MY MOTHER'S PEASANT BREAD: THE BEST EASIEST BREAD YOU WILL EVER MAKE

My Mother's Peasant Bread: The Best Easiest Bread You Will Ever Make image

Notes: The bread: This is a sticky, no-knead dough, so, some sort of baking vessel, such as pyrex bowls (about 1-L or 1-qt) or ramekins for mini loaves is required to bake this bread. See notes below the recipe for sources. You can use a bowl that is about 2 qt or 2 L in size to bake off the whole batch of dough (versus splitting the dough in half) but do not use this size for baking half of the dough - it is too big. Peasant Bread Fans! There is now a book: Bread Toast Crumbs, a loaf-to-crumb bread baking book, filled with tips and tricks and answers to the many questions that have been asked over the years. In the book you will find 40 variations of the master peasant bread recipe + 70 recipes for using up the many loaves you will bake. Learn more about the book here or buy it here.

Time 2h27m

Number Of Ingredients 6

4 cups (512 g) unbleached all-purpose or bread flour
2 teaspoons (10 g) kosher salt
2 cups (454 g) lukewarm water (made by mixing 1.5 cups cold water with 0.5 cup boiling water)
2 teaspoons (8 g) sugar
2 teaspoons (8 g) instant yeast, I love SAF Instant Yeast, see notes below
room temperature butter, about 2 tablespoons

Steps:

  • In a large mixing bowl, whisk together the flour, salt, sugar, and instant yeast (I love SAF Instant Yeast). Add the water. Mix until the flour is absorbed. (If you are using active dry yeast, see notes below.)
  • Cover bowl with a tea towel or plastic wrap and set aside in a warm spot to rise for at least an hour. (In the winter or if you are letting the bread rise in a cool place, it might take as long as two hours to rise.) This is how to create a slightly warm spot for your bread to rise in: Turn the oven on at any temperature (350ºF or so) for one minute, then turn it off. Note: Do not allow the oven to get up to 300ºF, for example, and then heat at that setting for 1 minute - this will be too hot. Just let the oven preheat for a total of 1 minute - it likely won't get above 100ºF. The goal is to just create a slightly warm environment for the bread.
  • . Grease two 1-qt or 1.5-qt oven-safe bowls (see notes below) with about a tablespoon of butter each. Using two forks, punch down your dough, scraping it from the sides of the bowl, which it will be clinging to. As you scrape it down try to pull the dough toward the center (see video below for guidance). You want to loosen the dough entirely from the sides of the bowl, and you want to make sure you've punched it down. Then, take your two forks and divide the dough into two equal portions - eye the center of the mass of dough, and starting from the center and working out, pull the dough apart with the two forks. Then scoop up each half and place into your prepared bowls. This part can be a little messy - the dough is very wet and will slip all over the place. Using small forks or forks with short tines makes this easier - my small salad forks work best; my dinner forks make it harder. It's best to scoop it up fast and plop it in the bowl in one fell swoop. Some people like to use flexible, plastic dough scrapers for this step.
  • for about 20 to 30 minutes on the countertop near the oven (or near a warm spot) or until it has risen to just below or above (depending on what size bowl you are using) the top of the bowls. (Note: Do not do the warm-oven trick for the second rise, and do not cover your bowls for the second rise. Simply set your bowls on top of your oven, so that they are in a warm spot. Twenty minutes in this spot usually is enough for my loaves.)
  • Bake for 15 minutes. Reduce the heat to 375º and bake for 15 to 17 minutes longer. Remove from the oven and turn the loaves onto cooling racks. If you've greased the bowls well, the loaves should fall right out onto the cooling racks. If the loaves look a little pale and soft when you've turned them out onto your cooling racks, place the loaves into the oven (outside of their bowls) and let them bake for about 5 minutes longer. Remove from oven and let cool for 10 minutes before cutting.

NO-KNEAD OATMEAL-MILLET PEASANT BREAD

No-Knead Oatmeal-Millet Peasant Bread image

Your guests will not believe you made this bread yourself! The crust is bakery-perfect and the crumb is moist and chewy. Rather than baking it in a loaf pan or on a pizza stone, this recipe uses a Dutch oven or other oven-proof baking dish with a tight-fitting lid!

Provided by dmvanask

Categories     Bread     Yeast Bread Recipes

Time 4h50m

Yield 12

Number Of Ingredients 9

1 cup boiling water
½ cup rolled oats
¼ cup millet
2 ¼ teaspoons active dry yeast
1 ½ teaspoons salt
⅔ cup warm water (98 to 115 degrees F/37 to 46 degrees C)
2 ¾ cups all-purpose flour
1 tablespoon all-purpose flour
1 tablespoon cornmeal, or more as needed

Steps:

  • Combine boiling water, oats, and millet in a large bowl. Let cool to 100 degrees F (38 degrees C), about 10 minutes.
  • Dissolve yeast and salt in warm water in a small bowl. Let stand until bubbly, about 5 minutes. Stir into the oat-millet mixture. Add 2 3/4 cups flour; stir until dough forms a loose ball. Cover with plastic wrap; let rise in a warm, draft-free location until doubled in volume, about 2 hours.
  • Dust a cutting board with 1 tablespoon flour. Turn the dough out onto the board. Tuck in the edges gradually to shape dough into a boule (rustic, French-style ball) without kneading. Cover with a clean dish towel; let rise until nearly doubled in volume, about 40 minutes.
  • Preheat oven to 475 degrees F (245 degrees C). Place a lidded Dutch oven inside.
  • Make 3 slashes on top of the dough boule using a serrated knife.
  • Remove hot Dutch oven from the oven carefully. Uncover; sprinkle cornmeal over the bottom and place boule inside; cover with the lid. Reduce oven heat to 450 degrees F (230 degrees C).
  • Bake in the preheated oven for 28 minutes. Remove the lid and reduce oven temperature to 425 degrees F (218 degrees C). Continue baking until top is golden brown, 12 to 14 minutes more. Carefully lift loaf out of pan onto a work surface and gently tap bottom of loaf; if it sounds hollow, bread is done. Let cool for at least 1 hour on a wire rack.

WHOLE WHEAT PEASANT BREAD (NO KNEAD!)

Whole Wheat Peasant Bread (NO KNEAD!) image

Yield: 2 loaves

Provided by Kristina McFeeters

Categories     Bread     Whole Grains

Time 1h30m

Number Of Ingredients 6

1 Tbsp dry instant yeast ((quick rising works, too))
2 cups warm water
2 Tbsp honey (OR any sweetener)
2 Tbsp olive oil (OR applesauce)
1 tsp salt
4 cup whole wheat flour ((White wheat works best, but red wheat works too.))

Steps:

  • MIX yeast, water, sweetener, oil, and salt into bowl.
  • ADD two cups flour and mix gently.
  • ADD one - two cups flour OR as needed to make a sticky dough consistency. (Use less, if not using oil or applesauce.)
  • SET aside for 15 minutes to allow flour to absorb and for the dough to start rising.
  • DIVIDE into two loaves with well-floured hands.
  • PUT both balls of dough onto an oiled cookie sheet, one on each side.
  • RISE until double, while cookie sheet is sitting on the stove.
  • PREHEAT oven to 425F while bread is rising. The heat will speed up the process and then your oven will be hot when the bread is ready.
  • BAKE at 400F for 10 minutes.
  • REDUCE heat to 375F and BAKE for 15-20 more minutes, or until golden.
  • REMOVE from oven and cool on a rack.

NO-KNEAD PEASANT BREAD

No-Knead Peasant Bread image

Provided by Food Network Kitchen

Time 21h35m

Yield 8 servings

Number Of Ingredients 5

2 1/2 cups unbleached bread flour
1/2 cup whole-wheat flour
1/2 teaspoon active dry yeast
1 1/2 teaspoons salt
All-purpose flour, for dusting

Steps:

  • Combine the bread flour, whole-wheat flour, yeast and salt in a large bowl. Add 1 1/2 cups lukewarm water (about 100 degrees F) and mix with your hands or a spoon until the dough comes together (it will be wet and sticky). Cover the dough tightly with plastic wrap. If you have extra time, refrigerate 12 to 24 hours; this is not necessary but will improve the flavor of the bread.
  • Let the dough rise, covered, at room temperature for about 18 hours; this rise is necessary whether you refrigerate the dough first or not. The surface will be bubbly after rising.
  • Generously dust a work surface with all-purpose flour. Turn the dough out onto the flour, then sprinkle flour on top. Fold the top and bottom of the dough into the center, then fold in the sides to make a free-form square. Use a dough scraper or a spatula to turn the dough over, then tuck the corners under to form a ball.
  • Line a baking sheet with parchment paper and generously dust with flour. Transfer the dough to the baking sheet, seam-side down, and sprinkle with more flour. Cover with a cotton kitchen towel (do not use terry cloth) and let rise at room temperature until doubled in size, 2 to 3 hours.
  • Position a rack in the bottom of the oven and place a 2- or 4-quart cast-iron or enameled Dutch oven (without the lid) on the rack. Preheat the oven to 450 degrees F for at least 30 minutes. When the dough has doubled, carefully transfer the hot pot to a heatproof surface. Uncover the dough, lift up the parchment and quickly invert the dough into the pot (shake the pot to center the dough, if necessary). Cover with the lid and bake 30 minutes, then uncover and bake until brown and crusty, 15 to 30 more minutes. Turn out onto a rack to cool.

NO-KNEAD SALAMI BREAD

No-Knead Salami Bread image

Provided by Molly Yeh

Categories     side-dish

Time 16h50m

Yield 6 servings

Number Of Ingredients 7

3 cups (400 grams) bread flour, plus more for dusting
2 teaspoons kosher salt
1/2 teaspoon instant yeast
1 1/3 cups (320 grams) water
8 ounces Genoa salami, diced into 1/4-inch pieces
1/4 cup finely chopped fresh chives
Butter, for serving, if desired

Steps:

  • In a large bowl, whisk together the flour, salt and yeast. Add the water and stir with a stiff rubber spatula until combined and there are no longer bits of flour, 20 to 30 seconds. (It will be very sticky.) Cover with plastic and let sit on the counter at room temperature overnight, 12 to 18 hours.
  • Remove the plastic cover and smell the funky fermented aroma and appreciate the bubbles. Sprinkle one-third of the salami and chives over the top. Using a rubber spatula, fold the outside of the dough over the salami to cover. Repeat this process two more times until all of the salami and chives are folded in.
  • Lay a piece of parchment paper on the counter and sprinkle with an even layer of flour to cover the surface (about 1/4 cup or so). Scrape the dough onto the floured parchment and use heavily-floured hands to shape it into a roundish blob. Press in any exposed salami bits and pinch the dough to seal. Sprinkle the top with another layer of flour and cover with a piece of plastic wrap. Let sit until the dough has risen by half, 1 1/2 to 2 hours.
  • Place an oven rack in the lower third of the oven and preheat to 450 degrees F.
  • Place a 3- or 4-quart lidded Dutch oven on the rack and allow to heat while the oven reaches the desired temperature.
  • When the dough has proofed, carefully remove the Dutch oven from the oven and remove the lid. Uncover the plastic from the bread dough and gently lower the dough into the Dutch oven on the parchment. Cover the Dutch oven and bake for 30 minutes. Remove the lid, then bake until the top is golden brown and crusty, another 10 to 20 minutes.
  • Let it cool on a rack for about an hour, then slice and serve with butter if desired. This is best on the first day, but it will freeze well wrapped tightly in plastic.

  • Mix the dry ingredients in a large bowl. Add only enough water to make a soft, yet stringy dough. The dough will be VERY sticky and look like a thick batter.
  • Place a sheet of parchment (should be at least 14-inch/36 cm square) on the counter and dust heavily with flour.
  • While the dough is still in the bowl, turn it over on itself several times. Wet your hands; it makes it easier. Now turn the dough out on the floured parchment, seam (if any) side down. Dust the top with flour and cover with the bowl inverted. Let rest for about 1-1 1/2 hours.

  • Dissolve sugar in the water in a small bowl. Sprinkle yeast over top (no need to stir) and let it stand for about 15 minutes or until mixture starts to bubble up. Meanwhile, whisk together flour and salt in a large bowl. After the yeast mixture becomes foamy, stir it up and add to the flour mixture. Stir until the flour is absorbed into the liquid.
  • Preheat the oven to 425 degrees Fahrenheit. Grease two 1 or 1.5 quart oven-safe bowls with about a tablespoon of butter each. Punch down your dough, and then scrape it from the sides of the bowl, which takes a little finessing. Take two forks and divide the dough into two equal portions. The dough will be somewhat wet, not dry like dough that you knead. Scoop up each half and place into your prepared bowls. Let the dough rise again in a warm spot for about 30 minutes.
  • Bake for 15 minutes at 425 degrees, then reduce heat to 375 degrees and bake for about 15 minutes more. Remove from oven and turn loaves onto cooling racks. Let cool for approximately 10 minutes before cutting. Enjoy!

  • In a large bowl (or container), mix together the warm water (1.5 cups), yeast (1 packet/2.25 teaspoons), and table salt (1/2 tablespoon), until yeast and salt are fully or almost dissolved (I like using a whisk for this).
  • Add the flour (3.25 cups) to the bowl all at once and stir together until a sticky dough forms. Don't worry about mixing it too much, just make sure everything is uniformly wet. It WILL be messy and sticky. You can scrape what's left on the spoon with a silicone spatula.
  • Cover the bowl with a kitchen towel (or place the container to the lid on ajar). Leave it for 2-3 hours to rise in a somewhat warm place (If it's cold out, I like to preheat my oven for a few minutes, then turn it off, then place the bowl in the oven, trapping the heat inside. If your house is warm just leave it out, or if it's warm outside you can place it there).
  • After the two-three hour rise time, you have two options: bake, or store in the fridge. See notes for how to store.
