Caution: Recipe calls for almonds; persons with nuts intolerance should exclude this ingredient entirely from the recipe. Chicken is tender; sauce can be poured over Sweet potato, rice, or orzo accompaniment. Serve with salad and/or other vegetables. Sauce is excellent over sweet potatoe or carrots; however this creates a very high sugar content; not suitable for diabetic diets. Persons with diabetes should not pour this sauce over their vegetables.

Ingredients

2 1/2 lbs chicken pieces
1/2 cup maple syrup
1/2 teaspoon grated fresh lemon rind
1/4 cup chopped almonds
1 pinch pepper
2 teaspoons lemon juice

Steps:

Over 400 F (200 C).
Remove skin from chicken pieces, and discard skin.
Place chicken pieces in a shallow 9 x 13 (3 litre) pan.
Mix remaining ingredients and pour over chicken.
Bake in 400F (200C) oven, uncovered, for 50 minutes, basting occasionally.

Ingredients

3 lbs roasting chickens, cut in pieces
4 tablespoons butter, melted
1/2 teaspoon grated lemon
1/2 cup pure maple syrup
1 teaspoon salt
1 dash pepper
2 teaspoons lemon juice
1/4 cup chopped nuts (optional)

Steps:

Place chicken in a shallow casserole dish or baking pan.
Combine remaining ingredients and pour over chicken pieces.
Bake uncovered in 400F oven for 50-60 minutes, basting every 15 minutes.

Ingredients

2 lbs chicken pieces
1/3 cup flour
1/4 cup vegetable oil
1/2 cup maple syrup
2 tablespoons cider vinegar
2 tablespoons sherry wine
2 tablespoons light soya sauce
2 teaspoons grated ginger
2 cloves minced garlic
1/2 teaspoon pepper
1/4 teaspoon paprika

Steps:

Coat chicken pieces in flour.
In nonstick frying pan, add oil and cook chicken for 5 minutes or until well browned, turning often.
Arrange chicken in a 9 by 12 baking dish.
Combine remaining ingredients in a bowl and pour evenly over chicken.
Bake at 350 for 45 minutes to one hour, turning once during baking.
Cover with foil if it is browning too quickly.
Garnish with chopped fresh parsley if desired.
