EASY OVEN FRIES RECIPE
Easy Oven Fries Recipe - perfectly seasoned french fries, baked in the oven, crispy on the outside, soft on the inside.

Steps:
- Fill a large bowl with cold water and place potatoes in it. Let them soak for 15-30 minutes at room temperature.
- Rinse and drain, place potatoes on a plate liked with paper towels and dry them well.
- Preheat oven to 425 F. Line a large baking sheet with parchment paper.
- Place potatoes in a clean and dry bowl. In a small bowl, combine all ingredients for the seasoning. Sprinkle over potatoes, make sure they are coated in seasoning evenly. Drizzle with oil.
- Transfer potatoes on the baking sheet, leaving some space between each one.
- Bake for 15 minutes. Then carefully flip fries, (using a metal turner works best). Bake for 15-20 more minutes until golden and crispy one the outside and tender on the inside. Let them cool for 5 minutes, then transfer to a plate and serve with your favorite dipping sauce.

- Preheat oven to 450 degrees F (230 degrees C). Line a baking sheet with foil, and coat well with vegetable cooking spray. Scrub potatoes well and cut into 1/2 inch thick fries.
- In a large mixing bowl, toss potatoes with oil, sugar, salt and red pepper. Spread on baking sheet in one layer.
- Bake for 30 minutes in the preheated oven, until potatoes are tender and browned. Serve immediately.

SPICY OVEN FRIES
We love homemade French fries, and we like them baked. I have been kicking up the flavor on oven fries for quite some time. I think it all started when I was a teenager. When my girlfriend and I would go to Frisch's Big Boy and get their fries. I always doused mine with black pepper, even put the pepper in my puddle of ketchup....

Steps:
- 1. Preheat oven to 400 ^F. Line a baking sheet with parchment paper.
- 2. Scrub potatoes and peel (or leave peel on if you like). Slice long, fairly thick slabs of potato. Slice slabs into thick strips, or your preferred thickness.
- 3. Place potato strips into a bowl, thoroughly rinse off potato strips. At this point potatoes can be patted dry and readied for baking, or soaked in cold water until ready to bake.
- 4. If baking right away, French fries will be crispy and chewy. If soaked and baked later they will be tender inside and crispy on the outside. Your choice.
- 5. After patting French fries dry with paper towels, place back in bowl and drizzle with oil. Toss fries making sure all are coated with the oil.
- 6. Lay French fries on parchment lined baking sheet, in rows.
- 7. For applying the seasonings, I like to put them in my hand, individually. Then pinch the spices with the other hand and sprinkle spices evenly over the fries. This way, I don't over do it with a heavy hand.
- 8. Place baking sheet with French fries into preheated oven and bake until golden brown. Abt. 45 min.

- Preheat an oven to 425 degrees F (220 degrees C). Line a baking sheet with parchment paper or aluminum foil lightly greased with cooking spray.
- Cut the peeled zucchini in half lengthwise and remove the seeds. Slice the zucchini ito 1/2 x 1/2 x 4 inch pieces.
- Combine the bread crumbs, cheese, and seasoned salt in a pie plate. Dip the zucchini fries into the melted margarine, then press into bread crumbs. Gently toss between your hands so any bread crumbs that haven't stuck can fall away. Place the breaded zucchini onto the prepared baking sheet.
- Bake the zucchini in the preheated oven until the fries are golden and tender, about 15 minutes.

LOW SODIUM ROTISSERIE CHICKEN
Miss your store bought rotisserie chicken? If you have an air fryer with a spit, you can make your own Low Sodium Rotisserie Chicken at home.

- In a small bowl or old spice bottle - combine the thyme, Mrs. Dash O.T.B., oregano, garlic powder, onion powder, black pepper, smoked paprika, and cayenne pepper.
- Rinse, drain (let chicken come to room temp.) and pat the chicken dry with a paper towel. Tie the chicken legs together with a piece of cooking twine in figure 8 pattern. Tie the wings against the breasts with a separate piece of twine. (see photos above)
- Rub the chicken very lightly with olive oil and sprinkle the spices all over, lightly pat into the chicken. Rubbing spices will just smear.
- Insert the rotisserie spit through the legs where they are tied (figure 8) together and through the cavity, center the chicken on the spit. Push the prongs securely into the chicken and tighten the screws.
- Select the rotisserie setting on the air fryer. Press the wheel to select. Turn the wheel to adjust the time to 45 minutes. Press the wheel to start. Cook for 45 minutes, or until the internal temperature reaches 165°F.
- Using the rotisserie tong tool carefully remove the chicken from the air fryer. Allow the chicken to cool for 10 minutes. Cut twine and remove along with rotisserie spit from the chicken. Slice and serve.

- Preheat oven to 400° F, 200° C or Gas Mark 6.
- Place minced garlic into microwave safe bowl and add oil. Microwave for 1 to 2 minutes, depending on power of microwave, you are only heating the oil and garlic to blend and intensify, not cooking anything.
- When oil is cool enough to touch, add potatoes to bowl and toss to coat well.
- Spread out on small sheet pan or in small roaster that has been well greased or sprayed with no stick spray.
- Place on top rack of oven and cook for 20-25 minutes.
- Begin checking for browness at 20 minutes. When brown, turn potatoes and cook for same length of time on other side or until brown.
- Remove from oven and serve as is, or sprinkle with your favorite no sodium seasoning mix.

- Clean potatoes well and cut into sticks. You can peel the potatoes if you want but honestly, the crispy skins are the best part! Aim for ¼ to ½ thick sticks or anywhere in between. The more uniform your french fries, the more evenly they'll bake.
