EASY KEY LIME PIE
Not usually my kind of recipe--I am ordinarily kind of a purist (i.e., I'd rather make REAL key lime pie with REAL key limes)--but this is simply fantastic. My friend who lives in my apartment complex made it and gave me the recipe.

Steps:
- Beat milk and lime juice in large bowl with electric mixer on medium speed until smooth and thickened.
- Fold in whipped topping.
- Spoon lime mixture into pie crust.
- Cover and refrigerate about 1 hour or until set.
- Garnish with grated lime peel.

Steps:
- Preheat the oven to 375 degrees.
- Mix graham cracker crumbs, sugar and butter well. Press mixture into an 8 inch pie plate.
- Bake for 7 minutes. While the crust is baking, make the filling.
- In a bowl, combine condensed milk, sour cream, lime juice and add to the crust.
- Put it back in the oven for 5 to 8 minutes until you start to see the smallest of bubbles forming.
- Do not let the pie brown.
- Cool before serving.

- Mix the crushed biscuits with the melted baking spread in a bowl and press the crumbs into the base and up the sides of the tin. Chill for ten minutes.
- Using a balloon whisk, mix the condensed milk and cream until combined, then add the lime juice and the majority of the zest (it will thicken!). Pour onto your biscuit base and chill for at least 1-2 hours. This Key Lime Pie recipe can also be made with lemons - replace the five limes with four lemons for a lovely fresh twist. Or, try gingernut biscuits in the base they go beautifully with the tangy lime.
- Remove the pie from the tin and place on a serving plate. As the perfect finishing touch to your key lime recipe, decorate with the spoonfuls of crème fraiche and the rest of lime zest and serve.

- 1. Combine sweetened condensed milk, lime juice, Cool Whip, and vanilla on low speed until well blended. Add a few drops of green food color, if you desire, and mix in well.
- 2. Pour into a 9 inch graham cracker crust. Garnish with fresh grated lime peel. Cover and refrigerate until ready to serve.

Pour into graham cracker crust and bake at 325 for about 20 minutes (check after about 13 minutes) or center is jiggly when shaken slightly, or when knife inserted in center leaves mark. - Prepare the graham cracker crust by mixing the melted butter with the graham crumbs until you've reached the texture of wet sand.
