Steps:
- Combine panko bread crumbs, Parmesan cheese, garlic powder, and black pepper together in a bowl. Beat eggs in a separate bowl. Pour flour into a third bowl.
- Pour in enough vegetable oil to measure 1/2-inch in a large skillet; add olive oil. Heat oil mixture to 350 degrees F (175 degrees C).
- Dredge each tomato slice in egg; coat with flour. Dredge through egg again and press into panko mixture until evenly coated.
- Fry coated tomato slices in the hot oil until golden brown, 2 to 3 minutes per side. Remove fried green tomatoes with a slotted spoon and transfer to a paper plate or paper towel-lined plate. Sprinkle with salt.

FRIED GREEN TOMATOES
Though fried green tomatoes are commonly thought of as a Southern staple, they were actually an invention of 19th-century Northern farmers who would pick the remaining green tomatoes from their vines before first frost.

Steps:
- Season tomatoes with salt and pepper. Mix together cornmeal and pimenton in a bowl. Lightly beat eggs in another bowl.
- Heat oil in a skillet over medium heat. Dip tomatoes in egg, and dredge in cornmeal mixture. Working in batches, fry tomatoes in a single layer until golden brown, about 3 minutes per side. Let drain on a paper-towel-lined plate.
SOUTHERN FRIED GREEN TOMATOES RECIPE
Steps:
- In a large shallow bowl combine flour and spices. Whisk or stir to combine and set aside.
- .Use a mandoline slicer or a sharp knife and cutting board to slice each tomato into 1/4 inch pieces (no larger). Lay the sliced green tomatoes out on a large cookie sheet or plate and sprinkle with salt and pepper.
- Next dredge each slice in the flour mixture until coated shaking off the excess. Return to the cookie sheet and let sit for 5 minutes. After 5 minutes the tomatoes will begin to soak up some of the flour mixture. Once this happens dredge the tomatoes through the flour mixture a second time shaking off the excess.
- Add vegetable oil to a large deep skillet and heat over medium heat. You want the oil about an inch deep. Once the oil is shimmering, add your green tomatoes in and fry for 3-5 minutes per side until they are brown and crispy.
- Once golden brown remove from the oil and place on a paper towel lined plate and continue to fry in batches until all the tomatoes are fried. Serve warm with hot mayo sauce.

- Add the buttermilk and hot sauce to a medium-sized mixing bowl. Stir to combine. Add the tomato slices and soak for about 20 minutes.
- In a breading tray or shallow container, whisk together the flour, cornmeal, salt, paprika, and pepper. Set aside until ready to use.
- Add the oil to a skillet over medium-high heat and allow to come to temperature, between 350°-375°.
- Shake off any dripping buttermilk from the tomatoes, and dredge completely in the dry batter. Carefully add to the oil, taking care not to overcrowd the pan and frying in batches as needed. Cook the tomatoes for 1 1/2 -2 minutes each, or just until the crust is perfectly golden brown. Remove from the oil and allow to cool slightly. For best results, serve right away.
