NORTH AFRICAN BULGAR SALAD
I found this recipe in a N*A*M*E* cookbook. I haven't tried it yet. (Prep time includes soaking time for the wheat.)

Steps:
- Place the bulgar wheat in a large bowl.
- Then add the boiling water & let soak until all the water is absorbed, around 30 minutes.
- Stir occasionally with a fork to break up any clumps.
- While soaking the wheat, broil the red pepper in the oven until softened.
- Let cool, then peel & remove the seeds.
- Slice into thin strips to be used later.
- In a mixing bowl, whisk together the oil, lemon juice, & spices.
- Pour the oil mixture over the bulgar wheat, add the herbs & mix well.
- Stir in the red pepper strips, scallions, cucumber, olives, & feta cheese. Cover & chill in the refrigerator until ready to serve.
- Garnish with lime wedges.

- In a bowl, mix oranges, pomegranate seeds, almonds and pistachios toether.
- Microwave honey and water together for 30 seconds and stir.
- Pour honey mixture over fruit nut mixture and toss lightly until coated.
- Sprinkle with cinnamon and orange zest.
- Enjoy.

- Place the bulgur in a medium bowl and cover with boiling water. Top with a plate or plastic wrap and let sit for 15-20 minutes or until liquid is absorbed. If any liquid is leftover, strain it out. Let the bulgur cool while you prep the rest of the salad.
- In a serving bowl whisk together the olive oil, lemon juice, cumin, coriander, cayenne, salt and pepper.
- When the bulgur is ready add it to the serving bowl and toss together with the dressing already in the bowl.

- In a pot, add 2 cups of water and 1 cup of bulgar. Add the curry, bouillon, and tomato paste. Stir together. Bring to a boil then simmer for about 15 minutes until bulgar is cooked through.
- In the meantime, add all the chopped vegetables to the serving bowl. Also, add the ingreidents for the dressing in the same bowl. Stir together well.
- Once bulgar is cooked, add it to the salad and mix with all the flavors. Taste to see if it needs any more seasoning. Place it in the fridge for at least 1 hour before servings. The longer the flavors sit together the more delicious this slaad is!
- If there are any leftovers, store in an airtight container and place in the fridge to enjoy for a week's time.
