LEFTOVER HAM AND BEAN SOUP
Steps:
- In a large soup pot, heat olive oil. Add onion, celery and carrot and cook for about 5 minutes until onion is tender.
- Add garlic, ham, ham bone, parsnip, bay leaves and the broth. If you don't have a ham bone, just skip it. Bring to a boil and lower heat to medium. Let cook for about 30 minutes.
- Add rinsed beans, cumin, thyme and season with salt and pepper. Continue cooking for another 30 minutes.
- Remove ham bone, bay leaves and parsnip. Garnish with parsley and serve.

BASIC HAM AND BEAN SOUP
Hearty ham and bean soup. Easy to make and a great way to use a leftover ham bone. This soup also has lots of mixed vegetables.

Steps:
- Rinse the beans, sorting out any broken or discolored ones. In a large pot over high heat, bring the water to a boil. Add the salt and the beans and remove from heat. Let beans sit in the hot water for at least 60 minutes.
- After the 60 minutes of soaking, return the pot to high heat and place the ham bone, carrots, celery, onion, garlic, mustard and bay leaves in the pot. Stir well, bring to a boil, reduce heat to low and simmer for 60 more minutes.
- Remove ham bone and discard. Stir in the chopped ham and simmer for 30 more minutes. Season with ground white pepper to taste.

BEAN SOUP WITH HAM
Steps:
- Gather the ingredients.
- Wash the navy beans thoroughly and pick them over. Discard any damaged or malformed beans and look for small stones.
- Pour the beans into a very large pot and add 2 quarts of water. Place the pot over high heat and bring to a full boil; let boil for 3 minutes.
- Remove from the heat and let beans soak for 2 to 4 hours.
- Add the ham hocks or ham bone to the pot with the soaked beans and their cooking water and bring to a simmer.
- Continue to cook over low heat until the beans are tender, or about 90 minutes.
- Remove the bones and chop the ham, discarding the bones and fat. Reserve the ham on the side.
- Return the chopped ham to the pot. Add the onions, bay leaf, celery, and optional carrots to the pot, as well as the extra leftover chopped ham, if using.
- Add enough water or unsalted vegetable stock to make about 16 cups of liquid. Taste the broth and add salt and pepper, as needed.
- Cook the soup for about 30 minutes to one hour, or until the vegetables are tender and the liquid has thickened a little.

- Prepare the beans by soaking for at least 6 hours or overnight. For a fast method rinse the beans well and place in a pot. Cover with three times their volume of water, bring up to a boil, uncovered and then reduce heat to simmer for 2 minutes. Remove from heat and let the beans sit for one hour.
- Place all the ingredients including the prepared beans into the crock pot. Stir well to combine.
- Cook for 4 hours on high or 8 hours on low.
- Remove the ham bone and once cool enough to touch take off the excess meat and add back into the soup. Serve with a salad, crusty bun or loaf or cornbread.

NORTH POLE SOUP (HAM & KIDNEY BEAN SOUP)
This recipe is from a long-defunct and short-lived 1980's magazine, "New Woman." It's a delicious and easy soup, and although the recipe doesn't call for it, I like to add cabbage and to spice it up with some crushed red pepper.

- Heat olive oil in medium saucepan. Cook carrot and onion in hot oil, 5-7 minutes.
- Add garlic, basil and ham and cook an additional 2 minutes.
- Add tomatoes and if using whole tomatoes, crush. Add broth & beans. Mash some of the beans with potato masher. Simmer 20 minutes.
- Add pasta, and cook until done per package directions.
- Serve with Parmesan cheese.

- In a large saucepan, saute the carrots, celery and onion in butter until tender. Stir in the remaining ingredients. Bring to a boil. Reduce heat; cook for 15 minutes or until heated through. Discard bay leaf.

Steps:
- Boil sausage to remove excess fat, and cut into bite-size pieces.
- Skin ham hocks, and remove excess fat. In a large pot, brown sausage and ham hocks over medium heat. Drain off excess fat.
- Add potatoes, celery, parsley, beans, tomato sauce, tomatoes, salt, pepper, chili sauce, bay leaves, garlic, and Worcestershire sauce to the meat; add just enough water to cover. Bring to boil, then reduce to simmer. Cover, and continue to cook for 2-3 hours.
- Remove ham hocks and cut meat into bite-size pieces. Return meat to pot. Serve.

- Dry beans needs to be soaked well before cooking. Generally it needs at least 12 hours of soaking but instructions are on the packaging for the particular types. Rinse the beans before placing them into a pot. Fill the pot with water and then add a teaspoon of salt to the soaking water. Put the lid on as to avoid any unwelcomed guest dying into our next day meal.
- Slice up the pork belly or the bacon then fry it on medium heat until it loses most of its fat content. We can skip this step and use any kind of cooking oil or lard instead of making one.
- Add the diced onion on top with a teaspoon of salt. Saute the onion until it gets a translucent/glassy look then add the diced carrot too. If there is time we can also caramelize a bit the onion and the carrot here by lowering the heat and frying and stirring it until it gets a light brownish color. This would take around 15-25 minutes. It gives a scent of sweet taste to the soup and a thicker texture at the end so it's definitely worth it.
- Add the chopped up or sliced garlic, black pepper and parsley then saute it for a minute or so until the garlic lets out it's lovely scent. Mind not to burn it though as that will ruin the dish.
