Steps:
- Combine all ingredients into a saucepan and bring to a boil. Turn the heat down and simmer for 30 minutes with the lid on. Let cool. Chill in the refrigerator for a couple of hours or overnight. Serve on turkey sandwiches or with pork chops. It is a good condiment with outdoor cooking.
APRICOT CHUTNEY
This chutney is a beautiful colour...especially when you use the deep deep orange apricots. I just guessed at the amount of jars and it is not stated in the recipe.

Steps:
- Mix together all the ingredients in a large saucepan.
- Bring to a boil. Reduce heat and simmer for about 1 hour, uncovered, or until juice has thickened.
- Pour into warm sterilized jars and seal.
- May be eaten immediately but the flavour improves after a few days.

NORTH OF THE BORDER CARNE ADOVADA
Steps:
- Preheat over to 275 degrees F.
- Mix contents of carne adovada marinade with water into an 8 by 10-inch baking dish. Mix in the pork and cover with foil and bake for 3 hours. If the sauce is too thin remove the foil and leave the carne adovada in the oven for another 1/2 hour. If it is too thick, add a little water. Suggest cooking dish 1 or 2 days before serving. The sauce and meat seem to marry more.
- Serve with beans and tortillas. Sprinkle with longhorn cheese.
KAAPIE BRAAI SOUS
Steps:
- Mixing fruit with spice is part of the cooking culture of the Cape, inherited from the Cape Malays, indentured servants of the Dutch East India Company in the 17th Century.
- Bring to boil the first 12 ingredients and the vinegar. Simmer for 5 minutes on low heat and then allow to cool completely.
- Remove the bay leaves and add the tomato ketchup, Worcestershire sauce, crushed garlic and Tabasco drops.
- Combine well and store in a plastic container in the refrigerator for future use.
JALAPENO CHUTNEY (FAMOUS DAVE'S SWEET SOUL JALAPENO COPYCAT)
I have moved a few hundred miles away from the nearest 'Famous Dave's BBQ'. At the persistance of my boyfriend, I had to come up with something similar to their ' Sweet Soul Jalapeño dipping sauce'. Here's what I came up with. Seeing as though all I had to go on was memory, I don't know if it's really close or not. Nor will I be able to taste some of the real stuff any time soon for comparison... but this is gooooood. Please feel free to z-mail me with any suggestions on how to make it more accurate.

Steps:
- Saute the jalepeno in a small amout of oil until translucent, add garlic and saute 2 minutes more.
- Dump in the remaining ingredients except pineapple juice.
- Stir to combine.
- Add some of the pineapple juice to get the consistency you want.
- Simmer 15 min to combine flavors.
- Cool and refrigerate.
