2 cups grated zucchini
1 (9 inch) pie shell, unbaked
6 eggs, beaten
1 cup shredded Cheddar cheese

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Spread zucchini on the bottom of the pie shell. Pour eggs over zucchini and top with Cheddar cheese.
  • Bake in preheated oven until eggs are set, about 30 minutes.

A few years ago, I found this zucchini brunch recipe that's quick to prepare and freezes well, too. Just put it in the refrigerator to thaw overnight and pop it into the oven when you wake up! -Karen Howard, Lakeville, Massachusetts

Dough for single-crust pie
3 tablespoons butter
4 cups thinly sliced zucchini (about 3 medium)
1 large onion, thinly sliced
2 large eggs, room temperature
2 teaspoons dried parsley flakes
1/2 teaspoon salt
1/2 teaspoon garlic powder
1/2 teaspoon dried basil
1/2 teaspoon dried oregano
1/4 teaspoon pepper
2 cups shredded part-skim mozzarella cheese
2 teaspoons prepared mustard

Steps:

  • Preheat oven to 400°. On a lightly floured surface, roll dough to a 1/8-in.-thick circle; transfer to a 9-in. pie plate. Trim crust to 1/2 in. beyond rim of plate; flute edge. Refrigerate while preparing filling., In a large skillet, heat butter over medium heat. Add zucchini and onion; cook and stir until tender. Drain and cool slightly., Whisk eggs and seasonings until blended. Stir in cheese and zucchini mixture. Spread mustard over pastry shell; add filling., Bake on a lower oven rack until a knife inserted in center comes out clean and crust is golden brown, 35-40 minutes. If needed, cover edge loosely with foil during last 15 minutes to prevent overbrowning. Let stand 10 minutes before cutting.

I love sausage. I thought to combine some flavors that are outstanding together. This is a savory Quiche with Sausage,onion,Zucchini, sun dried tomatoes and Cheddar cheese. It has a little kick of heat. Hope you all enjoy my creation.

1 small zucchini cut length wise and sliced
1 medium vahdalia or other onion
4-6 sun dried tomatoes packed in olive oil,or soaked in water if dried
4-5 4-5 links chicken sausage, ot sweet italian sausage ( i use premio)
1/4 tsp crushed red pepper
1/4-1/2 tsp garlic salt
1/4 tsp thyme
1/2 tsp dried basil
1 1/2 c sharp shredded cheddar cheese
3 eggs
1 1/4 c heavy cream
1 pinch ground black pepper
1 dash(es) salt
1 deep dish frozen pie crust baked for 10 minutes

Steps:

  • 1. Heat oven to 400 degree's F Cook sausage on baking sheet until cooked through. Remove from oven to cool,and slice and chop sausage in to chunks,and set aside.
  • 2. Place pie crust in oven. Make sure you poke holes in bottom of crust first. Bake pie shell for 10 minutes,and remove from oven.
  • 3. Cook onion with olive oil for about 5-10 minutes. Add the chopped sun dried tomatoes. Season with the basil,Garlic salt,Thyme,and crushed red pepper saute for 5 minutes.
  • 4. Add the chopped Zucchini and cook for about 5 minutes,and add sausage. Saute to make flavors blend.Remove from heat.
  • 5. In a bowl whisk the eggs and cream together well. Mix in some salt and pepper. Add the cheese to the sausage mixture to combine. Put sausage mixture in baked pie shell. Pour the egg cream mixture evenly over all ingredients in shell.( if some cream egg mixture won't fit in shell. Just discard it.Fill as much as you can)
  • 6. Bake at 400 degree's for 40 minutes. Remove from oven and let sit for 10 minutes before slicing.
