This is my Mom's recipe and she's the best cook in the world. This is a family favorite and freezes well too!

¼ cup vegetable oil
1 cup chopped celery
1 cup chopped onion
1 cup chopped green bell pepper
2 cloves garlic, minced
2 pounds ground beef
1 cup ketchup
1 cup chili sauce
½ cup water
2 tablespoons chopped fresh parsley
1 tablespoon white vinegar
2 teaspoons brown sugar
1 teaspoon salt
1 teaspoon pepper
1 teaspoon dry mustard powder
1 teaspoon chili powder
½ teaspoon paprika
2 teaspoons Worcestershire sauce

Steps:

  • Heat the oil in a large pot over medium heat. Stir in the celery, onion, green bell pepper, and garlic. Cook and stir until the vegetables have softened, about 5 minutes. Add the ground beef, increase the heat to medium-high, and stir until crumbly and browned, about 10 minutes.
  • Stir in the ketchup, chili sauce, water, parsley, vinegar, brown sugar, salt, pepper, mustard powder, chili powder, paprika, and Worcestershire sauce. Bring to a simmer, then reduce heat to medium-low, cover, and simmer 30 minutes, stirring occasionally.

I like chili, but I'm not a fan of heat for heat's sake. I wanted something that would warm me up but not be overwhelmingly hot, and this was the result. My husband says that this would also make a good sloppy joe (with beans) mix.

cooking spray
1 pound ground turkey
1 (28 ounce) can crushed tomatoes
1 (15 ounce) can black beans, rinsed and drained
1 (15 ounce) can kidney beans, rinsed and drained
1 (14.5 ounce) can diced tomatoes
1 (6 ounce) can tomato paste
3 tablespoons chili powder
2 teaspoons ground black pepper
1 teaspoon salt
½ teaspoon garlic powder

Steps:

  • Lightly coat the inside of a slow cooker with cooking spray.
  • Heat a large skillet over medium-high heat. Cook and stir ground turkey in the hot skillet until browned and crumbly, 5 to 7 minutes; drain and discard grease. Transfer ground turkey to the slow cooker.
  • Stir crushed tomatoes, black beans, kidney beans, diced tomatoes, tomato paste, chili powder, black pepper, salt, and garlic powder into ground turkey.
  • Cook on Low for 3 hours.

This Crock Pot Chile Verde Recipe has become a low carb family favorite in our house. This slow cooker recipe can be served up a stew or spooned into tortillas for a delicious spin on taco night.

16 oz Jar Salsa Verde (divided)
2 lbs Pork Shoulder Steak
3 Tablespoons Butter
2 Anaheim Chile Peppers ( Seeded and Chopped)
1.5 Cups Chicken Broth
4 oz Can Chopped Green Chilies ( Undrained)
6 Slices Crisp Bacon
1 Tablespoon Minced Garlic
2 Tablespoons Dried Minced Onion
1 Tablespoon Cumin
1 teaspoon Oregano
1 teaspoon Chili Powder
1 teaspoon Paprika
Salt and Pepper
1 Cup Sour Cream ( plus garnish)
Garnish- Sour Cream (Avocado, Lime)

Steps:

  • Pour half of the jar of Salsa Verde into the bottom of a 6 quart slow cooker.
  • Place pork steaks into the crock pot and top with peppers, bacon, butter and green chilies.
  • Add spices and seasonings and top with remaining Salsa Verde.
  • Cook on high for 4 hours.
  • Shred pork with two forks- removing any bones and stir back into stew with 1 cup of sour cream.
  • Serve as a stew in a bowl topped with garnish or serve with a slotted spoon into tortillas and top with garnish

2 teaspoons spicy brown mustard
2 tablespoons ketchup
1 cup refrigerated sauerkraut, drained, rinsed, and coarsely chopped
4 large hot dogs, such as knockwurst
1/2 ounce Cheddar cheese, cut into 4 small sticks
4 slices bacon
Oil for coating grill screen
4 long hot-dog buns or small sub rolls, split

Steps:

  • Gas:
  • Direct heat, medium-high (425° to 450°F)
  • Clean, oiled grate
  • Charcoal:
  • Direct heat, light ash
  • 12-by-12-inch charcoal bed (about 3 dozen coals)
  • Clean, oiled grate on lowest setting
  • Wood:
  • Direct heat, light ash
  • 12-by-12-inch bed, 3 to 4 inches deep
  • Clean, oiled grate set 2 inches about the fire
  • 1. Heat the grill as directed.
  • 2. Mix the mustard, ketchup, and sauerkraut in a small bowl.
  • 3. Slit the hot dogs lengthwise, forming a deep pocket end to end in each one. Fill the pockets halfway with the sauerkraut mixture. Put a stick of cheese in the center of each and top with the remaining sauerkraut mixture. Wrap a bacon slice around each hot dog to hold it together, and secure the ends of each bacon strip with wooden toothpicks.
  • 4. Put the grill screen on the grill and coat it with oil. Wait a minute or two, until the surface is hot. Grill the hot dogs until the bacon is cooked through and the hot dogs are browned on all sides, about 2 minutes per side.
  • 5. To toast the buns, put them cut-sides down directly over the fire for the last minute of cooking. Serve the hot dogs on the buns.

25 fresh habanero chiles
2 heads of garlic, cloves separated, unpeeled
1 1/4 cups fresh lime juice
2 teaspoons kosher salt plus more

Steps:

  • Char chiles in broiler or over a gas flame until blackened all over. Place in a medium bowl; cover with plastic. Let steam for 15 minutes.
  • Meanwhile, heat a large dry cast-iron skillet over medium-high heat. Toast garlic until tender and skins are charred, about 8 minutes. Let cool.
  • Wearing gloves, peel chiles; discard stems. Peel garlic cloves.
  • Pulse chiles, garlic, lime juice, and 2 tsp. salt in a blender until a coarse purée forms. Season with salt.

This is my absolute favorite chili recipe. This one usually turns out pretty hot. It will depend somewhat on how hot of a chili powder you use. IT will be kind of soupy. Enjoy!

1/3 cup chili powder
1 tablespoon cumin
1 tablespoon garlic powder
2 tablespoons onion powder
1 tablespoon paprika
1 teaspoon oregano
1 teaspoon cayenne pepper
1 tablespoon black pepper
2 lbs beef stew meat, chopped up
2 medium onions, chopped
1 (13 1/4 ounce) can beef broth
4 ounces tomato sauce
1 can warm flat beer
1/8 teaspoon cinnamon
1 can diced tomatoes and green chilies (Rotel)
salt

Steps:

  • Combine dry spices and set aside.
  • Brown onions in olive oil, remove.
  • Brown meat, remove.
  • Add dry spices to pan and cook 1 to 2 minutes.
  • Add broth, tomato sauce, beer, meat, onions, and tomatoes with green chiles.
  • Stir and cook slowly for 2 hours or more until meat is nice and tender.
  • Taste before adding salt.
  • Serve with shredded cheddar, crackers, or diced green onions on top.
