Great for leftover ham. This is easy to make with ingredients you probably already have in the kitchen. Try adding peas or other vegetables, if desired.

This recipe has traveled to many parts of the country. That's because I've served it to guests from Washington to New Hampshire, and they always ask for the recipe before I leave! My grown children all have a copy, too-it never fails to get rave reviews.

- In a skillet, saute onion in butter until tender. In a large bowl, combine the ham, chicken, peppers, olives, soup, sour cream, salt, pepper and onion. Fold in noodles. , Pour into a greased 2-1/2-qt. baking dish. Sprinkle with the Parmesan cheese. Bake, uncovered, at 325° for 45 minutes or until bubbly.

HAM AND NOODLE CASSEROLE

Steps:
- Preheat an oven to 350 degrees F (175 degrees C). Grease a 2-quart casserole.
- Bring water to a full rolling boil in a pot.. Cook the egg noodles in the boiling water, stirring occasionally, for 3 minutes; remove from heat, cover, and let stand until the noodles are tender, about 10 minutes. Drain.
- Stir the noodles, onion, sour cream, chicken soup, ham, and Swiss cheese together in a large bowl. Season with salt and pepper. Spoon into the prepared casserole. Sprinkle the top with bread crumbs.
- Bake in the preheated oven until the casserole is bubbling and the bread crumbs have browned, about 40 minutes.

HOME-STYLE CHICKEN AND HAM SOUP
This is a simple little Campbell Soup recipe I cut out of a magazine about 25 or 30 years ago. Sometimes I leave the green beans out since it only calls for a cup and sometimes I will put a whole can in. You can also double this recipe very easily. I've always loved the simplicity of this recipe, but I cut the amount of thyme down, seems to overpower the flavor too much.

- In large saucepan cook bacon until crisp; remove and crumble.
- Brown ham and cook onion with thyme in drippings until tender.

RICE NOODLE SOUP WITH HAM AND LETTUCE
The long noodles in this soup - representing longevity - are meant to be slurped up. In Chinese culture, cutting them would symbolize cutting one's life short. This recipe requires a whole chicken for its rich broth and makes double the quantity necessary. Reserve 1/2 cup stock for the [Broccoli Spears in Garlic Sauce](/recipes/recipe_views/views/109127) and freeze the remainder. After setting aside the breast meat for the soup, save the rest of the chicken for another dish. Steps:
- Cover chicken with 12 cups water in a 6- to 8-quart pot.
- Cut off one third of ham (trim if necessary) and cut into 1/3-inch dice, then chill. Add remaining two thirds ham to pot.
- Trim scallions, then cut 1 scallion into thin slices and reserve. Cut remaining scallions crosswise into thirds and add to pot along with ginger, garlic, and cilantro stems.
- Cook chicken, uncovered, at a bare simmer 3 hours (do not let boil), skimming foam as necessary. (Do not stir, or stock will be cloudy.)
- Transfer chicken with tongs to a cutting board, reserving stock. When chicken is cool enough to handle, remove breast meat and shred into 3-inch-long strips, discarding skin. Chill strips and reserve remaining chicken for another use. Pour stock through a fine-mesh sieve into a large bowl, discarding solids and skimming off fat (see cooks' note, below).
- Bring 6 cups stock with salt to a simmer.
- While stock is coming to a simmer, bring about 2 quarts water to a boil in a 4-quart saucepan. Soak noodles in a bowl of very hot water until softened, about 10 minutes, then drain in a colander. Add noodles to boiling water and cook 1 minute, then add lettuce and cook 30 seconds. Drain in a colander.
- Using tongs, divide noodles and lettuce among 6 deep bowls, forming small nests, then top with shredded chicken and diced ham. Ladle 1 cup hot broth into each bowl and sprinkle with sliced scallion.
NOODLES IN SOUP WITH CHICKEN AND HAM

- 1. Parboil noodles (from the Edit Tap, click to open recipe and follow instructions) and keep warm. 2. Place unsliced chicken and ham in a pan with stock. Bring to a boil then simmer, covered, 15 minutes. Remove chicken and ham cut in 2-inch strips and keep warm. 3. Cut scallion stalks in 1/2-inch sections mince ginger root. Add both to soup, along with salt, and bring to a boil again. 4. Transfer noodles to individual bowls and pour soup over. Top with chicken and ham strips and serve. VARIATION: * At the end of step 2, reheat the noodles briefly in the soup then transfer them to individual bowls. Top with chicken and ham strips garnish with minced ginger root and scallions. - Heat bacon drippings in 6-quart Dutch oven or stockpot over medium heat. Cook and stir ham in hot bacon drippings until slightly browned, about 5 minutes. Add chicken and potatoes to the pot; cook and stir until the potatoes soften slightly, about 5 minutes. Season the ham mixture with thyme, marjoram, onion powder, and garlic powder.
