Number Of Ingredients 15

1 bunch broccoli (1 1/2 pounds), cut into florets (about 5 cups)
Kosher salt and freshly ground pepper
4 tablespoons unsalted butter, plus 2 tablespoons melted
1 1/2 pounds boneless, skinless chicken breast, cut crosswise into 1/2-inch-thick strips
1 small onion, finely chopped (1 cup)
8 ounces cremini mushrooms, sliced (about 2 1/2 cups)
3 tablespoons unbleached all-purpose flour
3 cups whole milk, room temperature
9 ounces shredded medium-sharp cheddar (3 cups)
2 teaspoons Dijon mustard
1 teaspoon Worcestershire sauce
1/8 teaspoon cayenne pepper
1/2 cup sour cream
1 cup panko breadcrumbs
Cooked egg noodles or steamed white rice, for serving

Steps:

  • Preheat oven to 400 degrees. In a large straight-sided skillet, simmer 1/2 cup water over medium-high heat, then add broccoli and a pinch of salt. Cover, reduce heat to medium-low, and cook until crisp-tender, about 6 minutes. Drain well, then transfer to a large bowl; set aside. Wipe out skillet.
  • Pat chicken dry; season with salt and pepper. Melt 2 tablespoons butter over medium-high heat. Add half the chicken and cook, turning once, until browned and cooked through, about 4 minutes. Transfer to a plate. Repeat with remaining chicken; set aside.
  • 3. In same skillet, melt 2 tablespoons butter, then add onion and mushrooms. Cook, stirring occasionally, until tender and starting to brown, 6 to 7 minutes. Add flour and cook, stirring, 30 seconds. Slowly add milk, reduce heat to medium, and cook, stirring constantly, until mixture is thick enough to coat the back of a spoon, about 9 minutes. Add 2 cups cheese, Dijon, Worcestershire, cayenne, and sour cream; stir until combined. Season with salt and pepper. Add cheese sauce to bowl with broccoli, followed by chicken and accumulated juices; toss to combine. Transfer to a 2 1/2-quart baking dish.
  • In a small bowl, combine 2 tablespoons melted butter, panko, and remaining 1 cup cheese. Sprinkle over broccoli-and-chicken mixture. Bake until bubbly and golden, 20 to 25 minutes. Let cool 15 minutes, then serve over noodles or rice.

2 (10 ounce) packages frozen chopped broccoli
2 cooked boneless chicken breast halves, chopped
1 (10.75 ounce) can condensed cream of chicken soup
1 (10.75 ounce) can condensed cream of mushroom soup
½ cup mayonnaise
1 teaspoon lemon juice
1 ½ cups shredded Cheddar cheese

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Place broccoli in the bottom of a 9x13 inch baking dish. Top with the chicken.
  • In a small bowl, blend the cream of chicken soup, cream of mushroom soup, mayonnaise, and lemon juice. Pour the mixture over the chicken. Top with Cheddar cheese.
  • Bake 35 to 40 minutes in the preheated oven, until bubbly and lightly browned.

1/4 cup plus 1 tablespoon butter, divided
1/4 cup all-purpose flour
1-1/2 cups half-and-half cream
1/2 cup cooking sherry or water
2 cans (10-3/4 ounces each) condensed cream of chicken soup, undiluted
2 packages (10 ounces each) frozen cut or chopped broccoli, thawed
1 cup cooked rice
3 to 4 cups cubed cooked chicken
2 cups shredded cheddar cheese
1 cup soft bread crumbs
Minced fresh parsley, optional

Steps:

  • In a small saucepan, melt 1/4 cup butter. Add flour, stirring until blended. Stir in the cream and cooking sherry or water; cook and stir until thickened and bubbly. Cook and stir 2 more minutes. Blend in soup until smooth; remove from the heat and set aside. , Place broccoli in an ungreased 13x9-in. baking dish. Cover with rice and then half of the sauce. Top with chicken. Stir shredded cheese into remaining sauce; pour over the chicken. , Melt the remaining butter and toss with bread crumbs. Sprinkle over the casserole. Bake, uncovered, at 350° for 35-45 minutes or until heated through. If desired, sprinkle with parsley before serving.

Number Of Ingredients 20

1 generous bundle broccolini, trimmed and cut into 2-inch pieces or 1 small head broccoli, trimmed and cut into small, thin stalks and florets
Salt
2 pieces boneless, skinless chicken breast, fat removed
1 medium onion
2 fresh bay leaves
1 pound extra-wide egg noodles
1 tablespoon extra-virgin olive oil
1 medium onion, finely chopped
2 cloves garlic, finely chopped
3 tablespoons butter
2 rounded tablespoons flour
2 cups whole milk
Freshly ground black pepper
Freshly grated nutmeg
A few sprigs fresh thyme, leaves removed and chopped
2 egg yolks
1 cup white or whole wheat panko (Japanese) bread crumbs
1 cup shredded Gruyere cheese
1/2 cup shredded Parmigiano-Reggiano cheese
A handful fresh flat-leaf parsley, finely chopped

Steps:

  • Place a large pot of water on to boil for egg noodles and broccolini. Salt the water and cook the broccolini until tender. Remove to a plate. When the broccolini is cool enough to handle chop it into bite-size pieces.
  • Place the chicken in a few inches of water with a peeled quartered onion and a couple of bay leaves. Bring the water to a low boil then reduce the heat to a simmer and gently poach the chicken 10 to 12 minutes.
  • Meanwhile, heat the extra-virgin olive oil in skillet over medium heat and saute the onions and garlic until tender, 8 to 10 minutes. Add the broccolini to the pan and season with salt and pepper. Turn the heat off pan.
  • While the onions cook, heat the butter in a medium saucepot over medium heat, whisk in flour 1 minute then whisk in the milk and season with salt, pepper, freshly grated nutmeg, and thyme. Thicken 5 minutes then whisk in a little of the sauce to the egg yolks to combine, then add the egg yolks back to the sauce and whisk to combine, turn heat down to the lowest setting.
  • Cook's Note: If sauce becomes too thick, add a splash of chicken poaching liquid and turn off the heat.
  • Shred the poached chicken with forks or dice poached chicken into small, bite-size pieces.
  • Preheat the broiler.
  • To the large pot of boiling water, add the egg noodles. Cook the noodles according to package directions for al dente. Drain the noodles very well and add them back to the hot pot. Stir in the broccolini, chicken, and sauce, and then transfer to a casserole dish. Place the casserole in the middle of the oven and broil 3 to 5 minutes until bubbly and brown. Cool and store for make-ahead meal.
  • To serve the casserole, heat the oven to 375 degrees F. Mix together the panko, Gruyere, Parm, and parsley. Place the casserole on a baking sheet in upper half of the oven and bake 30 minutes, add the topping and bake 15 to 20 minutes more, or until brown and crispy on top.

I made this up one afternoon when I had alot of leftover chicken to use up. I have subbed turkey with great success. This is a creamy satisifying soup that looks MUCH more complicated than it is. Delicious with herb toast and a leafy salad. I hope you enjoy this as much as my family does.

6 cups chicken broth
3 cups wide egg noodles, uncooked
1 lb broccoli, cooked and cut into bite sized pieces
4 tablespoons butter
1 small onion, diced
8 ounces mushrooms, sliced
1 (26 ounce) can cream of chicken soup
2 1/2 cups chopped cooked chicken
1 cup dry white wine
1/2 teaspoon garlic powder
3/4 teaspoon curry powder
black pepper
2 teaspoons parsley flakes
2 cups sharp cheddar cheese, shredded
2 cups half-and-half

Steps:

  • Bring broth to boil in a large Dutch oven.
  • Add noodles and cook 6 minutes.
  • Drain, RESERVING 3 cups of the broth.
  • Set broth aside.
  • Set noodles aside.
  • Melt butter.
  • Add mushrooms and onions.
  • Saute until mushrooms are soft, approximetly 4-5 minutes.
  • Place into cooked veggies into Dutch oven.
  • In a large bowl, whisk together all remaining ingredients (including reserved chicken broth) EXCEPT chicken, noodles, cheese, broccoli and half and half.
  • Add to veggies in Dutch oven.
  • Bring to a simmer over low heat.
  • Add chicken once mixture comes to a simmer, and cook for 15 minutes.
  • SLOWLY add the cheese, stirring constantly for even melting.
  • Add broccoli and noodles and cook for an additional 5 minutes over low heat.
  • Add half and half, and cook 5 minutes more or until heated through.

Here's my take on chicken divan. It's a real kid pleaser and everyone who's ever tried this loves it. I always uses rotini or gemelli for this yummy dish because the little ridges in the corkscrew pasta holds onto the rich, cheesy sauce really well.

1 lb rotini pasta
2 tablespoons olive oil
4 tablespoons butter
1 lb boneless skinless chicken breast
1/2 cup flour
salt and pepper
garlic powder
1 cup heavy cream
1 cup sliced mushroom cap
2 roasted red peppers, diced small
2 cups broccoli florets
8 ounces cheddar cheese, shredded
2 tablespoons Dijon mustard
3/4 cup white wine

Steps:

  • Boil the water and cook the pasta according to package directions. DO NOT ever add oil to the water! It will make your sauce slide off the pasta later.
  • Meanwhile heat the olive oil and 2 tablespoons of the butter over medium-high heat in a large skillet.
  • Cut chicken breasts into strips. Put flour in a plastic bag, add a little salt, pepper and garlic powder to your taste and shake the strips in there to coat.
  • Add the coated chicken strips to the hot skillet and brown.
  • Turn burner down to medium-low and add the cream, mushrooms, peppers, broccoli, mustard and butter. Cook about 5 minutes.
  • Add cheese and wine and stir gently until the cheese melts. When melted, pour over pasta and mix to combine. Serve with a big loaf of Italian bread.
