Brown butter and vanilla bean add complexity to the apple filling in this rich cobbler.

1 1/2 sticks unsalted butter (3/4 cup), 1/2 stick cut into large pieces, remaining 1 stick cold and cut into small pieces
3 pounds Granny Smith apples (6 to 7), peeled, cored, and cut into eighths
1 tablespoon fresh lemon juice
2 1/4 cup all-purpose flour, divided
Coarse salt
1/2 cup plus 1 tablespoon granulated sugar, divided
1/2 cup packed light-brown sugar
1 vanilla bean, seeds scraped
2 teaspoons baking powder
1 cup plus 2 tablespoons heavy cream, plus more for brushing
Sanding sugar, for sprinkling

Steps:

  • Preheat oven to 375 degrees. Melt 1/2 stick butter in a small saucepan over medium-low heat and cook, swirling pan occasionally, until butter is golden brown and fragrant, about 8 minutes; let cool. Toss together apples and lemon juice in a large bowl. Combine 1/4 cup flour, 1/2 teaspoon salt, 1/3 cup granulated sugar, brown sugar, and vanilla-bean seeds in another bowl, breaking up clumps and combining with a fork or fingers. Add browned butter to apples. Stir in flour mixture.
  • Transfer apple mixture to a 9-by-13-inch baking dish, cover tightly with parchment-lined foil. Place a parchment-lined baking sheet on bottom rack of oven to catch juices. Bake apples on middle rack directly over the baking sheet, 10 minutes. Remove and discard parchment-lined foil.
  • Whisk remaining 2 cups flour, baking powder, 1/2 teaspoon salt, and remaining 1/4 cup granulated sugar in a medium bowl. Cut remaining 1 stick butter into flour mixture using a pastry blender or 2 knives to form clumps that are no larger than small peas. Add cream to flour mixture; stir until a soft, sticky dough forms. Divide dough into 10 equal pieces; arrange over filling. Brush dough with cream, and sprinkle with sanding sugar.
  • Return cobbler to oven on middle rack directly over the baking sheet until topping is golden brown and juices are bubbling, about 55 to 65 minutes. If topping is browning too quickly, cover loosely with foil. Let cool 20 minutes on a wire rack before serving.

Mom found this recipe in a bridal book years ago, and it soon became a family favorite. With tender juicy apples and a hint of cinnamon, it is yummy served plain or with a dollop of whipped cream or ice cream.

5 medium tart apples, peeled and sliced
1-1/4 cups sugar, divided
1-3/4 teaspoons ground cinnamon, divided
1 cup all-purpose flour
1 teaspoon baking powder
1/2 teaspoon salt
1/2 cup cold butter, cubed
1 cup water

Steps:

  • In a large bowl, combine the apples, 1/4 cup sugar and 1 teaspoon cinnamon. Transfer to a greased 8-in. square baking dish. , In a small bowl, combine the flour, baking powder, salt and remaining sugar; cut in butter until crumbly. Sprinkle over apples, pressing down to smooth top. , Slowly pour water over the top; sprinkle with remaining cinnamon. Bake, uncovered, at 400° for 40-45 minutes or until apples are tender. Serve warm.

24 Oreo cookies
1/2 cup butter, melted
1 cup flaked coconut
1-1/2 cups crisp brown rice cereal
1 can (13.4 ounces) dulce de leche
6 tablespoons warm water (110° to 115°)
1-1/2 cups coarsely chopped pecans
1/4 teaspoon sea salt

Steps:

  • Preheat oven to 350°. Pulse cookies in food processor until finely chopped. Combine crumbs and melted butter; press onto bottom of greased, foil-lined 13x9-in. baking pan. Spread coconut over crust; sprinkle with crisp rice cereal., Combine dulce de leche and water until smooth. Pour over cereal. Sprinkle pecans over dulce de leche; press down lightly., Bake until edges are set but center is still soft, about 30 minutes. (Do not overbake.) Remove from oven; immediately sprinkle with sea salt. Cool completely on a wire rack before cutting into 24 squares.

I cant remember where I found this recipe, but it is super yummy. Its fairly easy to make, and seems to me that if you had unexpected company, this would be a way to WOW them. :)

1/4 cup apple juice
1/3 cup raisins
2 (20 1/2 ounce) cans apple pie filling
1/2 cup walnut halves
1 sheet frozen puff pastry, thawed
1 egg, beaten with
1 tablespoon water
2 teaspoons sugar

Steps:

  • Heat oven to 400 degrees. Coat a 2-quart baking dish with nonstick cooking spray.
  • Heat apple juice in a medium-size sauce pan. Add raisins and cook 1 minute. Add apple pie filling and bring to a simmer. Stir in walnuts. Spoon filling into prepared baking dish.
  • Unroll puff pastry on a lightly floured surface. Cut out 12 circles with a 2-inch cutter. Place circles over top of apple mixture and brush with egg-water wash. Sprinkle with sugar.
  • Bake at 400 degrees for 20 minutes, until pastry is browned. Remove from oven:cool slightly.

Though my mom calls it 'homemade peach cobbler'; I understand that its use of store-bough crust might call that name into question. Note: If you use frozen peaches, make sure to thaw first. Voilà! :-)

1/2 cup butter
2 tablespoons flour
1/2 cup brown sugar
1/2 cup granulated sugar
1/2 cup milk
1/2 teaspoon cinnamon
1/2 teaspoon nutmeg
1/2 teaspoon salt
3 cups sliced peaches, fresh, canned
pie crust
1/4 cup sugar
1/4 cup flour
1 pinch salt
2 tablespoons butter

Steps:

  • Melt butter in a shallow 2-quart baking dish. Mix together flour, sugar, and milk to make a batter; pour over the hot melted butter. Do not stir. Arrange peaches evenly over sauce on bottom of a 10x6x2-inch baking pan.Sprinkle with cinnamon, nutmeg and salt. Make sure the sauce does not cover peaches.
  • Crust: Take crust out of refrigerator and bring to room temperature. Roll out and cut into strips for basket weave. Top peaches with basket weave crust.
  • Topping: Mix ingredients and sprinkle atop crust.
  • Bake cobbler until bubbly and slightly browned (at 375 to 400° for about 40 to 50 minutes). Serve warm with vanilla ice cream or whipped cream.
