NORWEGIAN BUTTER COOKIES

Norwegian butter cookies image

Enjoy these traditional Norwegian butter cookies at Christmas as a treat for family and friends. They're quick to make, and taste delicious

Provided by Good Food team

Time 27m

Yield Makes about 40

Number Of Ingredients 7

300g plain flour, sifted
1 tbsp baking powder
200g cold butter, cut into cubes
125g icing sugar, plus 2 tbsp
2 tsp vanilla-infused sugar or golden caster sugar
1 egg, plus 1 lightly beaten egg white for brushing
pearl sugar, or flaked or chopped almonds, for sprinkling

Steps:

  • Mix the flour, baking powder and a pinch of salt together. Add the butter and rub in with your fingers until the mixture resembles coarse crumbs. Mix in all the icing sugar and the vanilla sugar, then add the whole egg and mix until just combined, but be careful not to overmix.
  • Transfer the dough to a food bag and put in the fridge to chill for about 1 hr.
  • Heat the oven to 180C/160C fan/gas 4. Roll the chilled dough into about 40 even balls (around 15g each). Arrange the dough balls over two baking sheets lined with baking parchment, leaving space between each for spreading. Using the back of a fork, press the balls down gently in the middle, so they spread to a diameter of about 3cm (they will spread more as they bake). If you prefer flat cookies, use the bottom of a glass.
  • Brush the cookies with the beaten egg white and sprinkle over the pearl sugar or almonds. Bake for 10 mins, or until just cooked through (the cookies should not be fully browned, just lightly golden at the edges). Remove from the oven and transfer to wire racks to cool completely.

ANDREAS VIESTAD'S NORWEGIAN BAKED HALIBUT WITH HERBS AND ROSEMAR

Andreas Viestad's Norwegian Baked Halibut With Herbs and Rosemar image

From a recipe by Andreas Viestad, the effort and all the herbs are worth it. The result is a wonderful sauce that complements but doesn't overwhelm the fresh halibut taste. You can do the rub ahead of time (even the night before). You can also simplify and just use rosemary, parsley and bay leaves. Prep time does not include marinating time.

Provided by Chef Kate

Categories     Halibut

Time 1h20m

Yield 4 serving(s)

Number Of Ingredients 15

4 halibut steaks, about a third of a pound each
2 teaspoons fine sea salt
1 cup fresh parsley, chopped
1 cup mixed fresh herbs, chopped (thyme, tarragon, mint and or rosemary)
2 -3 garlic cloves, chopped
4 bay leaves (preferably fresh)
1/2 cup white wine (enough to cover the bottom of the pan)
8 tablespoons one stick sweet butter
1 tablespoon fresh rosemary, finely chopped
2 teaspoons fresh parsley, finely chopped
1 teaspoon fresh thyme, finely chopped
1 bay leaf (preferably fresh)
1 teaspoon lemon zest, finely grated
2 -3 tablespoons fresh lemon juice
salt and pepper

Steps:

  • Rinse fish in cold water; pat dry.
  • Rub steaks on both sides with sea salt.
  • Combine parsely, mixed herbs, bay leaves and garlic and rub onto both sides of the fish.
  • Place fish in a deep baking dish, cover and refrigerate for at least thirty minutes or up to twenty four hours.
  • Preheat oven to 400°F.
  • Pour wine over the fish and cover baking dish with foil.
  • Bake for 15 to 20 minutes until fish is cooked through and the meat comes easily away from the bone.
  • Transfer fish steaks to a platter and keep warm.
  • Pour pan juices into a small saucepan and reduce over medium heat to about one quarter cup of liquid.
  • Meanwhile, in another saucepan, heat one tablespoon of butter until foamy.
  • Add rosemary, thyme and bay leaf and saute gently for about two minutes.
  • Add remaining butter.
  • When butter is melted, add parsley and lemon zest and cook over medium to low heat for about three to four minutes.
  • Do not allow sauce to boil.
  • Finally, add the lemon juice, the reduced pan juices and salt and pepper to taste.
  • Strain sauce and discard herbs.
  • Brush the herbs off the fish steaks and plate, pouring a little of the butter sauce over the each portion of fish.
  • Serve the remaining sauce on the side.

NORWEGIAN BUTTER SAUCE (SANDEFJORDSMOR)

Norwegian Butter Sauce (Sandefjordsmor) image

This amazing and simple butter sauce is wonderful on all types of fish, but also works beautifully on shrimp and lobster.

Provided by Chef John

Categories     Side Dish     Sauces and Condiments Recipes     Sauce Recipes

Time 27m

Yield 4

Number Of Ingredients 6

2 lemons, juiced
½ cup heavy cream
5 tablespoons cold, unsalted butter, cut into cubes
salt to taste
cayenne pepper, to taste
2 tablespoons chopped fresh Italian parsley

Steps:

  • Place lemon juice in saucepan over medium heat; simmer until lemon juice reduces to less than a tablespoon and almost disappears, 4 or 5 minutes, being careful not to let it burn. Quickly add cream; whisk to combine. Continue to cook until cream reduces and is thick enough to coat the back of a spoon, 5 or 6 minutes. Reduce heat to low.
  • Whisk in 2 or 3 pieces of cold butter, stirring until butter melts before adding more. Add 2 or 3 more butter cubes. (If cream mixture cools too quickly, the sauce may break.) Continue adding butter a few pieces at a time until all butter is emulsified into the cream, 8 to 10 minutes. Add salt, cayenne pepper, and 2 generous tablespoons chopped parsley. Whisk until well blended. Keep sauce warm until ready to use.
