PLUM CAKE
This Bundt pan cake is a step back to the 70's. Instead of plum baby food, you can substitute cinnamon apple sauce or another baby food fruit.

Steps:
- Preheat oven to 325.
- Mix all ingredients together.
- Grease and flour your Bundt Pan.
- Bake for 1 hour.
- Cool in pan for 5 minutes before turning onto a cooling rack.

OVEN-ROASTED PLUM CAKES
Julia Child's plum cakes are simply one of the best desserts we have had the honor and pleasure of making and eating. A pitted plum (or peach, or nectarine) half is dropped into a ramekin and embraced by cake batter so lovingly. When it bakes, that batter rises to enclose the plum in a cake that is beautifully moist, buttery, and of perfect texture. The sugars in the plum release to create a natural syrup that flows through the cake to make every bite sinful. The steps seem odd, but no more odd than the woman herself. She did know a thing or two about how to make good food, easily, while still managing to make a mess. Kitchen mistakes happen. This dessert is no fail, and the only mistake is not making it often enough.

Steps:
- Preheat oven to 350. Butter 8 ramekins and place them on a rimmed baking sheet.
- Combine the sugar and orange zest well.
- Cream the butter, 2 T of brown sugar, and the granulated sugar mixture for 6 minutes, scraping down the sides of the bowl as needed.
- Add the eggs one at a time, mixing well after each addition.
- Add the vanilla and mix well.
- Add the flour and baking soda and beat on low speed for only 15 seconds.
- Pour in the buttermilk and beat for 30 seconds more.
- Remove from mixer and use a spatula to finish blending the ingredients if necessary.
- Place a half plum, cut side up, into each cup.
- Spoon the batter into the ramekins, dividing the batter among them evenly.
- Sprinkle the remaining brown sugar evenly over each plum.
- Bake 25 minutes or until a toothpick inserted into the cake portion comes out clean.
- Cool the cakes 10 minutes.
- To serve, top with vanilla ice cream or whipped cream, if desired.

- In a large bowl, combine sugar and oil. Beat in eggs, one at a time, until well blended. Combine flour and cinnamon; add to egg mixture. Beat in baby food; stir in nuts. Transfer to a greased and floured 10-in. fluted tube pan., Bake at 350° for 35-45 minutes or until a toothpick inserted in the center comes out clean. Cool for 10 minutes before inverting onto a wire rack to cool completely. Dust with confectioners' sugar if desired.

Steps:
- Preheat oven to 325 degrees F (165 degrees C). Grease and flour a 10-inch Bundt pan.
- Sift together the flour, baking powder, cinnamon, cloves and salt. Set aside.
- In a large bowl, combine sugar, eggs, and oil. Beat until smooth. Mix in baby food and nuts. Beat in flour mixture alternately with applesauce. Pour batter into the prepared pan.
- Bake in the preheated oven until a toothpick inserted into the center of the cake comes out clean, about 45 minutes. Cool in pan for 10 minutes, then turn out onto a wire rack and cool completely.

MANDABEAR'S PLUM DUMP CAKE
Better to use baby food for this spice cake instead of scraping it out of your hair when your baby spits it out at you. Really easy, moist spice cake. (can also make 4 small loaves)

Steps:
- Preheat oven to 350°F.
- Grease and flour a bundt pan, or 4 3x3" loaf pans, ot a 13x9" pan.
- Put all ingredients in large bowl and mix at medium speed until well blended.
- Pour into desired pan.
- Bake at 350 F until toothpick inserted into center comes out dry.
- 55-65 minutes for bundt pan, 20 minutes for small loaf pans, 55-65 minutes for 13x9" pan.
- Remove from oven.
- Remove cake from bundt pan onto cooling rack over a large plate and pour on glaze.
- Can keep cake in loaf pans or 13x9 pan and pour on glaze.
- If you don't want to use the glaze, you can sprinkle on confectioners sugar instead.

- 1. Sift together flour, sugar, cinnamon, and cloves.
- 2. Add oil, vanilla, eggs, and plums. Beat until thoroughly mixed.
- 3. Pour batter into a greased Bundt pan. Bake at 350 for 45 minutes.
- 4. Icing: Mix the sifted confectioners' sugar and lemon. Just make a little more if this isn't enough icing to give as much flavor as you'd like.
- 5. SANDY'S NOTE": I've had a hard time finding baby food plums lately. Apples and Blueberries will probably work just as well. Just anything with a purple color, but I don't know how well prunes will do.
