1 cup unsalted butter
1 cup crunchy peanut butter
1 cup white sugar
1 cup packed brown sugar
2 large eggs eggs
2 ½ cups all-purpose flour
1 teaspoon baking powder
½ teaspoon salt
1 ½ teaspoons baking soda

Steps:

  • Cream butter, peanut butter, and sugars together in a bowl; beat in eggs.
  • In a separate bowl, sift flour, baking powder, baking soda, and salt; stir into butter mixture. Put dough in refrigerator for 1 hour.
  • Roll dough into 1 inch balls and put on baking sheets. Flatten each ball with a fork, making a crisscross pattern. Bake in a preheated 375 degrees F oven for about 10 minutes or until cookies begin to brown.

Peanut butter cookies that stay soft with a good flavor but not too sweet! You won't make another recipe after this one!

½ cup margarine, softened
½ cup peanut butter
½ cup white sugar
½ cup packed brown sugar
1 egg
½ teaspoon vanilla extract
¾ teaspoon baking soda
¼ teaspoon salt
1 ¾ cups all-purpose flour

Steps:

  • Combine margarine, peanut butter, sugars, egg, and vanilla. Blend together very well.
  • Add flour, baking soda and salt with mixer. Chill dough 15 minutes in the refrigerator. Roll into balls by hand.
  • Place on sprayed cookie sheet and bake in a preheated 350 degrees F (175 degrees C) oven until edges very lightly browning (about 7 to 10 minutes). Don't overcook. We store them in a plastic storage containers, and they stay soft!

Make a batch of these flourless peanut butter cookies in less than 15 minutes! They are soft and absolutely delicious plain, with a dollop of jam or a drizzle of chocolate on top. We prefer these with a blend of granulated and brown sugar, but you can use just one type of sugar. (We use 1/2 cup brown sugar and 1/4 cup white) **If making the jam-filled cookies, it is best to add the jam the day of serving. If left overnight, the cookies will soften too much from the extra moisture. Store plain cookies and chocolate drizzled cookies in an airtight container up to 2 days or freeze wrapped individually up to 3 months.

1 cup peanut butter, creamy or chunky, see notes
1 large egg
3/4 cup sugar, use granulated, brown sugar or a blend
1 teaspoon baking soda
1/2 teaspoon vanilla extract
1/2 teaspoon molasses, optional
1/4 teaspoon ground cinnamon, optional
Pinch of salt, to taste, see notes

Steps:

  • Heat the oven to 350 degrees Fahrenheit. Line two baking sheets with parchment paper or use silicone baking mats.
  • In a medium bowl, mix the peanut butter, egg, sugar, baking soda, a pinch of salt, vanilla, molasses (optional), and the cinnamon (optional) together until blended and scoopable.
  • Scoop or roll into 1-inch balls and place two inches apart on the prepared baking sheets. Press the mounds down with the back of a spoon or the tines of a fork to flatten the cookie out a bit.
  • Bake until the outer edges are starting to turn light brown and the tops look dry, 8 to 11 minutes. Cool the cookies on the baking sheet, without moving them, for 10 minutes. Transfer the cookies to a cooling rack to cool completely. (The cookies will firm up as they cool).
  • For jam-filled peanut butter cookies, before baking, use a spoon to make a small indent in the middle of the cookie dough balls. When the cookies are baked and cool, spread a teaspoon of jam into the middle of each cookie.
  • For the chocolate drizzled cookies, when the cookies are baked and cool, melt 1/3 cup chocolate chips and drizzle over cookies. For chocolate-peanut butter drizzled cookies, add one tablespoon of peanut butter to the chocolate chips before melting.

1 1/2 cup all-purpose flour (180g)
1/2 cup butter (unsalted, room temp 113g)
1 cup peanut butter (250g)
1/2 cup brown sugar (100g, lightly packed)
1/2 cup sugar (100g)
1 tsp vanilla extract (5mL)
1 egg (large, room temp)
3/4 tsp baking powder (3g)

Steps:

  • Preheat over to 350F
  • Sift flour and baking powder together then whisk to combine.
  • Cream butter and sugars in a stand mixer fitted with a paddle attachment. You can add an optional 1/4-1/2 tsp sea salt.
  • Add peanut butter and mix until incorporated.
  • Mix in egg and vanilla extract then add flour mixture and beat until incorporated.
  • Roll dough into one inch balls and place on baking sheet lined with parchment paper.
  • Flatten cookies with a fork in a criss-cross pattern.
  • Bake cookies for about 10 minutes.
  • Allow cookies to cool completely on baking sheet, they need to set up before being transferred.

Got a couple of recipes mixed up and ended up making my own! I love peanut butter cookies but find most have too much sugar for my liking. These have a nice peanut flavour and tend to be a little crispy - and of course, they're not too sweet!

3/4 cup peanut butter
3 tablespoons milk
1 tablespoon vanilla
2 cups flour
1/2 cup quick oats
1 teaspoon baking soda
1/2 teaspoon salt

Steps:

  • Cream margarine, brown sugar, peanut butter together by hand or with hand mixer until smooth and blended.
  • Add milk, vanilla and egg.
  • Mix well.
  • Sift dry ingredients together and add to batter slowly, mixing well between additions.
  • Roll into approximately 1" balls and flatten with the tines of a fork.
  • Bake at 375 degrees for approximately 10-12 minutes.
