Just as the name suggests, chicken thighs simply roasted in oven.

8 chicken thighs
2 teaspoons salt
1 teaspoon black pepper
2 tablespoons olive oil
15 cloves garlic
Rosemary leaves

Steps:

  • Preheat oven to 400F (205C).
  • Pat the chicken thighs with a paper towel.
  • Sprinkle salt and black pepper over each.
  • Drizzle olive oil over them and rub well.
  • Place thighs in a baking pan. Toss rosemary leaves and garlic in the pan.
  • Bake for 30 minutes. Reduce the heat to 375F (190C) and bake for 20 minutes more until tender when poked with a knife.
  • Remove from oven and cover with aluminum foil until serving time.
  • Garnish with fresh rosemary leaves when serving.

1 tablespoon bottled lemon pepper seasoning
3 dashes cayenne pepper
1/2 tablespoon Hickory Liquid Smoke
pinch of salt
chopped parsley leaves

Steps:

  • Preheat oven to 400°F (207°C).
  • In a big bowl, add the chicken legs, honey, lemon pepper seasoning, cayenne pepper, liquid smoke and salt together. Stir to mix well.
  • Arrange the chicken legs on a baking sheet lined with parchment paper. Scoop the marinade on the chicken legs.

  • Preheat the oven to 450°F.
  • Line a baking sheet with aluminum foil. Trim the chicken breasts of any extra fat tendrils and gently work your fingers under the skin and work half of the butter under the skin of each chicken breast, working it so spreads evenly. Drizzle each chicken breast with half of the olive oil and lightly pat so it evenly covers. Season each chicken breast with half of the kosher salt and black pepper.
  • Bake in the oven for 50-60 minutes or until the internal temperature is 165-170°F and the juices run clear, then let rest for 5-10 minutes before slicing. Refrigerate for up to 4 days or freeze for 3 months.
