NEWFOUNDLAND WHITE BREAD
Delicious traditional homemade bread from Newfoundland. I found this recipe on a blog called 'Rock Recipes'. Prep time includes 3 hours resting time to let the dough rise.

Steps:
- Combine 3 cups of the flour along with the sugar, instant yeast and salt in a large bowl or in the bowl of a large electric mixer that uses a dough hook.
- Add the melted butter and warm milk.
- Using a wooden spoon or the regular paddle of your electric mixer beat for 4-5 minutes until the mixture is smooth with no lumps. If using an electric mixer, switch to the dough hook at this point and begin to slowly incorporate the remaining 2 cups of flour. If not using an electric mixer keep mixing in the flour gradually until a soft dough forms that leaves the sides of the bowl.
- Turn the dough out onto the countertop or bread board to knead. You may need to use a little less or a little more flour, this is not uncommon. Knead the dough for an additional 10 minutes either in the electric mixer or on a bread board or countertop.
- Cover dough and leave to rest and rise for one hour.
- Punch the dough down and knead it for a few minutes by hand before letting it rest for another 10 minutes.
- Grease 2 medium loaf pans. Divide the dough into 6 equal portions, forming each division into a ball. Place 3 balls of dough in each loaf pan.
- Cover with a clean tea towel and allow the dough to rise until it is about 2 inches above the rim of the pan, about 2 hours depending on room temperature.
- Bake at 375 degrees F for 30-40 minutes depending on the size of the pans that you are using.
- When baked, turn loaves out onto a wire rack to cool. Brush the tops with melted butter if desired to soften the top crust.

- Preheat oven to 425 degrees. Line baking sheet with parchment paper and set aside.
- Place the yeast, olive oil, sugar and salt in a large bowl and add warm water. Gradually add flours, stir well to combine.
- Turn out onto a lightly floured board and knead about 5 minutes until smooth and elastic, adding up to 1/4 cup additional flour if needed.
- Shape loaf as desired and slash top with sharp knife. Place on prepared baking sheet. Place on middle rack in oven and bake 30 minutes.
- Remove from oven and serve immediately or cool on wire rack.
- Note: You can substitute all-purpose flour the bread flour, but it won't rise as much.

- Combine 1 1/2 cups water and rice in a medium saucepan over medium-high heat; bring to a boil.
- Cover, reduce heat, and simmer 20 minutes or until liquid is absorbed.
- Spoon rice into a large bowl; cool to room temperature.
- Stir in 1 1/4 cups warm water.
- Add 2 cups flour and yeast to rice mixture; stir well to combine.
- Cover with plastic wrap; let stand 1 hour (batter should become very bubbly and almost double in size).
- Add 2 cups flour and salt to batter; stir 1 minute with a wooden spoon or until well combined.
- Scrape dough onto a heavily floured surface; sprinkle dough with 1 cup flour.
- Knead until smooth and elastic (about 8 minutes); add enough of remaining flour, 1 tablespoon at a time, to prevent dough from sticking to hands (dough will feel tacky).
- Divide dough in half.
- Working with 1 portion at a time (cover the remaining dough to keep from drying), roll each portion into a 14 x 7-inch rectangle on a lightly floured surface.
- Roll up each rectangle tightly, starting with a short edge, pressing firmly to eliminate air pockets; pinch seam and ends to seal.
- Place each roll, seam side down, in an 8 x 4-inch loaf pan coated with cooking spray.
- Lightly coat the loaves with cooking spray; cover and let rise in a warm place (85°), free from drafts, 1 hour or until doubled in size.
- Preheat oven to 375°.
- Bake for 45 minutes or until loaves are lightly browned and sound hollow when tapped.
- Cool in pans on wire racks.

FAVORITE "NON-CRUMBLE" CORNBREAD
My husband says a pot of his chili just isn't the same without my cornbread. My little brother spent all day in the kitchen making this recipe when he was 9 because he didn't like crumbly cornbread.

- Preheat oven to 425. While oven is heating, melt the shortening in a cast iron skillet.
- Mix dry ingredients. Add eggs and milk and mix well with electric mixer. Pour melted shortening into batter and blend until smooth. Pour batter into hot iron skillet and bake 20 - 25 minutes until golden brown.
NO BULL RICE BREAD
Tired of seeing recipes for wheat free bread full of things like Xanthan Gum, other allergens and impossible to find flours I decided to make my own. You can find Glutinous Rice flour at any Asian market. THIS RECIPE REQUIRES A COVERED LOAF PAN. It will not come out otherwise - rice needs a lot of wet heat to "activate." If you can not find one (try Ebay) use aluminum foil to cover it tightly. I'm serious - do not bother making this recipe unless you do will this.

- Make sure there is a rack in the middle position of the oven. Set the temperature dial to 200°F and heat up the oven.
- Butter and flour (I use the white rice flour) the coverable loaf pan.
- Dump all the ingredients in a bowl. Mix in the filtered water (carefully and slowly!) with a butter knife until all the flour is incorporated and the dough is the texture of soft ice cream. Make sure you have all the flour mixed together before adding the next step of water. It can go from dough to soup very fast! It usually takes a bit more than 1 1/4 cups for me.
- Turn off the oven. Dump the dough into the loaf pan and leave it in the oven to rise for 1 hour.
- Set the oven to anywhere between 350°F to 375°F depending on how you want your crust and bake it for 40 minutes with the lid ON.
- Take the lid off and bake it for another 40 minutes.
- Cool until yummy-warm.
