Make this up in advance for sourdough pancakes. I used Celestial Seasonings® tea. Substitute water for tea if you don't have it on hand. Chopped pecans might taste good in this, as well as brandy instead of vanilla.

- Whisk tea and cornstarch together in a small bowl; transfer to a saucepan. Add peaches; cook, stirring constantly, over medium heat until just boiling, 2 to 3 minutes. Stir in white sugar, brown sugar, and nutmeg; simmer over medium-low heat until sauce is thickened, about 10 minutes. Remove from heat and stir in vanilla extract. Let stand for 5 to 10 minutes to thicken.

- Adjust oven rack to middle position and heat oven to 350 degrees. Grease and lightly flour a metal or disposable foil 9-by-13-inch pan. Whisk dry ingredients and spices in a large bowl. Mix milk, eggs and vanilla extract in a 2-cup measuring cup.
- Beat softened butter into dry ingredients, first on low, then medium, until mixture forms pebble-sized pieces. Add about 1/3 of the milk mixture and beat on low until smooth. Add remaining milk mixture in two stages; beat on medium speed until batter is just smooth. Add the sugar; beat until just incorporated, about 30 seconds. Pour batter into cake pan.
- Bake until a cake tester or toothpick inserted into the cake's center comes out clean, about 40 minutes. Set pan on a wire rack; let cool for 5 minutes. Run a knife around the pan perimeter and turn cake onto rack. Let cool.

PEACH & SPICE UPSIDE DOWN CAKE

- Preheat oven to 350 degrees.
- Grease & flour 2-9" round pans. Mix melted butter and brown sugar and spread on the bottom of the round pans. Place peaches in a spiral design on top of sugar and butter mixture.
- Blend cake mix w/water, oil and eggs. Beat for 2 minutes and pour into pans.
- Bake 35-45 minutes until sides of cake come away from pan.
- While cake is baking make whipped cream and refrigerate until ready to frost cake.
- Immediately invert on cooling rack. Cool completely and frost bottom layer peach side up with 1/3 of whipped cream, top with 2nd layer and frost top and sides of cake with remaining whipped cream.
- Enjoy.

- Preheat the oven to 350 degrees F. Grease a 9-inch square baking pan.
- In the bowl of an electric mixer fitted with the paddle attachment, beat the butter and 1 cup of the sugar for 3 to 5 minutes on medium-high speed, until light and fluffy. With the mixer on low, add the eggs, one at a time, then the sour cream and vanilla, and mix until the batter is smooth. In a separate bowl, sift together the flour, baking soda, baking powder, and salt. With the mixer on low, slowly add the dry ingredients to the batter and mix just until combined. In a small bowl, combine the remaining 1/2 cup sugar and the cinnamon.
- Spread half of the batter evenly in the pan. Top with half of the peaches, then sprinkle with two-thirds of the sugar mixture. Spread the remaining batter on top, arrange the remaining peaches on top, and sprinkle with the remaining sugar mixture and the pecans.
- Bake the cake for 45 to 55 minutes, until a toothpick inserted in the center comes out clean. Serve warm or at room temperature.

- In a large ovenproof skillet, melt the butter. Stir in the sugar over low heat. Arrange the peach halves in the skillet, cut side up. Cover with foil and bake for about 10 minutes, or until the peaches are tender and the sauce is syrupy. Transfer the peaches to the prepared cake pan, cut side up. Spoon the brown sugar sauce over the fruit and let cool. Lower the oven temperature to 350°.
- In a medium bowl, sift together the cake flour, baking powder, ginger, cinnamon and salt. In another bowl, using a handheld mixer, beat the butter with the brown sugar until fluffy. Beat in the vanilla and lime zest. Add the eggs, 1 at a time, beating well after each addition. Fold in half of the dry ingredients. - Prepare the filling: In a double boiler over water, add sugar, salt and cornstarch. Top off with boiling water and stir until thick and there are no lumps. Add butter, lemon zest and juice. Mix thoroughly. Add peaches add optional food coloring. Stir. Place in refrigerator to cool.
- To Prepare the Frosting: In your standing mixer with whisk attachment whip together cream cheese and sugar until smooth. Add extracts and slowly add cream. - You can skin the peaches before or after you cook them. Cut them in half and remove the pit. Cover the bottom of a deep sided pan with water. Add peaches and allow to cook until softened, approximately 20 minutes.
