- Rub the pork steaks with a little oil and season with pepper and salt to taste. Heat a large frying pan and fry the steaks for 2 mins on both sides until golden. Transfer to a plate. Adding a little more oil to the pan, fry the apples, onions and sage for 5 mins or until the apples have softened.
- Pour in the stock and spoon in the mustard, then return the pork to the pan and simmer for 10 mins until the sauce has reduced by about a third and the pork is cooked through. Serve with veg and mashed potatoes.

- Pat the pork tenderloin dry and generously season with salt and pepper on all sides.
- Heat 2 tablespoons of canola oil in a large cast iron skillet over medium-high heat, until the oil is shimmering and just starting to smoke.
- Place pork in the hot skillet and sear until well browned, about 1½-2 minutes. Flip and repeat searing on all sides.
- Remove the pork from the skillet and set aside.
- Preheat the oven to 375˚F (190˚C).
- Heat the remaining tablespoon of oil in the skillet.
- Add the onion to hot skillet and toss to coat in the oil. Add the garlic and apples and cook until the apples and onion begin to soften.
- Pour the cider over apples and onion and bring to a simmer.
- Return the pork to the skillet, on top of the apple and onion mixture. Spoon the cooking liquid over the pork and transfer the entire skillet to the oven.
- Bake for 15-20 minutes, until the internal temperature of the pork reaches 145˚F (62˚C.)
- Remove the skillet from the oven and let the pork rest for 10 minutes before slicing. Serve the sliced pork over a bed of the apples and onions.

ROAST PORK LOIN WITH APPLES

- Preheat the oven to 400 degrees F.
- In a large ovenproof skillet heat the vegetable oil over high heat. Season the pork loin all over generously with salt and pepper. Sear the meat until golden brown on all sides, about 2 to 3 minutes per side. Transfer the meat to a plate and set it aside.
- Add the onion, carrot, celery, garlic, herb sprigs, and 2 tablespoons of the butter to the skillet. Stir until the vegetables are browned, about 8 minutes. Stir in the sliced apples, then push the mixture to the sides and set the pork loin in the middle of the skillet along with any collected juices on the plate. Transfer the skillet to the oven and roast the loin until an instant-read thermometer inserted into the center of the meat registers 140 to 150 degrees F, about 30 to 35 minutes. (See Cook's Note.)
- Transfer the pork a cutting board and cover it loosely with foil while you make the sauce. Arrange the apples and vegetables on a serving platter and set aside. Remove and discard the herb sprigs. Return the skillet to a high heat and add the vinegar scraping the bottom with a wooden spoon to loosen up any browned bits. Reduce by half then add the cider and reduce by about half again. Pull the skillet from the heat and whisk in the mustard, and the remaining 2 tablespoons of cold butter. Adjust the seasoning with salt and pepper, to taste.
- Remove the strings from the roast and slice into 1/2-inch thick pieces and arrange over the apple mixture. Drizzle some sauce over meat and serve the rest on the side.
- Cook's Note: Pork cooked this way will be slightly pink. If desired, cook the pork to 160 degrees F, but be aware that this lean cut will not be as moist at the higher temperature.

- Preheat an outdoor grill for medium-high heat and lightly oil the grate.
- Generously season pork tenderloin with garlic salt and pepper.
- Cook pork on the preheated grill, turning twice on each side, until no longer pink in the center, 6 to 7 minutes per side. An instant-read thermometer inserted into the center should read at least 145 degrees F (63 degrees C). Remove pork from grill and cover with aluminum foil; let rest for 5 minutes. Slice pork and place on a serving platter.
- Melt butter in a skillet over medium heat; add apples. Cover skillet and cook for 5 minutes. Stir apples and sprinkle with sugar; reduce heat to low. Cover skillet and cook apples for 5 more minutes. Remove cover; cook and stir until apples are lightly browned, 2 to 3 more minutes. Spoon apples over sliced pork.

- 1. Preheat you oven to 350.
- 2. Spray fry pan with cooking spray and heat on medium-high heat until hot.
- 3. Add pork loin and brown on all sides to hold in juices.
- 4. Place browned pork loin is a small oblong roasting pan with a lid.
- 5. Place in oven and bake for 1 1/2 hour.
- 6. Meanwhile, peel and slice apples in a frying pan, add butter, sugar and cinnamon.
- 7. Cook apples on medium-high heat turning often to coat apples with cinnamon sugar and butter.
- 8. Fry apples until they are tender, but not cooked too soft.
- 9. Remove apples from heat and set aside.
- 10. When pork loin has baked for 1 1/2 hour; remove from oven and add the apples on top of loin and on sides..
- 11. Poor port wine on apple and loin and cover and return to oven to cook for another hour or so. Or until port wine has become a thick syrup.
- 12. Remove from oven and place loin and apples on serving tray and pour thick syrup over all and serve with your favorite side dishes.

- 1. Peel and core apples and slice into a saucepan with butter over medium heat. Add brown sugar, cinnamon and cook until tender.
- 2. Remove from heat and set aside.
- 3. Heat olive oil in frying pan.
- 4. Spread both sides of each pork chop with garlic salt, pepper and cardamon and add pork chops to hot pan.
- 5. Cook until brown on one side and turn to cook and brown the other side.
- 6. Remove pan from burner and add apples on top of each pork chop. Pour wine into bottom of pan and light with a match watching not to burn yourself.

- Heat oven to 220C/200C fan/gas 7. Tip the onion into a roasting tin and put the pork shoulder on top. Rub the pork skin with the oil and sprinkle with salt and the fennel seeds, if using. Tuck the garlic cloves under the side of the pork. Roast for 30 mins or until the skin begins to crackle up, blister and brown.
- Reduce heat to 180C/160C fan/gas 3, add the apples to the tin, and roast for about 2 hrs or until the meat is very tender when tested with a sharp knife. Lift the pork out to rest and spoon out the apple and onion.
- While the pork rests, make the gravy. Tip all the fat out of the tin, then put it over a low heat. Add a splash of stock, scraping any sticky bits off the bottom with a wooden spoon. Pour in the remaining stock, then bring everything to the boil. Squash in the garlic and remove the skin. Strain the gravy through a sieve into a jug. Serve the pork and crackling in slices with the roasted apple, onion and gravy, and either roast or mashed potatoes.

- Preheat the oven to 425 degrees F (220 degrees C).
- Trim all silver skin from tenderloins; pat dry using paper towels. Rub 1 teaspoon vegetable oil over the surface of each tenderloin and rub with sea salt.
- Heat 1 tablespoon vegetable oil in a large, oven-proof skillet over medium heat until it shimmers, about 1 minute. Place tenderloins into the skillet and cook, rotating to brown all sides, about 10 minutes. Transfer pork to a large plate.
- Add remaining tablespoon oil to any drippings in the skillet. Cook apples and onions in the hot oil, stirring occasionally, until onions begin to turn translucent, about 5 minutes, adding a bit more oil if skillet gets dry.

- Season pork chops with garlic powder, salt and pepper.
- Heat olive oil in a large skillet over medium-high heat. Brown pork chops about 5 minutes on each side or until browned (be sure not to overcook the pork). Remove from the pan, and set on a plate.

I don't use as much oil as stated in the recipe to fry the pork chops and since I never measure how much I use I just listed the amount of oil as it was given in the original recipe.

- Combine first 5 ingredients and beat well.
- Dip pork chops in egg mixture and dredge in the flour.
- Reserve 2 tablespoons flour to make gravy.
- In a large skillet heat 1/2 inch of vegetable oil to 350°F.
- Fry pork chops in oil until golden brown and tender.
- Turning as needed.
- Drain pork chops on paper toweling and keep warm while preparing apples and gravy.
- Reserve pan drippings in skillet.
- Take 2 tablespoons of the pan drippings and put in a small skillet.
- Add reserved flour, stirring until smooth.
- Cook for 1 minute, stirring constantly.

- Slice pocket in boneless pork roast.
- Set aside.
- Making enough to fill the pocket in the pork roast, mix the stuffing mix according to directions on box, except use apple cider in place of water, and add one peeled and diced apple.
- Stuff the roast.
- Bread the stuffed roast by carefully rolling in flour, then beaten eggs (which you can thin down with a splash of cider), then in breadcrumbs.
- Melt butter in large pan or dutch oven. Brown roast thoroughly.
- Add apple cider to pan, bringing it 1/2 way up the side of the roast.
- Reduce heat to simmer, cover,and steam for about 20-30 minutes.
- When the roast is tender, it is done. Remove roast from pan, and let set while you reduce the juices to about 1/3.
- Mix in sour cream to taste.
- Serve sauce on the side.
- The roast is also excellent cold, and makes a very pretty presentation.
- Notes: The amount of cider varies.
- You can also use apple wine or apple juice if you prefer.
