FLOTEGROT, NORWEGIAN CREAM PUDDING

Flotegrot, Norwegian Cream Pudding image

This was a Christmas treat every year at my home as well as at the Norwegian picnics in the area when I was growing up. Thought I would post since I noticed that it is a rare recipe. All I can say is those Norwegians know how to make delicious things out of very little.

Provided by Deb Lund

Categories     Puddings

Time 1h

Number Of Ingredients 6

1 pt rich heavy cream
1/2 c all-purpose flour

NORWEGIAN ROMMEGROT RECIPE

Norwegian Rommegrot Recipe image

This Norwegian cream pudding is cheap to make and feeds a crowd. Serve warm or chilled with melted butter on top. Once you start cooking the mixture, butter starts to seep out. Remove this from the mixture and save for a topping.

Provided by Haley

Time 1h5m

Number Of Ingredients 6

1 pint heavy whipping cream
1 cup flour, divided
3 cups whole milk, heated
1/2 cup sugar
Pinch of salt
Cinnamon, nutmeg, sugar and melted butter, for serving

Steps:

  • Heat whipping cream in a heavy-bottomed kettle over medium heat, until it comes to a simmer. Whisk in about half of the flour, one tablespoon at a time. Try to whisk out any clumps of flour. As the mixture cooks, some butter will begin to seep out. Pour this butter into a dish and use when you are ready to serve. My batch yielded just over a tablespoon of butter.
  • Whisk in the remaining flour. Slowly whisk in the warm milk. Whisk out any remaining lumps of flour. Add sugar. Cook for a few minutes, until pudding is thick.
  • Serve warm or chilled, topped with cinnamon, sugar, and melted butter.

Yield 8-10 serving(s)

Number Of Ingredients 8

2 pints sour cream, preferably the richest (with the highest butterfat) you can find
11 -12 tablespoons all-purpose flour (to thicken)
2 -3 cups milk, hot
1/2 teaspoon salt (or to taste)
1 teaspoon sugar (or to taste)
to taste butter, melted (as a garnish)
to taste sugar (as a garnish)
to taste ground cinnamon (as a garnish)

Steps:

  • Garnishes: melted butter sugar ground cinnamon Place the sour cream in a heavy-bottomed saucepan and bring to a simmer over medium heat, stirring constantly.
  • Turn down heat and allow to barely simmer for 1 hour, uncovered, to reduce slightly.
  • It must not boil.
  • Use a heat diffuser for this process.
  • Using a flour sifter or strainer, slowly add enough flour to thicken the cream.
  • I use about 11-12 Tbsp. for a very thick pudding.
  • Using a wire whisk, whip in the flour 1 Tbsp. at a time.
  • The cream will thicken and start to pull away from the sides of the pan.
  • If the sour cream is very rich, the butter will now begin to form and rise tot he top.
  • Remove this with a spoon and set it aside. Stir in enough hot milk to obtain a porridge-like consistency.
  • Add sugar and salt to taste. Serve in bowls with melted butter, sugar, and cinnamon on top.

NORWEGIAN RICE PORRIDGE (RISGRøT)

Norwegian Rice Porridge (Risgrøt) image

My family adds raisins to this rice pudding, but they're not my favorite so I left them out. This recipe is a little bit sweeter than the traditional. Feel free to reduce the amount of sugar.

Provided by Haley

Time 1h5m

Number Of Ingredients 8

1 1/2 cups medium grain rice
3 cups water
5 cups whole milk
1/3 cup white granulated sugar
1 teaspoon clear vanilla extract
Pinch of salt
Cinnamon, for topping
Butter, for topping

Steps:

  • Bring water and rice to a simmer over medium-high heat. Cook for about 10 minutes, stirring, until most of the water is absorbed into the rice.
  • Turn heat down to medium. Start adding milk to the rice, one cup at a time. After each cup is added, stir the rice and cook for 5 minutes or so, until most of the milk is absorbed into the rice. Continue with this process until all the milk is added. The rice is cooked low and slow - the whole process can take up to an hour. Once all the milk is added, stir in the sugar, vanilla extract, and salt.
  • Serve rice warm with butter and cinnamon on top. The rice can also be served cold, with melted butter on top.

9 CLASSIC NORWEGIAN DESSERTS

From thespruceeats.com
  • Julekake (Norwegian Christmas Bread) Unlike traditional British fruitcake, which is often made weeks in advance of Christmas Eve, this Norwegian holiday bread can be made in a single afternoon.
  • Fattigman. Fattigman are fried quickly in hot oil, instead of baked on an elegant cookie iron as are other cookies from the region. Make no mistake, these diamond-shaped cookies are deliciously sweet and full of special ingredients, including superfine sugar, heavy cream, and optional cognac or brandy.
  • Norwegian Krumkake Cookies. Norwegian krumkake (pronounced kroom-ka-ka) are fragile, sugary, rolled waffle cookies traditionally enjoyed in Norway at holiday time.
  • Kransekake (Norwegian Ring Cake) Ring cake, or kransekaka, is the signature, splendid, tall flourless cake of Norway enjoyed at all types of celebrations, from weddings to baby showers.
  • Skolebrød (Norwegian School Bread Dessert) Norwegian school bread is more like a filled donut than a bread, which explains its popularity as a lunchbox treat for Scandinavian children.
  • Berlinerkranser (Norwegian Butter Cookies) Despite the fact that the name "Berlinerkranser" means Berlin wreaths, these heavenly butter cookies are a beloved Norwegian treat that are ideal for holiday gifting.
  • Scandinavian Almond Cake. Bake this popular Scandinavian-American cake for potluck parties, holiday dessert swaps, or when hosting friends for brunch. It is easy to bake in a loaf pan or cake pan, and uses common baking ingredients, with almond extract adding a wonderful fragrance.
  • Scandinavian Rosette Cookies. You don't have to be Norwegian to enjoy these delicate, crispy, fried-in-oil, vanilla-scented rosette cookies. All you need are a few basic baking ingredients, a rosette iron, and the patience to learn how to use it to make this traditional favorite holiday treat.
  • Scandinavian Sweet Soup. Sweet soups made with dried fruits, tapioca, and warming spices are popular across Scandinavia, where they are served warm in winter, and chilled in summer.
