I remember my mother sending me to the store for 15 cents worth of cheese. The butcher would cut off a slice from a gigantic wheel covered with a wax-coated cloth. 2 cups elbow macaroni, cooked and drained
1 can (28 ounces) diced tomatoes, undrained
1/2 teaspoon onion salt, optional
1/4 teaspoon pepper
2 cups shredded cheddar cheese, divided
2 tablespoons butter

Steps:

  • In a bowl, combine macaroni, tomatoes, onion salt, pepper and 1-1/2 cups cheddar cheese. Pour into a greased 2-qt. baking dish. Dot with butter. Bake, uncovered, at 350° for 45 minutes. Sprinkle with remaining cheese; bake 15 minutes longer.

1-1/2 cups uncooked elbow macaroni
5 tablespoons butter, divided
3 tablespoons all-purpose flour
1/2 teaspoon salt
1/4 teaspoon pepper
1-1/2 cups whole milk
1 cup shredded cheddar cheese
2 ounces cubed Velveeta
2 tablespoons dry bread crumbs

Steps:

  • Cook macaroni according to package directions. Meanwhile, in a saucepan, melt 4 tablespoons butter over medium heat. Stir in flour, salt and pepper until smooth. Gradually add milk. Bring to a boil; cook and stir for 2 minutes or until thickened. Reduce heat. Add the cheeses, stirring until cheese is melted. Drain macaroni., Transfer macaroni to a greased 1-1/2-qt. baking dish. Pour cheese sauce over macaroni; mix well. Melt the remaining butter; add the bread crumbs. Sprinkle over top. Bake, uncovered, at 375° for 30 minutes or until heated through and topping is golden brown.

This is the classic baked Mac and Cheese of my childhood. You can add sun-dried tomatoes if you wish, or sometimes I substitute minced garlic for the salt and pepper to give it added zing! It can make Saturday Night more fun!

1 (16 ounce) package macaroni
1 pound sharp Cheddar cheese, sliced
1 tablespoon butter
salt and pepper to taste
1 (12 fluid ounce) can evaporated milk

Steps:

  • Preheat oven to 375 degrees F (190 degrees C). Bring a large pot of lightly salted water to a boil. Add pasta and cook for 8 to 10 minutes or until al dente; drain.
  • Grease a 2 quart casserole dish. Place a quarter of the macaroni in the bottom, followed by an even layer of one-quarter of the cheese slices. Dot with butter and season with salt and pepper. Repeat layering three times. Pour evaporated milk evenly over the top of all.
  • Bake, uncovered, for one hour, or until top is golden brown.

My Mother's Baked Macaroni and Cheese image

I loved this macaroni and cheese as a child and still love it today, it is comfort food at it's best. I think the crushed potato chips as a topping and dry mustard as an ingredient make her version of macaroni and cheese stand out.

1 lb elbow macaroni, cooked
CHEESE SAUCE
2 Tbsp butter
2 Tbsp all purpose flour
1 tsp coleman's dry mustard
pinch freshly grated nutmeg
2 c milk
kosher salt and freshly ground black pepper to taste
2 1/2 c sharp cheddar cheese, grated (reserve 1/2 cup for topping)
crushed potato chips as a topping

Steps:

  • 1. Boil elbow, drain and put into a buttered casserole dish; set aside.
  • 2. In the top of a double boiler melt butter and add flour, cook for several minutes to get the flour taste out. Whisk in dry mustard, nutmeg and salt and pepper to taste. Then slowly add milk, whisking to incorporate roux with the milk.
  • 3. When basic white sauce is smooth and creamy add 2 cups shredded cheddar cheese. Stirring until cheese is melted.
  • 4. Pour cheese sauce over elbows and mix well. Top with additional 1/2 cup cheese and crushed potato chips.
  • 5. Bake at 350-degrees for 35-40 minutes until bubbly.

This stuff is rich! Uses three kinds of cheese: sharp white Cheddar, smoked Gouda, and Parmesan. This is a specialty of John's City Diner in Birmingham, Alabama.

1 cup panko breadcrumbs (Japanese breadcrumbs)
1 (4 ounce) package thinly sliced prosciutto
1 (16 ounce) package penne pasta
1/2 cup butter
1 shallot, minced
1/4 cup dry white wine
1/4 cup all-purpose flour
2 cups milk
2 cups whipping cream
1 bay leaf
1/2 teaspoon salt
1/4 teaspoon ground red pepper
2 (10 ounce) blocks sharp white cheddar cheese, shredded
4 ounces shredded smoked gouda cheese
2 ounces shredded parmesan cheese

Steps:

  • Preheat oven to 400°. Bake breadcrumbs in a single layer on a baking sheet 5 to 7 minutes or until golden, stirring once after 2 1/2 minutes.
  • Cook prosciutto, in batches, in a lightly greased large skillet over medium heat 3 to 4 minutes on each side or until crisp. Drain on paper towels; crumble.
  • Prepare pasta according to package directions.
  • Meanwhile, melt butter in a Dutch oven over medium heat; add shallot, and sauté 3 minutes or until tender. Add wine, stirring to loosen particles from bottom of Dutch oven, and cook 1 minute.
  • Gradually whisk in flour until smooth; cook, whisking constantly, 2 minutes. Gradually whisk in milk and next 4 ingredients; cook, whisking constantly, 12 to 14 minutes or until mixture thickens and begins to bubble. Remove and discard bay leaf.
  • Place 4 cups (16 oz.) Cheddar cheese in a large heatproof bowl. Reserve remaining Cheddar cheese for another use. Add Gouda and Parmesan cheeses to bowl.
  • Gradually pour white sauce over cheeses, whisking until cheeses are melted and sauce is smooth.
  • Stir in pasta and prosciutto until blended. Pour into a lightly greased 13- x 9-inch baking dish; sprinkle with breadcrumbs.
  • Bake at 400° for 15 minutes or until bubbly. Serve immediately.

1 (16 ounce) package gemelli (small twisted pasta)
1 tablespoon olive oil
1 pound lean ground beef
salt and ground black pepper to taste
3 tablespoons butter
3 tablespoons all-purpose flour
3 cups milk
1 cup shredded fontina cheese
1 cup shredded sharp Cheddar cheese
1 cup shredded white Cheddar cheese
¼ cup grated Parmesan cheese
⅛ teaspoon paprika
⅛ teaspoon ground nutmeg
⅛ teaspoon garlic powder
1 pinch ground cinnamon
1 pinch chili powder
2 tablespoons butter
½ cup Italian-seasoned breadcrumbs
2 tablespoons grated Parmesan cheese

Steps:

  • Fill a large pot with lightly salted water and bring to a rolling boil over high heat. Once the water is boiling, stir in the gemelli, and return to a boil. Cook uncovered, stirring occasionally, until the pasta has cooked through, but is still firm to the bite, about 8 minutes. Drain well in a colander set in the sink. Add olive oil, and toss pasta until coated; set aside.
  • Heat a large skillet over medium-high heat and stir in the ground beef. Season with salt and black pepper. Cook and stir until the beef is crumbly, evenly browned, and no longer pink, about 10 minutes. Drain and discard any excess grease. Set aside.
  • Preheat an oven to 350 degrees F (175 degrees C).
  • Heat 3 tablespoons butter and the flour in a large skillet over low heat. Cook and stir until the butter is melted and the flour is incorporated, then slowly whisk in the milk. Stir in the fontina cheese, sharp Cheddar cheese, white Cheddar cheese, and 1/4 cup Parmesan cheese; cook, whisking constantly, until cheese is melted and sauce is thickened, about 5 minutes. Season with paprika, nutmeg, garlic powder, cinnamon, and chili powder. Season to taste with salt and black pepper. Stir in the pasta and beef, and transfer mixture to a large baking dish.
  • Combine 2 tablespoons butter, bread crumbs, and the remaining 2 tablespoons Parmesan cheese in a bowl. Sprinkle mixture over the pasta in the baking dish.
  • Bake in the preheated oven until bubbly, about 12 minutes, then set the oven on broil. Broil until lightly browned, about 3 more minutes.

1/2 cup dry white wine
4 cups heavy cream
2 tablespoons olive oil
1 garlic clove, minced
2 teaspoons minced shallots
4 tablespoons Dijon mustard
4 ounces Appenzeller cheese, grated
4 ounces gouda cheese, grated
4 ounces gruyere cheese, grated
salt and pepper
1 lb fusilli
1 tablespoon butter
3 ripe tomatoes, peeled, seeded and chopped
1 dash cayenne pepper
1 dash Worcestershire sauce
4 ounces parmesan cheese, grated

Steps:

  • Butter a large rectangular baking dish and set it aside.
  • Combine the stock and wine, bring to a boil and reduce it to 3/4 cup.
  • bring the cream to a boil and reduce it to 3 cups.
  • Heat the oil in a heavy saucepan.
  • Add the garlic and shallots and cook them until they are soft, 5 to 10 minutes.
  • Add the reduced stock and cream.
  • Whisk in the mustard.
  • Reduce the heat to low and add the cheeses, stirring often until they have melted.
  • Add salt and pepper to taste.
  • Cook the pasta in boiling salted water until al dents.
  • Drain and toss it with the butter.
  • Add the tomato, cayenne and Worcestershire sauce to the cheese mixture and heat the sauce thoroughly.
  • Pour the cheese sauce over over the pasta, tossing well.
  • Transfer to the baking dish.
  • Sprinkle the top with the Parmesan cheese.
  • Broil until the cheese melts and is golden, about 5 minutes.

1 1/2 cups whole milk

Steps:

  • Boil macaroni until tender.
  • Put half of macaroni in a 9 x 12 inch baking dish, cover with slices of cheese, add rest of macaroni, cover top of dish with cheese. Mix eggs and milk completely. Pour over mac and cheese. This holds mac and cheese together.

1 cup medium cheddar
2 cups (sm box) sliced Velveeta
1 box elbow macaroni
4 eggs
3 cups whole milk
1 cup heavy cream
1/2 stick butter
salt and pepper to taste

Steps:

  • 13x9 pan 4 inches deep, sprayed with non-stick preheat oven to 350. Boil noodles until under cooked. Quick rinse, drain Mix eggs, milk, cream, salt & pepper, whisk until well belnded. Pour 1/2 of milk mixture in bottom of pan. Add a layer of noodles then add salt and pepper. Take shredded cheese and combine in a bowl, toss. Top noodles with cheese, mix up and repeat layers. Salt and pepper each layer. Last layer = cheese heavy top, pour rest of milk mixture over cheese top. Poke holes for mixture to seep to bottom. Melt butter and pour over top. Salt and pepper. Cover tightly with foil. Bake 45 min. Remove foil cook 5 min more. Let stand 10-15 min. before serving.
