LORILOU'S QUICK N EASY BANANA BREAD
A super easy, tried and true banana bread. No mixer required! Been making this for as long as I can remember. And now that I have bananas literally growing outside my front door, it's the most frequently made recipe in my house! It's equally good as a loaf or as banana muffins. The original recipe is by Anita Strauss, La Jolla, but I have changed it up to my taste. You can add 1/2 cup of chopped walnuts or pecans if you like nuts in your banana bread - I don't! This is a very versatile and forgiving recipe. Try adding crushed pineapple, coconut, raisins, craisins, chocolate chips, etc... You won't be sorry!

Steps:
- Preheat oven to 325.
- Sift together flour, soda and salt. Set aside.
- Mix bananas, sugars, butter, eggs, vanilla and cinammon together.
- Add dry ingredients and mix well.
- Stir in nuts, if using.
- Pour into greased loaf pan.
- Bake for 1 hour.
EASY BANANA BREAD (NO MIXER!)
Steps:
- Preheat oven to 350 degrees and butter and flour a 9x5 loafpan.
- In a large bowl, whisk together butter and sugar before adding in the eggs, then the vanilla, then the sour cream and finally the bananas.
- Add the flour, baking soda and salt, whisking it until just combined into the butter mixture until smooth.
- Add the mixture to the loaf pan and bake for 60 minutes or until a toothpick comes out clean.

Steps:
- Preheat oven to 350°F. Grease a 9x5" loaf pan with butter and dust with flour, tapping out any excess.
- Combine banana, sour cream, and vanilla in a medium bowl. Sift together flour, baking powder, baking soda, and salt in a large bowl.
- Using an electric mixer, beat butter and brown sugar on medium speed in another large bowl until light and fluffy, about 3 1/2 minutes. Add eggs one at a time and beat on medium speed until fully combined, about 1 minute each. Add banana mixture and beat until just combined, about 30 seconds. Add dry ingredients in 2 batches, beating on low after each addition and scraping down sides of bowl if necessary, until fully incorporated, about 20 seconds per batch. Fold in walnuts. Transfer batter to prepared pan and smooth top with a spatula.
- Bake, rotating halfway through, until batter is set, top is dark golden brown and starting to crack, sides are starting to pull away from pan, and a tester inserted into center of bread comes out clean, 60-65 minutes. Cool in pan on a wire rack at least 15 minutes. Run a butter knife around perimeter of pan to loosen loaf, then tap pan gently on its side until loaf releases. Transfer to a cutting board or plate and let cool completely before slicing.

- Preheat oven to 350F (175C) and grease the bottom and ½" up the sides of a 9x5" bread pan. Set aside.
- Combine mashed bananas, canola oil, and melted butter in a large bowl and stir until well-combined.
- Add sugars and stir well.
- Stir in eggs and vanilla extract.
- Add buttermilk and stir until thoroughly combined.
- In a separate, medium-sized bowl, whisk together flour, baking powder, baking soda, and salt.
- Add dry ingredients to wet and carefully, gently using a spatula (not an electric mixer) fold ingredients together until just combined. Don't overmix the batter or your banana cake could end up dense/dry. If adding nuts/chocolate chips, stir them in here.
- Pour batter into prepared pan and, if desired, sprinkle generously with coarse sugar.
- Transfer to 350F (175C) oven and bake 60 minutes or until a toothpick inserted all the way into the center of the cake comes out clean or preferably with a few moist crumbs. Do not over-bake your banana bread or it will be dry.
