CORA'S FAMOUS BROWN SUGAR FUDGE



Cora's Famous Brown Sugar Fudge image

If you've eaten at Cora's for breakfast in Canada, you know all about their classic brown sugar fudge. Sweet, creamy, and so incredibly easy to make!

Number Of Ingredients 4

3 cups brown sugar (750ml)
2/3 cup melted butter (150ml) see notes
2/3 cup heavy whipping cream (150 ml)
2 cups icing sugar, sifted (500ml)

Steps:

  • Lightly butter a 6" x 10" glass pan. I like to line it with parchment paper first, then butter that. It makes it easier to remove and slice nicely.
  • In a medium saucepan set over medium-high heat, mix together the brown sugar, heavy cream, and melted butter. Bring to a boil, and continue to boil for 5 minutes.
  • Remove the pan from the heat and stir in the icing sugar. I sift it right into the pot, to make sure there aren't any lumps.
  • Beat with an electric mixer until creamy and smooth. I use the whisk attachments for my hand mixer, but the standard beaters work well too.
  • Pour the fudge into the prepared pan and let cool until firm. You can do this in the fridge if you need to save time.
  • Cut into 1" squares to serve

4 1/2 cups sugar
Pinch salt
2 tablespoons butter
1 (12-ounce) can evaporated milk
2 cups coarsely chopped pecans
1 pint (1 jar) marshmallow cream
12 ounces semisweet chocolate
12 ounces German's sweet chocolate

Steps:

  • In a heavy saucepan over medium heat, bring the sugar, salt, butter and evaporated milk to a boil. Boil for 6 minutes.
  • Meanwhile, place the pecans, marshmallow fluff and chocolate in a large bowl. Pour the boiled syrup over the chocolate mixture. Beat until chocolate is all melted.
  • Spray a 15 1/2 by 10 1/2 by 1-inch jelly-roll pan with a nonstick cooking spray and pour fudge into pan. Let harden at room temperature before cutting into 1-inch squares (can be placed in the refrigerator or freezer to speed hardening process).

This recipe used to be found on the back of a well known brand of marshmallow cream. Many were surprised when it was changed. This is the original! You may find that most packages of chocolate chips are 10 ounces now; 12 ounces of chocolate chips is roughly 2 cups.

  • Grease a 9x13-inch pan.
  • Mix sugar, margarine, and evaporated milk in a large, heavy saucepan over medium heat, stirring to dissolve sugar. Bring mixture to a full boil for 5 minutes, stirring constantly.
  • Remove from heat and stir in chocolate chips until melted and thoroughly combined. Beat in marshmallow creme, walnuts, and vanilla extract. Transfer fudge to the prepared pan and let cool before cutting into squares.

2 cups white sugar
½ cup cocoa
1 cup milk
4 tablespoons butter
1 teaspoon vanilla extract

Steps:

  • Grease an 8x8 inch square baking pan. Set aside.
  • Combine sugar, cocoa and milk in a medium saucepan. Stir to blend, then bring to a boil, stirring constantly. Reduce heat and simmer. Do not stir again.
  • Place candy thermometer in pan and cook until temperature reaches 238 degrees F(114 degrees C). If you are not using a thermometer, then cook until a drop of this mixture in a cup of cold water forms a soft ball. Feel the ball with your fingers to make sure it is the right consistency. It should flatten when pressed between your fingers.
  • Remove from heat. Add butter or margarine and vanilla extract. Beat with a wooden spoon until the fudge loses its sheen. Do not under beat.
  • Pour into prepared pan and let cool. Cut into about 60 squares.

1 tablespoon plus 1/2 cup butter, divided
3 milk chocolate candy bars (two 7 ounces, one 1.55 ounces), broken into pieces
4 cups semisweet chocolate chips
1 jar (7 ounces) marshmallow creme
1 can (12 ounces) evaporated milk
4-1/2 cups sugar
2 cups chopped walnuts

Steps:

  • Line a 13-in. x 9-in. pan with foil and butter the foil with 1 tablespoon butter; set aside. In a large heat-proof bowl, combine the candy bars, chocolate chips and marshmallow creme; set aside. , In a large heavy saucepan over medium-low heat, combine the milk, sugar and remaining butter. Bring to a boil, stirring constantly. Boil and stir for 4-1/2 minutes. Pour over chocolate mixture; stir until chocolate is melted and mixture is smooth and creamy. Stir in walnuts. Pour into prepared pan. Cover and refrigerate until firm., Using foil, lift fudge out of pan; cut into 1-in. squares. Store in an airtight container in the refrigerator.
