CHICKEN WITH CREAMY MUSHROOM SAUCE

This Chicken with Creamy Mushroom Sauce is a simple yet very elegant dish featuring boneless skinless chicken breasts in a delicious creamy mushroom sauce made with white wine and cream.

2 tablespoon butter (unsalted)
1 pound chicken breasts (boneless and skinless, cut in half lengthwise)
salt and pepper to taste
1 medium onion (chopped)
3 cloves garlic (minced)
12 ounce white mushrooms (sliced)
1 tablespoon all-purpose flour
¼ cup white wine
1 ½ cups heavy cream (or heavy cream )
1 tablespoon parsley (for garnish)

Steps:

  • Heat the Skillet: Add the butter to a large skillet and melt over medium high heat.
  • Cook the Chicken: Season chicken breasts on both sides with salt and pepper. Place chicken breasts in skillet and cook on both sides, about 3 to 5 min per side or until no longer pink inside, time depends on thickness of your breasts. Since the breast is fairly thin, it should cook faster. Transfer the chicken to a plate.
  • Cook the Mushrooms: Add the onion and garlic to the skillet and cook for a couple minutes until onion is translucent and soft. Add the mushrooms and stir. Season mushrooms generously with salt and pepper. Let them cook for about 5 minutes, stirring occasionally. When they are cooked to your liking, add the wine and deglaze the pan by scraping the bottom of the skillet. All those brown bits are flavor!
  • Finish the Sauce: Sprinkle the flour over the mushrooms and stir for another minute just to remove the raw flour taste. Next, add the cream, stir and cook for 3 minutes, stirring occasionally or until sauce reduces a bit and thickens. Taste for seasoning and adjust with salt and pepper as needed. Add the chicken back to the skillet and spoon sauce over the chicken.
  • Finish and Serve: Garnish with parsley and serve hot.

This is for all, like myself, who don't use any kind of alcohol, but want the flavor in some of our recipes. And, NO, it doesn't always cook off; only if you flame it. And that only takes it down to 75%. Baking or simmering 15 min takes it down to 40%; baking or simmering 2 hours 30 minutes takes it down to 5%. This is according to the US Dept of Agriculture. Cooking times are approximate, according to recipe.

red wine vinegar
white grape juice
white wine vinegar

Steps:

  • When adding to sauces or stews, if the recipe calls for a dark colored wine, use either purple or red grape juice and 1/2 to 1 teaspoon of Red Wine Vinegar, depending how much "wine" is calls for. Usually 1/2 to 1 cup of "wine".
  • When it calls for white wine, use the White Grape Juice and the same amount of White Wine Vinegar.
  • The flavor will be very similar to using wines, but without the alcohol.

  • Lightly salt and pepper your chicken breasts, then dip them into your flour of choice. Cover both sides with flour, shaking off the excess. Save 1 tbsp of the flour for later.
  • In a large pan (emphasis on large!) over medium heat, add 1 tbsp of olive oil and 1 tbsp of butter or 2 tbsp of ghee. When shimmering, add flour coated chicken and fry until golden brown on both sides, about 3-4 minutes per side. Transfer to a plate and cover with foil.
  • In the same skillet with the drippings from the chicken, add 1 more tbsp of butter or ghee and melt. Add mushrooms for 3-4 minutes until browned on both sides The major tip here is to not crowd your mushrooms or they will steam. Give them some space in a single layer and they will get nicely browned.
  • Add your shallots and garlic to the mushrooms, scraping up any bits from the bottom. Mix in the 1tbsp of flour. Pour in the chicken broth & vinegar and simmer over medium heat for about 5-7 minutes, until reduced by half and thickened.
