Egg-Free Dairy-Free Nut-Free Cake image

This chocolate cake is so good, you'll never miss the dairy products! Check at your health food store for tofu or nondairy chocolate chips.

1 ½ cups all-purpose flour
½ teaspoon salt
1 cup white sugar
¼ cup unsweetened cocoa powder
1 teaspoon baking soda
5 tablespoons vegetable oil
1 tablespoon white vinegar
1 teaspoon vanilla extract
1 cup cold water
½ cup semi-sweet chocolate chips

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease an 8x8 inch baking pan.
  • In a large bowl, combine flour, salt, sugar, cocoa powder, and baking soda. Mix well with a fork, then stir in oil, vinegar, and vanilla extract. When dry ingredients are thoroughly moistened, pour in cold water and stir until batter is smooth. Stir in chocolate chips and pour batter into prepared pan.
  • Bake in preheated oven for 30 to 35 minutes, until a toothpick inserted in center comes out clean. Cool on a rack.

These cookies are sure to be safe in any school! And taste awesome too! One of our children started at a new school this year and it turns out to be a nut and egg free school because of the seriousness of the allergies that some of the children that go there have. As a result my wife started scouring different recipes for snacks that were egg and nut free to send along with our daughter for school. She didn't really like any of the ones she tried so she ended up creating her own out of a combination of all the cookie recipes she tried. Hope you enjoy them as much as we do.

1 cup margarine
3/4 cup brown sugar
1 tablespoon corn syrup
2 cups flour
1 teaspoon vanilla
3/4 cup sugar
2 teaspoons baking soda
2 cups oatmeal
1 cup chocolate chips
1/3 cup boiling water

Steps:

  • Combine margarine, sugars, syrup, and vanilla. Beat until creamy. Add in flour, and baking soda. Mix well. Add boiling water and oatmeal. Stir until well blended. Mix in chocolate chips.
  • Drop by teaspoonfuls onto a cookie sheet.

Number Of Ingredients 8

• 125g butter or pure vegetable margarine, softened
• 125g caster sugar
• 1 tsp vanilla essence or extract
• 200g self-raising flour
• 1 tsp baking powder/soda
• 1 tbsp water
Optional: 2 tbsp coco powder (to make it chocolate)
• Optional : milk chocolate chips or milk chocolate cut into chips or 2 oreos

Steps:

  • Preheat the oven to 180°C ,350°F or gas mark 4.
  • Cream the butter and sugar together(with a wooden spoon) in a large bowl until light, fluffy and golden.
  • Stir everything together (vanilla, flour, baking powder and chocolate chips or oreos, add the water and the Coco powder) to make the yummy dough.
  • Sprinkle some flour onto a surface and the dough. Roll out the dough and with cookie cutters cut out the shapes and lay them out onto greased, lined baking sheets. Spacing them well apart.
  • Bake for about 12 minutes or until golden brown.
  • Leave on the baking sheets for 5 minutes, then transfer to a wire rack to cool.
  • Store in an airtight tin for up to 2-3 weeks.
