SWEDISH OATMEAL LACE
Crisp, buttery lace rolls.

Steps:
- Preheat oven to 375 degrees F (190 degrees C). Grease and flour baking sheets.
- Melt butter in medium saucepan. Add rest of ingredients and cook, stirring constantly, until mixture starts to bubble.
- Remove from heat and stir briskly for a few strokes. Drop by rounded teaspoonfuls about 4 inches apart on well-greased and floured baking sheet.
- Bake only 5-6 cookies at a time. Bake for about 5-6 minutes until golden brown.
- Cool wafers for 2 minutes on baking sheet. Remove carefully with spatula and place over rolling pin, glass, or mug so they curl and become firm. If cookies harden before they can be removed from cookie sheet, reheat in oven again a few seconds to soften.
- Note: Do one test to check oven temp and quantity of batter. The bigger the cookie, the more fragile. Use 1/2 tsp for test.

- Heat oven to 325 degrees. Cover a baking sheet with parchment paper.
- In a large saucepan over low heat, melt the butter. Let cool a bit and add all remaining ingredients except the eggs. Stir well to combine, then add the eggs. Mix thoroughly.
- Place 1 1/2 tablespoons of batter at a time on the parchment, leaving at least 3 inches between cookies. Flatten batter into a circle with the back of a spoon. Bake for 13 to 15 minutes, or until just golden brown. Cool on wire racks.

- In a medium saucepan, heat the butter, sugars, corn syrup, and salt over medium-low heat, stirring occasionally, until smooth. Remove from heat and mix in the flour and almonds just until incorporated.
- Drop level teaspoons of the batter onto parchment-lined baking sheets, spacing them 4 inches apart. Bake until golden brown, 6 to 8 minutes.
- Cool on the baking sheets until firm, 8 to 10 minutes, then transfer to wire racks to cool completely.

I found this delicious recipe late one evening when my daughter informed she needed to bring a Norwegian food item for a heritage day pot-luck at her school the NEXT day! I had all the ingredients and the cooking time is so short so this is the one I made for her. I'm so glad I did, these turned out to be very delicious and quite different from 'normal' cookies. The recipe is from Authentic Norwegian Cooking by Astrid Karlsen Scott.

- Pour melted butter over oats.
- In another bowl, beat egg until light, then beat in sugar.
- Add baking powder and flour, blending well.
- Combine with oat/butter mixture.
- Drop by teaspoonfuls onto parchment paper covered (or greased & floured) cookie sheet, 2 - 3 inches apart. This is important as they spread a lot.
- Bake in 350°F oven for 6-8 minutes. We like them completely brown, thus very crispy.

- Preheat oven to 350°. In a large bowl, cream butter and 1-1/3 cups sugar until light and fluffy. Beat in eggs and vanilla. In another bowl, whisk flour and baking powder; gradually beat into creamed mixture. Stir in chocolate chips., Divide dough into 4 portions.
