Date Balls image

A holiday tradition. My mother made these date balls every year at Christmas time. They may be stored in a plastic or glass container. If the weather is warm, keep them in the refrigerator. Make sure balls are cooled thoroughly before storing.

1 (8 ounce) package chopped pitted dates
1 cup white sugar
½ cup margarine
3 cups crispy rice cereal
1 cup chopped pecans
1 teaspoon vanilla extract
½ cup confectioners' sugar, or as needed

Steps:

  • Cook and stir dates, sugar, and margarine in a large saucepan over low heat until sugar dissolves; remove from heat. Fold crispy rice cereal, pecans, and vanilla extract into the date mixture until evenly mixed.
  • Grease your hands with margarine. Roll date mixture into 1-inch balls.
  • Spread confectioners' sugar into a shallow dish; roll date balls in confectioners' sugar to coat.

2 eggs, beaten
1 cup white sugar
1 cup chopped dates
1 teaspoon vanilla extract
1 tablespoon butter
3 cups crispy rice cereal
1 cup flaked coconut

Steps:

  • In a medium saucepan over medium heat, combine the eggs sugar and dates. Bring to a boil, stirring occasionally, and boil for 5 minutes. Remove from heat and stir in the butter and vanilla. Mix in crispy rice cereal. Butter hands and roll the mixture into walnut sized balls. Roll the balls in coconut. Serve.

1 cup butter
1 1/2 cups sugar
2 eggs
2 tablespoons milk
4 cups Rice Krispies
2 cups dates, chopped
1 teaspoon salt
1 cup pecans, chopped
1 teaspoon vanilla
0.5 (14 ounce) package flaked coconut

Steps:

  • Melt butter and sugar carefully.
  • Add chopped dates and cook until it boils. Take off heat and allow to cool slightly.
  • Add milk and salt into well beaten eggs and stir into hot date mixture.
  • Boil mixture 2 minutes.
  • Add vanilla and nuts.
  • Let cool, then add Rice Crispies and stir.
  • Butter hands, and shape into well rounded tablespoon size balls and roll in coconut.
  • Store in air-tight container.

These are delicious no-bake cookies that use Rice Krispies cereal for a crunchy texture combined with dates and walnuts. This recipe can be doubled easily. Make a double batch, and have plenty on hand for Holiday guests as they go quickly!

1/4 lb butter
1/2 cup sugar
1 teaspoon vanilla extract
1 egg
1 cup dates, chopped
2 cups Rice Krispies
1 cup walnuts, finely chopped

Steps:

  • In a medium saucepan over medium low heat, melt butter.
  • Add sugar, vanilla, egg, and dates.
  • Stir constantly 3 to 4 minutes or until egg is cooked and mixture is slightly thickened.
  • Remove pan from the heat.
  • Stir in puffed rice cereal and walnuts.
  • Mix until well blended.
  • Set aside to cool.
  • When cool, roll into 1-inch balls.
  • If dough is sticky, dip fingers in water and then roll.
  • Place cookies on a parchment-lined cookie sheet.
  • Refrigerate until serving.
  • Store cookies in an airtight container in the refrigerator.

  • In heavy-bottomed,lg.

Can't remember where this recipe originated, but I do know that my family has been making them for years especially around the holidays.

2-8 oz packages pitted dates
8 Tbsp butter
1 c brown sugar, firmly packed
4 Tbsp water
1 tsp vanilla extract
2 c rice crispies

Steps:

  • 1. Mix together in a 12" saucepan dates, butter, brown sugar and water. Cook over medium-high heat for 10-12 minutes or until thickens to a paste.
  • 2. Remove from heat and 1 teaspoon vanilla extract. Mix in 2 cups Rice Crispies.
  • 3. Allow mixture to cool to touch and then roll into small balls. Roll balls in shredded coconut or powdered sugar.
  • 4. Makes about 48 balls.
