or quick cooking))
Sliced banana, strawberries, or raspberries
Flaxseed meal or additional chia seeds
Granola

Steps:

  • To a mason jar or small bowl with a lid, add almond milk, chia seeds, peanut butter, and maple syrup (or other sweetener) and stir with a spoon to combine. The peanut butter doesn't need to be completely mixed with the almond milk (doing so leaves swirls of peanut butter to enjoy the next day).
  • Add oats and stir a few more times. Then press down with a spoon to ensure all oats have been moistened and are immersed in almond milk.
  • Cover securely with a lid or seal and set in the refrigerator overnight (or for at least 6 hours) to set/soak.
  • The next day, open and enjoy as is or garnish with desired toppings (see options above). See more flavor/topping suggestions in the blog post above!OPTIONAL: You can also heat your oats in the microwave for 45-60 seconds (just ensure there's enough room at the top of your jar to allow for expansion and prevent overflow), or transfer oats to a saucepan and heat over medium heat until warmed through. Add more liquid as needed if oats get too thick/dry.
  • Overnight oats will keep in the refrigerator for 2-3 days, though best within the first 12-24 hours in our experience. Not freezer friendly.

Easy Homemade Almond Butter image

How to make homemade almond butter in minutes that tastes better than anything you can buy at the store. We use a 12-cup food processor (10-cup should be sufficient), but a large high powered blender should also work.

3 cups (16 ounces) raw unsalted almonds
1/4 teaspoon fine sea salt, plus more to taste
1/4 teaspoon ground cinnamon, optional
1/4 teaspoon vanilla extract, optional
Honey or maple syrup, optional

Steps:

  • Heat oven to 350 degrees Fahrenheit. Add the almonds to a round or square cake pan (or rimmed baking sheet).
  • Roast nuts for 3 minutes, shake pan then roast another 3 to 5 minutes or until the nuts are lightly browned and smell nutty (careful, they can burn quickly). Let cool until you can handle them.
  • If you are making crunchy almond butter, add 1/3 cup of the roasted almonds to the bowl of a food processor. Pulse 6 to 8 times, or until the nuts are chopped into very small pieces. Transfer the chopped almonds to a bowl and reserve for later.
  • Add the roasted almonds to the bowl of a food processor. Process 1 minute then scrape sides of the bowl with a rubber spatula. Process another 2 to 3 minutes until the almond butter is shiny and smooth. Depending on the brand/variety of almonds you are using, this may take slightly longer. As you process them, the almonds will go from whole nuts, to a fine powder, to a clumpy mess, and finally to a creamy smooth substance. Stopping and scraping or breaking up any large clumps will help to quicken the process.
  • When the almond butter is smooth and creamy, add the salt, cinnamon and vanilla. Process for 10 to 20 seconds and then taste. If you feel it needs it, add additional salt, cinnamon or vanilla. To sweeten it, add a teaspoon or more of honey or maple syrup and process another 5 to 10 seconds so that it is well incorporated.
  • For crunchy almond butter, stir in the reserved chopped almonds.
  • Store in a sealed container, like a mason jar, for a few weeks. It will last longer when stored in the fridge.

  • Preheat oven to 350 degrees F (176 C) and add raw nuts to the baking sheet. If sprouted, nuts won't need as long to roast and benefit from a 5-8 minute roast at a lower temperature (325 F or 162 C). Roast raw nuts for 8-12 minutes, or until fragrant and slightly golden brown. NOTE: You can also leave nuts raw, but the only ones that taste good raw in my opinion are cashews and almonds.
  • If roasting hazelnuts, remove from oven once toasted and transfer to a clean dish towel. Rub the hazelnuts against one another using the towel to remove the skins (see photo). Removing most of the skins is preferred (not all will come off).
  • Add roasted nuts to a food processor or blender and blend / mix until a creamy butter forms. The nuts should go from whole, to meal, to clumps, to creamy nut butter. This can take up to 10-12 or more minutes so be patient. Scrape down sides as needed.
  • Once creamy, add salt (or other add-ins) to taste. Then transfer to a clean jar or container and store in the refrigerator up to 3 weeks (sometimes longer).
