Even beginner-level bakers will have no trouble making these fluffy rolls; the dough can be prepped, put in the pan, and chilled up to a day ahead.

Steps:
- Pour warm water into a large bowl; sprinkle with yeast, and let stand until foamy, about 5 minutes.
- Add sugar, butter, eggs, and salt; whisk to combine. Add flour; mix until incorporated and a sticky dough forms. Brush top of dough with butter; cover bowl with plastic wrap, and set aside in a warm place until dough has doubled in bulk, about 1 hour.
- Turn dough out onto a well-floured work surface. With floured hands, roll dough into a thick log. Cut into 18 equal pieces (halve log, cut each half in thirds, then cut each piece into thirds again).
- Brush a 9-by-13-inch baking pan with butter. One at a time, flatten each piece of dough, then fold edges toward the center, pressing to secure, until a smooth ball forms. Place dough balls in prepared baking pan, smooth side up (you should have 3 rows of 6). Cover loosely with plastic wrap, and let rise in a warm place until doubled in bulk, 30 to 40 minutes. (Alternatively, refrigerate, at least 4 hours and up to 1 day.)
- Preheat oven to 400 degrees. Remove plastic wrap; brush rolls with butter. Bake until golden and rolls sound hollow when tapped on bottom, 35 to 40 minutes (tent with aluminum foil if browning too quickly). Pull rolls apart, and serve warm.

- In a large bowl, mix the shortening, sugar, and hot water. Allow to cool until lukewarm, and mix in the yeast until dissolved. Mix in the egg, salt, and flour. Allow the dough to rise until doubled in size.
- Grease 8 muffin cups. Divide the dough into the prepared muffin cups, and allow to rise again until doubled in size.
- Preheat oven to 425 degrees F (220 degrees C).
- Bake for 10 minutes in the preheated oven, or until a knife inserted in the center of a muffin comes out clean.

- Place yeast and 2 teaspoons sugar in a medium bowl. Pour in water. Let stand until frothy, about 5 minutes.
- Place remaining sugar, flour, and salt in a separate bowl; mix to combine. Make a well in the center. Add yeast mixture, milk, eggs, and butter. Mix with a wooden spoon until a thick, sticky batter forms.
- Cover dough with a clean, damp dish towel and place in a warm place. Let rise until almost tripled in volume, 1 1/2 to 2 hours.
- Line a 9x13-inch baking pan with parchment paper, leaving an overhang on 2 sides. Punch dough down to deflate. Mix briefly in the bowl to get rid of bubbles.
- Dust a work surface with flour. Scrape dough out and dust the top with flour. Cut into 4 pieces, then cut each piece into 3 pieces.
- Press down 1 piece of dough with your palm. Use your fingers to gather it into a ball. Flip so the smooth side faces up and roll briefly to form a ball. Place roll in the prepared baking pan. Repeat with remaining dough. Line up rolls in a 3x4 grid in the baking pan. Spray the surface of the rolls with cooking spray. Cover with plastic wrap.
- Place baking pan in a warm place and let rise until almost doubled in size, 30 to 45 minutes. Halfway through the second rise, preheat the oven to 350 degrees F (175 degrees C).
- Bake rolls in the preheated oven until surface is golden brown, 15 to 18 minutes. Use parchment paper overhang to lift rolls onto a cooling rack. Serve warm.

- In a large mixing bowl or a stand mixer fitted with the bread hook, combine sugar and yeast, giving a quick stir to combine. Add warm water and allow to bloom for 10-15 minutes. The mixture should be frothy and fragrant.
- Preheat oven to 400 degrees and grease a 9x13 baking dish with a cold stick of butter.
- Add oil, egg and salt, stir to combine. Add flour, 1/2 cup at a time, mixing between each addition.
- Knead until bread comes together and slaps against the side of the bowl.

NO YEAST CINNAMON ROLLS

- Preheat your oven to 375 F. Brush a 9.5-inch pie dish with some of the melted butter from your dough. Set aside.
- In a large bowl, the bowl of a stand mixer fitted with the dough attachment, or a large food processor, combine the dry dough ingredients: flour, 1 1/2 tablespoons sugar, baking powder, salt. Stir to mix well.
- Start the mixer on low, or start the food processor, and pour in the melted butter and vanilla. Start pouring in the water or milk, and stop at about a half cup. Continue adding about a tablespoon at a time until your dough just comes together but is not sticky. This will happen somewhere between 2/3 and 3/4 cup.
- Place your ball of dough on a clean work surface and cover with a clean, lint-free dish towel or plastic wrap while you prepare your filling.
- Prepare the filling by mixing the 1/2 cup sugar and 2 teaspoons cinnamon in a bowl.
- Lightly dust your work surface with flour. Take your dough and roll into a large rectangle, about 1/4-inch thick.
- Spread the filling evenly over the rectangle, leaving about a half-inch at the top. Starting at the long side closest to you, roll the dough over the filling to create your swirls.
- Divide the dough into 12 equal portions. Use a sharp, serrated knife to carefully cut each roll. Arrange in your buttered pie dish, about 1/2 inch apart. Sprinkle any cinnamon sugar mixture that fell out of the rolls over the dough, if desired.
- Bake for 20-25 minutes until the rolls are just starting to brown at the top edges. Remove from the oven and place on a wire rack.
- Prepare the glaze by creaming together the cream cheese and butter in a clean bowl. Scrape the bowl. Add the powdered sugar, vanilla, and 1 tablespoon of the milk or water. Stir until smooth. Spread on the warm rolls as-is, or add more liquid to thin to the desired consistency.
- Cinnamon rolls are best enjoyed warm!

I haven't tried this recipe, but it looks so easy to make at the last minute because there is no rising time needed. This would be easy to put together in a mixer with a dough hook.

- Heat oven to 200°F | 100°C (if using your oven to proof the dough).
- Mix the yeast, 1 tablespoon of sugar and warm water in a large bowl. Let sit for 7-10 minutes until foamy and frothed.
- While yeast is activating, combine the milk and butter in a 2-cup capacity microwave safe jug. Microwave on high for about 40-50 seconds, or until butter has half melted and milk is luke warm. Stir in remaining sugar and salt. Give it a light mix until the butter completely melts through the milk, and the sugar dissolves. Add to the yeast in the bowl.
- Add in 2 cups of flour, giving it a light mix to combine with a wooden spoon, then add in the remaining 2 cups of flour. Mix until starting to pull away from the walls of the bowl (about 1-2 minutes). Turn out on a lightly floured work surface and use the extra 1/4 cup of flour in tablespoon increments to knead until smooth, elastic and slightly sticky (about 4-5 minutes kneading). (Lightly oil your hands if the dough gets too sticky.)
- Transfer dough back into the bowl. Cover with a warm damp towel. TURN OVEN OFF and transfer bowl of dough to the warm oven, leaving the door ajar for the first 10-15 minutes or so. After 15 minutes, close oven door and allow the dough to double in size (another 45 minutes).
- Scrape dough onto a lightly floured work surface or kitchen bench, knead lightly for about 30-40 seconds if needed to bring the dough together, and mould into a loaf shape. Cut in half, then cut both halves into 6 equal pieces (you should now have 12 equal pieces all together).
- Working one by one, lightly flatten each piece of dough in the palm of your hands, then bring up all sides to form a peak on top (like a tent shape), and pinch and seal this peak. Flip it over and you should have a smooth top! Ensure there are no cracks. If there are, turn the roll upside down again and smooth the cracks out towards the peak you just made, pinching the seal again, and flip over to double check the top is smooth. (Use a light dusting of flour in your hands to prevent sticking if you need to.)
- Arrange rolls, smooth side up into a lightly greased 9x13-inch baking pan or dish (you can line your pan or dish with parchment paper if you wish).Preheat oven to 375˚F | 190˚C (or 350°F | 180°C for fan forced ovens).
- Lightly spray rolls with cooking oil spray, cover with plastic wrap and let rise again until just about doubled in size, (about 30 minutes).
- Bake in a preheated oven for 20-25 minutes, or until rolls are golden browned. (Check them after 18 minutes to make sure they are ok.)
- Lightly brush with a little extra melted butter, and transfer to a cooling rack.

Living in the south, if our humidity is high on the day I make these, I may have to add up to 3 tablespoons of flour, one at a time.
