BANGERS & MASH (SAUSAGE WITH ONION GRAVY)
Recipe video above. Everybody loves a good sausage recipe, and this is the great British classic! Affectionately known as "Bangers and Mash" to Aussies and Brits, this is so easy to make, you will never ever use a store bought gravy powder!

Steps:
- Cook sausages: Heat oil in a large skillet / fry pan over medium high heat. Add sausages and cook, turning, until browned as much as possible all over and cooked through. Cook time will differ depending on sausage size - mine take around 8 minutes.
- Remove sausages onto a plate. Turn heat down to medium.
- 2 tbsp oil remaining: You need around 2 tbsp oil left in the skillet. If you have much less, add a bit of butter or oil.
- Saute onion and garlic: Add onion and garlic, cook until golden brown - around 4 minutes.
- Cook off flour 2 minutes: Add flour and mix through. Then cook, stirring constantly for 2 minutes.
- Gradually add beef stock: Add about 3/4 cup of beef broth and mix into the onion so it becomes a sludge. Then add remaining beef broth and mix until combined. If it's lumpy, use a whisk to help make it smooth.
- Thicken gravy: Simmer, stirring, for 2 to 3 minutes until the gravy thickens but is slightly thinner than you want - it will thicken more as you serve it.
- Season: Add salt and pepper. Stir, taste, then add more salt if you want.
- Serve sausages with plenty of gravy, with mashed potato and peas on the side. (Low carb option - Creamy Cauliflower Mash)

Steps:
- In a cast iron skillet over medium-high heat, brown the sausage breaking it up as you cook until it's no longer pink. Do not drain the fat.
- Melt the butter, and sprinkle the flour over the cooked sausage. Cook the flour for 2 minutes, then slowly add milk and stir constantly as you pour it in to avoid clumps.
- Bring the mixture to a boil, reduce heat and simmer until it's thickened.
- Season with garlic powder, salt, and pepper. Taste before adding salt, some sausages are saltier than others and may not need additional salt added.
- Serve immediately after cooking over split biscuits.

Steps:
- Place sausage in a large, deep skillet. Cook over medium high heat until evenly brown. Remove sausage, drain and set aside.
- Pour off most of the fat from the pan, leaving about 2 to 3 tablespoons. Return pan to medium-low heat and add flour. Using a whisk, stir vigorously until roux forms, scraping bottom of pan. Reduce heat to low and let roux cook at least 5 minutes, stirring occasionally. Grandma always "burned" hers a little on purpose.
- Add milk in a stream, whisking the whole time. After adding about 2 1/2 cups, turn heat to medium and continue cooking, stirring constantly. Bring gravy to a boil and cook to desired thickness. Add more milk if a thinner gravy is desired. You may also add some of the cooked and crumbled sausage to the gravy.

NO MEAT SAUSAGE GRAVY
This white gravy/sauce tastes like sausage, but has none. We like it on top of sausage bread (like recipe # 46692)and biscuits. A reviewer of the sausage bread used this on top of the bread and like it too! Of course, if you want to cook up some sausage and crumble it in you can, but this is a way to get some of that taste without the fat and calories. The recipe can easily be doubled. The secret is in the sage.

- Heat a large skillet over medium-high heat. Add the sausage and brown until there is no pink visible.
- Add the butter and stir it around to melt it. Once the butter has melted, stir in the flour, pepper, salt, and garlic powder (stir for about 2 minutes). Once it has reached a uniform consistency and the sausage crumbles are evenly coated, remove the skillet from the heat and let it rest for 10 minutes.
- Return the skillet to the stove, and heat over medium heat. Slowly pour in the milk while whisking continuously. Let the gravy cook until it has thickened, stirring occasionally (about 5 minutes).

- Begin by making the buttermilk biscuits according to these instructions. Once the biscuits are in the oven, start making the gravy.
- Break apart the sausage into small pieces and add to a heavy bottom pan set over medium-high heat. I recommend using a cast iron skillet. Cook the sausage for 3-5 minutes, until it is brown on all sides. The time will depend on the type of vegan sausage you use.
- Slowly add the flour, stirring occasionally, until the flour is completely absorbed into the sausage. Turn the heat to medium-low and slowly add the non-dairy milk, stirring constantly. Stir for 5-10 minutes until the gravy begins to be noticeably thicker. It should clear the bottom of the skillet when stirred. Once they gravy has reached your desired thickness, remove from heat. Note: if your gravy is too thick, you can add an additional 1/4 to 1/2 cup of milk.

- In a large skillet with deep sides, over medium-high heat, add the sausage. Brown and crumble the sausage, stirring occasionally until cooked through and there is no pink left, about 5 minutes. You will not drain the excess grease.
- Add the flour and stir it in so it gets absorbed in the fat and covers the sausage. Cook for 30 seconds, stirring constantly.
- Very slowly stream in the milk while stirring constantly. If you pour the milk in too fast it may form lumps. Continue to cook, stirring occasionally until it comes to a simmer and thickens, 3-5 minutes.
