CITRUS-MARINATED CHUCK ROAST FOR THE GRILL

As my sons grew up and moved out and began cooking/entertaining on their own, this was one of the dishes in our family cookbook that was a 'go-to' recipe for them. It met all their requirements: quick and easy prep, relatively inexpensive, and practically foolproof. And did I mention that it's pretty cheap? (Hey, when you're suddenly supporting yourself, some things bear repeating. lol) Actually, you don't have to be an impoverished college kid living in your first apartment to enjoy this. It's not beef tenderloin, but it's pretty darned good! Since the size of the roast (and the appetites) can vary a lot, the number of servings is just a guesstimate. Assuming you'll have ample side dishes, allow about 1/3 lb. of meat for women and older children and 1/2 lb. each for men. For teenaged boys, all bets are off! :) A couple of 'cook's notes'... Although I somehow doubt any of my guys actually bothered to buy fresh oranges and squeeze them, it does seem to make a difference. However, the MinuteMaid approach will work.

3 -4 lbs chuck roast (2-1/2 to 3 inches thick)
salt, to taste
pepper, freshly-ground, to taste
meat tenderizer, to taste
1/2 cup low sodium soy sauce
1 cup orange juice, freshly-squeezed
1 tablespoon lemon juice, freshly-squeezed
1 teaspoon sugar
2 garlic cloves, minced
1/2 teaspoon ginger

Steps:

  • Sprinkle roast generously on both sides with salt, pepper and meat tenderizer.
  • Mix remaining ingredients.
  • Put roast in a large ziplock bag; add marinade; seal and refrigerate at least overnight. (I prefer to go 48 hours.).
  • Grill over medium-hot coals, turning several times and basting with reserved marinade frequently.
  • Cook approximately 35-40 minutes, until done to your liking.
  • Allow roast to rest for 10 minutes before slicing.

1 (1 1/4 lb) beef tenderloin, sliced into 1/2-inch thick strips
sea salt, to taste
fresh ground white pepper, to taste
2 tablespoons cornstarch
2 tablespoons ketchup
2 tablespoons shaoxing rice wine or 2 tablespoons dry sherry
2 tablespoons light soy sauce
2 tablespoons black vinegar or 2 tablespoons balsamic vinegar
2 teaspoons guilin chili sauce (Lee Kum Kee brand)
1 1/2 tablespoons szechuan peppercorns
2 tablespoons peanut oil
5 whole dried Thai chiles
2 small red fresno bell peppers or 1 serrano chili, bruised and cut into 1 1/2-inch pieces
1/2 cup dry roasted peanuts
1/4 cup fresh cilantro, chopped
2 scallions, cut into 2 inch pieces

Steps:

  • In a medium bowl, sprinkle the beef with salt and pepper. Add the cornstarch and mix well. Set aside.
  • In another smaller bowl, stir together the ketchup, rice wine, soy sauce, vinegar and chili sauce. Set aside.
  • In a small pan over medium heat, toast the Sichuan peppercorns until fragrant, 1 to 2 minutes. Remove from the heat and crush 1/2 tablespoon of the peppercorns in a mortar and pestle, or in a plastic bag with a rolling pin. Set aside. Leave the remaining peppercorns whole.
  • Heat a wok over high heat and, when wok starts to smoke, add the peanut oil. Add the remaining whole Sichuan peppercorns, dried chiles and fresh chiles and stir-fry for a few seconds.
  • Add the beef and stir-fry until the beef is brown, 2 to 3 minutes. Add the reserved sauce and peanuts and cook until the sauce has reduced slightly and is sticky and has a thicker consistency.
  • Add the cilantro and scallions and toss to coat and warm through. Then transfer to a serving plate and garnish with the ground Sichuan peppercorns. Serve immediately.

1 pound beef Top Sirloin Steak Boneless, cut 1 inch thick
1 medium orange
¼ cup chopped fresh cilantro
1 tablespoon smoked paprika
¼ teaspoon ground red pepper (optional)
4 cups cubed mango, watermelon, peaches and/or plums
Salt

Steps:

  • 1) Grate peel and squeeze 2 tablespoons juice from orange; reserve juice. Combine orange peel, cilantro, paprika, and ground red pepper, if desired, in small bowl. Cut beef Steak into 1-¼-inch pieces. Place beef and 2-½ tablespoons cilantro mixture in food-safe plastic bag; turn to coat. Place remaining cilantro mixture and fruit in separate food-safe plastic bag; turn to coat. Close bags securely. Marinate beef and fruit in refrigerator 15 minutes to 2 hours. 2) Soak eight 9-inch bamboo skewers in water 10 minutes; drain. Thread beef evenly onto four skewers leaving small space between pieces. Thread fruit onto remaining four separate skewers. 3) Place kabobs on grid over medium, ash-covered coals. Grill beef kabobs, covered, 8 to 10 minutes (over medium heat on preheated gas grill, 9 to 11 minutes) for medium rare (145°F) to medium (160°F) doneness, turning occasionally. Grill fruit kabobs 5 to 7 minutes or until softened and beginning to brown, turning once. 4) Season beef with salt, as desired. Drizzle reserved orange juice over fruit kabobs.

1 lb pork spareribs, cut into 1 1/4 inch pieces
1 teaspoon salt
2 garlic cloves
1 teaspoon soy sauce
1/4 cup vinegar
1/4 cup water
1/8 teaspoon cayenne pepper
1 tablespoon cornstarch
1 teaspoon soy sauce
1 tablespoon vinegar
2 tablespoons dark brown sugar or 2 tablespoons karo brown sugar syrup

Steps:

  • In a skillet, brown the spare ribs and garlic in oil, mashing the garlic in with a fork as it takes on color (remove garlic before it browns). Add salt, soy sauce, vinegar and water.
  • Bring to a boil for 1 minute, reduce heat and simmer for 30 minutes or until tender. (If it's barbecue weather, simmer 15 minutes, then finish slowly on grill - basting frequently with liquid from pan).
  • Stir sauce ingredients together and bring to a boil for 5 minutes. Toss with ribs before serving.
