ONE-POT SWEDISH MEATBALLS WITH EGG NOODLES
Do dinner and not the dishes with this one-pot Swedish meatballs recipe! You can even double the meatball recipe and freeze the extra meatballs for the next time you're craving comfort food.

- In large bowl, mix beef, bread crumbs, onion, 2 tablespoons of the parsley, 1 teaspoon of the salt, the pepper and allspice until well combined. Add milk, Worcestershire sauce and egg. Shape mixture into 12 (2-inch) meatballs.
- In 5-quart Dutch oven, melt butter over medium-high heat. Add meatballs; cook 8 to 11 minutes, gently turning occasionally, just until browned on all sides.
- Add broth, whipping cream and remaining 1 teaspoon salt; heat to boiling. Stir in noodles; return to boiling. Reduce heat; simmer 15 to 18 minutes, stirring occasionally, until meatballs are thoroughly cooked and no longer pink in center (165°F), pasta is cooked and sauce is thickened. Stir in remaining 2 tablespoons parsley.

- Preheat the oven to 475 degrees F (245 degrees C).
- Combine ground beef, pork, bread crumbs, 1/2 cup milk, egg, garlic, salt, pepper, and allspice in a large bowl; mix until just combined. Use a rounded 1-tablespoon measure to form mixture into meatballs. Place meatballs on a baking sheet.
- Bake in the preheated oven until golden brown and cooked through, 10 to 12 minutes, rotating sheets halfway through.
- While the meatballs are baking, melt butter in a medium saucepan over medium-high heat. Add flour. Cook, whisking constantly, for about 1 minute, being careful not to burn or brown the flour. Gradually whisk in the remaining milk and broth. Bring to a boil. Reduce heat and simmer until sauce has thickened slightly, 2 to 3 minutes. Add Worcestershire sauce to taste and remove from the heat.
- Fill a large pot with lightly salted water and bring to a rapid boil. Cook egg noodles at a boil until tender yet firm to the bite, 7 to 9 minutes.
- Drain any grease from the meatballs. Add meatballs to sauce; toss gently to coat. Turn on lowest heat to warm. Add milk or water to thin sauce if too thick.
- Drain egg noodles and serve immediately topped with sauce, meatballs, and parsley.

- In a large bowl, combine flour and salt. Make a well in the center. Beat egg yolks, egg and water; pour into well. Stir together, forming a dough. Turn dough onto a floured surface; knead 8-10 times. Divide into thirds; roll out each as thin as possible. Let stand for 20 minutes or until partially dried. - In a medium mixing bowl, mix ground beef, onions, egg, bread crumbs, Worcestershire sauce, parsley, crushed red peppers and pepper together. Make small size meatballs (should get about 24).
- Add 1 tablespoon of butter to cast iron pan, or large frying pan, and after butter melts, add meatballs.
- Heat over medium heat, cook until all sides are pan seared then remove from pan, place on a plate.
- Drain any excess grease, if needed.
- Melt 2 tablespoons of butter and sauté onions and garlic for 3-4 minutes scraping pan drippings.
- Add mushrooms and continue cooking for 2 minutes.
- Sprinkle flour over mushrooms and onions. Stir, cook for another 2 minutes.
- Pour beef broth, Worcestershire sauce, salt and pepper into pan. Stir for a few minutes and place meatballs back into the pan. Stir.
- Cover pan, cook for about 30 minutes, stirring occasionally. The gravy will also thicken up as it cools. And if the gravy seems to thin mix 1 tsp corn starch with 1/8 cup water, then add to pan, stir and let simmer for a few more minutes.
- In a large saucepan, cook egg noodles according to package directions. Rinse and set aside.
- Once noodles are cooked and meatballs are done, mix together and enjoy!

- 1. I bought frozen meatballs and cooked about 20 of them for this recipe. I used the air fryer but frying them on the stove top or in the oven works as well.
- 2. I boiled 1 pound of wide egg noodles, drained off the water and set the noodles and pan back on the stove on a very low heat.
- 3. I added a can of diced tomatoes - the ones I chose had onions and garlic in them too. I mixed this into the noodles.
- 4. Add in the cooked meatballs and 1/2 cup of Olive Garden Salad Dressing and stir well.
- 5. Spread 1 cup grated cheese across the top and cover the dish to allow the cheese to melt and flavors to mix. About 10-15 minutes. Serve warm with bread or a salad.
