ANTI-SEAFOOD JAMBALAYA

I've always loved the flavors of jambalaya but can rarely enjoy it because I hate seafood. SO I created my own New Orleans-style jambalaya without seafood, just sausage and chicken.

2 tablespoons oil
3/4 lb smoked garlic sausage, sliced
3/4 lb boneless chicken, sliced
2 stalks celery, sliced
1 onion, chopped
1 green bell pepper, chopped
2 bay leaves
2 teaspoons garlic
1 teaspoon thyme
salt
cayenne pepper
1 1/2 cups brown rice
2 (10 ounce) cans low sodium chicken broth
1 (14 3/4 ounce) can diced tomatoes, undrained
3 scallions, sliced

Steps:

  • In a soup pot, heat 1 tbsp oil. Add sausage and chicken and cook until brown, about 5 minutes. Transfer the mix to a large bowl.
  • In the same pot, heat remaining oil and add celery, onion, and bell pepper. Cook about 5 minutes.
  • Add bay leaves, garlic, thyme, salt and cayenne pepper, cook 2 minutes longer.
  • Return sausage mix to the pot, add uncooked rice, broth, and tomatoes.
  • Bring mix to a boil and reduce heat to low. Allow to simmer, covered, 20 minutes. Cook until rice is tender about 10 minutes longer and remove bay leaves.
  • Sprinkle with scallions and serve.

My husband started with a one pot jambalaya recipe which he made tomato free since I hate tomatoes. This recipe has ham and shrimp and zucchini and we really love it. It's really good with Applewood Smoked ham.

1 red pepper, chopped
1 green pepper, chopped
1 zucchini, chopped
1 white onion, chopped
1 tablespoon olive oil
2 garlic cloves, pressed
1 teaspoon paprika
1/4 teaspoon cayenne pepper (optional)
1/4 teaspoon oregano
1/4 teaspoon thyme
1/4 teaspoon salt
1/4 teaspoon pepper
1 bay leaf
4 cups low sodium chicken broth
1 tablespoon tomato paste (optional)
1 lb smoked ham, cubed
1 lb shrimp, pre-cooked
1 1/2 cups white rice
1 lime, juice of

Steps:

  • If using frozen shrimp, thaw the shrimp in a colander in your sink first.
  • Put olive oil in a large pan, then add the chopped peppers, onion and zucchini to the pan along with garlic and other spices. Add tomato paste (if using), broth, ham, lime juice, and rice to the pan. Stir together and cook on medium heat for 20 minutes.
  • Add thawed shrimp and and cook another 5 minutes.
