1 1/2 quarts spaghetti sauce (your favorite homemade or jar spaghetti sauce)
1/2 cup grated carrot
1/2 teaspoon oregano
6 cooked lasagna noodles
1 (16 ounce) container ricotta cheese
1 (16 ounce) package frozen chopped spinach, thawed and well drained
2 eggs
1 1/2 cups thinly sliced zucchini
1 cup sliced fresh mushrooms
3 cups shredded part-skim mozzarella cheese
1/2 cup grated parmesan cheese

Steps:

  • Mix carrots, oregano, and spaghetti sauce together.
  • Mix Ricotta, spinach, and eggs together in separate bowl.
  • Spread ½ cup spaghetti sauce in bottom of 9 x 13 inch baking dish.
  • Layer 3 lasagna noodles, ½ remaining sauce, ½ Ricotta mixture, ½ sliced zucchini, ½ sliced mushrooms, ½ Mozzarella, and ½ Parmesan.
  • Repeat layers with remaining ingredients.
  • Bake in 350 degrees oven for about 45 minutes.

This is an easy lasagna to make. It smells wonderful while cooking and tastes great. I adapted this recipe from a combination of others and came up with this vegetarian version. You can make this vegan easily by adding more of your favorite vegetables and using soy cheeses. Even the non vegetarians I made this for had seconds.

2 tablespoons olive oil
2 onions, diced
3 garlic cloves, Crushed
2 (6 ounce) cans tomato paste
2 (680 ml) cans tomato sauce
1 1/2 teaspoons salt
1 1/2 teaspoons pepper
1 1/2 cups mushrooms, sliced
1 teaspoon dried oregano
1 (750 g) container ricotta cheese
4 cups fresh spinach, rinsed
1/2 cup parmesan cheese or 1/2 cup asiago cheese, grated
2 (375 g) boxes no-boil lasagna noodles, oven ready, uncooked
16 ounces mozzarella cheese, shredded

Steps:

  • In large saucepan over medium heat, heat olive oil and add onions and garlic. Cook over medium heat until tender, about 3 minutes. Add mushrooms, oregano, salt and pepper to taste and cook for another 3 minutes, stirring often.
  • Add tomato paste and stir mixing thoroughly. Add tomato sauce, stir and cook sauce stirring occasionally for another 6-8 minutes or until heated through.
  • Remove sauce from heat and set aside.
  • In crock pot, cover bottom with enough sauce to just cover. Add two layers of lasagna noodles, breaking them where needed.
  • Spread noodles with one tub of the ricotta cheese and salt and pepper. Add two layers of lasagna noodles.
  • Cover noodles with half of the sauce, sprinkle with 1/2 of the mozzarella cheese. Add two layers of lasagna noodles.
  • Spread noodles with 1/2 tub of the ricotta cheese. Shake excess water from spinach leaves and cover cheese with spinach and salt and pepper. Add two layers of lasagna noodles.
  • Cover noodles with remaining sauce and cover sauce with remaining mozzarella and parmesan or asiago cheese.
  • Put lid on crock pot and turn on high. Leave to cook for 5 hours. When done, let lasagna sit for 8 minutes to set before cutting.

1 lb sweet Italian sausage, cooked with out casing and crumbled
1 large chicken breast half, cooked and chopped
1 medium sweet onion, chopped and cooked in olive oil
3 grated garlic cloves
3/4 cup dry red wine, i used a mixed red wine
1 3/4 cups water
1 (12 ounce) can tomato paste
1 (14 ounce) can diced petite tomatoes, drained
2 stalks celery, chopped finely
2 carrots, shredded small
1 dash black pepper
1 teaspoon italian seasoning
1 teaspoon dried basil
1/3 cup melted butter
1/3 cup flour
1/2 teaspoon salt
1 dash nutmeg
3 cups half-and-half
2 cups mozzarella cheese
1 3/4 cups parmesan cheese
3 tablespoons dried parsley
1 lb lasagna noodle, partially cooked not soft. follow directions on the box

  • Heat oven to 350 degree's.
  • make sauce as follows.
  • 1 Cook the sausage, chicken, and onion separately, I poach the chicken first until no pink shows.
  • In a sauce pan mix wine, tomato paste, Petite Tomatoes,water together to combine. Add the garlic,Basil,pepper,Italian Seasoning ,carrots,celery. Add in the chicken and sausage. bring to a boil,and reduce to simmer for one hour uncovered.
  • 2 Mix the Parmesan cheese,parsley,and Mozzarella together and set aside,.
  • 3 Make the white sauce. Melt butter in saucepan on stove on low. Add the flour and mix well. Add the half and half, and salt. Stir constantly while cooking until sauce becomes thick like a heavy cream. Season with salt and pepper.Remove from heat.
  • 4 In a 13x9 inch pan spread 1 cup of meat sauce on the bottom. Top with as many Lasagna noodle that will fit. Usually 3-4 will do.
  • 5 Spread half the White sauce over noodles. Put half the Mozzarella on top of white sauce. Next layer Lasagna noodles, meat sauce, Mozzarella mixture. Net Lasagna Meat sauce,White sauce,and top with Mozzarella. Bake at 350 degree's for 45 minutes,or until done.

Modified for the vegetarian from a tried and true Northern Italian Style Lasagna with Bologna Meat Sauce recipe my mother has used for years. (Original recipe this is based on can be found in the Better Homes and Gardens "Italian Cook Book", 3rd printing, 1984.)

12 ounces lasagna noodles
2 cups shredded mozzarella cheese
1 1/2 cups grated parmesan cheese or 1 1/2 cups romano cheese
6 tablespoons butter
1/3 cup all-purpose flour
1/8 teaspoon white pepper
1/8 teaspoon ground nutmeg
2 1/2 cups milk
1 3/4 cups crumbled firm tofu (drained)
1 (28 ounce) can cut tomatoes
1 cup chopped onion
1/4 cup chopped carrot
1/4 cup chopped celery
1/4 cup chopped fresh parsley
1/4 cup tomato paste
1/2 teaspoon vegetable bouillon granules
1/8 teaspoon ground nutmeg
1/2 cup dry white wine
1/3 cup light cream (optional) or 1/3 cup milk (optional)

Steps:

  • In a large saucepan (or Dutch oven) cook tofu until browned. Add undrained tomatoes, onion, carrot, celery, parsley, tomato paste, bullion granules, nutmeg, 1 teaspoon salt, 1 teaspoon pepper to tofu. Stir. Stir in wine and ¼ cup water. Bring to a boil; reduce heat. Boil gently, uncovered, for 45 to 60 minutes or until desired consistency, stirring occasionally. Remove from heat.
  • Cook pasta in boiling water just until tender; drain. Rinse with cool water.
  • Combine cheeses.
  • For the sauce melt butter in saucepan. Stir in flour, pepper, nutmeg, and ½ teaspoon salt. Add milk; cook and stir until thick and bubbly (don't let burn!).
  • Arrange a single layer of the pasta in the bottom of a greased 13"x9"x2" baking dish. Spread 1/3 white sauce over noodles. Spread 1/3 Tofu "meat" filling over white sauce. Spread 1/3 cheese over tofu. Repeat layers of pasta, sauce, tofu mix and cheese 2 more times.
  • Cover with foil and bake at 350degrees for 40 to 50 minutes.
  • Remove from over. Let stand 10 minutes.
  • Serve.

3 (10 ounce) packages frozen chopped spinach
3 lbs ground round
2 (8 ounce) packages cream cheese, softened
1 -2 tablespoon olive oil
2 large onions
2 garlic cloves, minced
6 ounces sliced mushrooms
1/2 cup grated parmigiano-reggiano cheese, plus more for serving
salt & freshly ground black pepper, to taste
1/4 teaspoon crushed red pepper flakes (optional)
1/4 teaspoon ground oregano
1/4-1/2 teaspoon italian seasoning
1 bay leaf
2 large eggs
1 (1 lb) package jumbo pasta shells
2 cups tomato sauce (your own or ready made, I used Barilla Al Forno Sauce)

Steps:

  • Preheat the oven to 350ºF.
  • Place frozen spinach in strainer and run under hot water until thawed.
  • Squeeze all the water out and place in large bowl.
  • In large sauté pan,add in 1/2 olive oil, sauté onions & mushrooms, for at least 5 minutes or until tender.
  • Add garlic and sauté for another minute.
  • Remove from sauté pan and add ground round,oregano, Italian seasoning and 1 bay leaf, until browned.
  • Drain meat and place in the same bowl with spinach.
  • Stir in the cream cheese, onion mixture, meat and spinach until well combined.
  • Add grated cheese, salt and pepper, to taste, and combine.
  • Let mxiture cool and then add eggs; the filling can be made up to 1 day in advance and refrigerated until ready to use.
  • Cook pasta shells, according to pkg directions.
  • Drain and cool to the touch.
  • Stuff the shells with the meat mixture.
  • Place shells in large baking pan and cover with the tomato sauce.
  • Cover with foil and bake for approximately 1 hour.
  • Use some more more of the Parmiagiano-Reggiano and sprinkle over the top; place in oven again and cook for 1-3 minutes longer.
  • Serve with a nice glass of red wine and a tossed green salad!

With lasagne, good preparation is the key. So I've included very detailed and simple-to-follow instructions. A good sized, deep pan is needed for this recipe, or you can make 2 pans. 1 tablespoon olive oil
1 1/2 lbs ground beef
2 garlic cloves, chopped
2 tablespoons italian seasoning
2 (24 ounce) jars spaghetti sauce (Barrilla classico)
2 lbs whole milk ricotta cheese
1 cup grated parmesan cheese
1 large egg, beaten
1 tablespoon dried parsley flakes
1 (1 lb) box lasagna noodle (Barrilla)
1 (24 ounce) jar spaghetti sauce (Barrilla classico)
16 ounces shredded mozzarella cheese (I use fresh and thin slice it)
1/2 cup grated parmesan cheese

Steps:

  • MEAT MIXTURE: To a large skillet, add all meat ingredients except sauce. cook over medium high heat, stirring occasionally, until cooked through.
  • Place the 2 jars of spaghetti sauce in a large food processor. When meat is done, strain in a collander, then put in the food processor with the sauce. Blend for 30 seconds or so. Place meat mixture in a bowl and set aside. Processing the meat helps to keep layers thin and flavorful.
  • CHEESE MIXTURE: Mix all cheese ingredients and set aside.
  • NOODLES: Bring a large pot of water to a boil. Add 2 tsp salt and 1 tbsp vegetable oil. Place lasagna noodles, one at a time, carefully into the boiling water. Stir gently with a wooden spoon until all noodles have softened to the bending stage. Reduce heat and simmer about 15 minutes until they are cooked through.
  • Place a large collander in the sink and gently drain the noodles. Run cold tap water over noodles, or dunk collander into a larger bowl that has cold water in it. (you want to cool all the noodles and stop the cooking process and keep them from sticking).
  • ASSEMBLY: Lay out a few layers of paper towels onto your workspace that are long enough to place a few sheets of noodles on (about two rows of towels). Place 2-3 noodles onto the paper towels, then lay another couple of sheets of paper towels and blot the noodles dry. This keeps your lasagne from having a pool of liquid at the bottom.
  • To a 9x13x3" (or larger) pan, spread 1/2 jar of sauce in the bottom and set aside. Place noodles into the pan in a single layer, overlapping the curly ends if necessary, and cutting any noodles to fit if necessary.
  • Spread 1/3 of the meat mixture evenly onto the noodles. you can use your fingers or the back of a spoon. Take 1/3 of the cheese mixture and crumble over the meat mixture in small dots. Sprinkle with 1/3 of the mozerella cheese.
  • Repeat layers of noodles, meat, cheese mixture, mozerella two times, then end with a last layer of noodles. Spread remaining 1/2 jar of sauce over top and sprinkle with remaining 1/2 cup of parmesan cheese. (at this point, you can cover with plastic wrap and refrigerate or freeze until needed. If freezing, thaw at room temperature a few hours before baking).
  • Preheat oven to 350°F Bake lasagna fresh for 45 minutes (60-75 minutes if refrigerated, and 75-90 minutes if thawed) or until bubbly and cooked through. Let sit for at least 10 minutes before serving. Lasagnes are so good the next day!
  • TO FREEZE FOR OAMC: A simple way to freeze this for multiple dinners (prior to cooking) is to chill it for at least 24 hrs in the refrigerator. Then place plastic wrap over the top of the lasagna and then place a large cutting board over that and carefully flip over onto the counter and remove the pan.
  • Using a sharp butcher knife, slice it down the center longways. then slice the from the short sides into however many servings you like (1x for 4 dinners, 2x for 6 dinners, etc.). Then simply wrap each dinner-serving size well with plastic wrap and then foil for an airtight seal.
  • When your wanting to serve it for dinner, simply take it from the freezer the day before, thaw in the fridge overnight, then unwrap it, re-wrap it in foil only with a little more sauce and bake.

1 lb fresh lasagna sheet
1 stalk leek
10 ounces spinach
1 zucchini
4 ounces mushrooms
1 red bell pepper
4 tablespoons olive oil
4 ounces fresh curly-leaf parsley
1 lb ricotta cheese
1 lb cheddar cheese, shredded
1 lb mozzarella cheese, shredded
1/4 lb butter
1 onion (chop)
1 carrot (Shredded)
3 ounces mushrooms (slice)
3 cups light cream
1/4 cup parmesan cheese
1/4 cup romano cheese
salt
pepper
italian seasoning

Steps:

  • In a sauce pot melt the butter and sauté the (vegetables ingredients from Butter and below only)until softened.
  • Add cream and watch it does not boil over.
  • Add cheese and spices until melted.
  • once melted put in blender and lightly blend.
  • Keep sauce warm.
  • Heat olive oil and combine all vegetables (zucchini, mushrooms, pepper, leeks) and fry until softened.
  • Add parsley and spinach until just lightly soft and then add ricotta.
  • Add the sauce (not all, but enough to your liking) and blend.
  • In a lasagna pan add a little sauce to bottom and start to stack lasagna with veggie sauce mixture with each layer. Also now add cheddar and mozzarella alternate until all pasta is finished top with the mixture and cheese and a little more sauce.
  • Preheat oven to 375 and cover lasagna bake for 20 minutes and uncover and bake an additional 15 minutes.
  • If your time is short you can substitute making the sauce with your favorite primavera packaged sauce mix.

  • To assemble the lasagna: Make the lasagna with the meatless "ragù" and béchamel sauce. Finish with a layer of lentils, pecorino cheese and a drizzle of oil. Cook in a ventilated oven at 400°F for 15 minutes.
