NO-KNEAD BREAD

No-Knead Bread image

Here is one of the most popular recipes The Times has ever published, courtesy of Jim Lahey, owner of Sullivan Street Bakery. It requires no kneading. It uses no special ingredients, equipment or techniques. And it takes very little effort - only time. You will need 24 hours to create the bread, but much of this is unattended waiting, a slow fermentation of the dough that results in a perfect loaf. (We've updated the recipe to reflect changes Mark Bittman made to the recipe in 2006 after publishing and receiving reader feedback. The original recipe called for 3 cups flour; we've adjusted it to call for 3 1/3 cups/430 grams flour.) In 2021, J. Kenji López-Alt revisited the recipe and shared his own tweaked version.

Provided by Mark Bittman

Categories     easy, breads, times classics, side dish

Time 1h30m

Yield One 1 1/2-pound loaf

Number Of Ingredients 4

3 1/3 cups/430 grams all-purpose or bread flour, plus more for dusting
Generous 1/4 teaspoon/1 gram instant yeast
2 teaspoons/8 grams kosher salt
Cornmeal or wheat bran, as needed

Steps:

  • In a large bowl combine flour, yeast and salt. Add 1 1/2 cups/345 grams water and stir until blended; dough will be shaggy and sticky. Cover bowl with plastic wrap. Let dough rest at least 12 hours, preferably about 18, at warm room temperature, about 70 degrees.
  • Dough is ready when its surface is dotted with bubbles. Lightly flour a work surface and place dough on it; sprinkle it with a little more flour and fold it over on itself once or twice. Cover loosely with plastic wrap and let rest about 15 minutes.
  • Using just enough flour to keep dough from sticking to work surface or to your fingers, gently and quickly shape dough into a ball. Generously coat a cotton towel (not terry cloth) with flour, wheat bran or cornmeal; put dough seam side down on towel and dust with more flour, bran or cornmeal. Cover with another cotton towel and let rise for about 2 hours. When it is ready, dough will be more than double in size and will not readily spring back when poked with a finger.
  • At least a half-hour before dough is ready, heat oven to 450 degrees. Put a 6- to 8-quart heavy covered pot (cast iron, enamel, Pyrex or ceramic) in oven as it heats. When dough is ready, carefully remove pot from oven. Slide your hand under towel and turn dough over into pot, seam side up; it may look like a mess, but that is OK. Shake pan once or twice if dough is unevenly distributed; it will straighten out as it bakes. Cover with lid and bake 30 minutes, then remove lid and bake another 15 to 30 minutes, until loaf is beautifully browned. Cool on a rack.

NO KNEAD ESSENTIALS: BATTER BREAD

No Knead Essentials: Batter Bread image

I have been working on making a no-knead bread that is almost pourable, but maintains a good crumb, and great taste. I did my final testing of this last night and this is what I finally came up with. This is a plain, yet tasty bread; however, I can see adding other ingredients to change it up. For example, you could add some...

Time 1h30m

Number Of Ingredients 10

PLAN/PURCHASE
THE YEAST MIX
1 tsp coconut sugar
2 1/4 tsp active, dry yeast
1/2 c light beer, warm
THE BREAD MIX
3/4 c warm milk
1 tsp salt, kosher variety, fine grind, or to taste
1/4 Tbsp baking soda
2 1/2 c flour, all-purpose variety

Steps:

  • 1. PREP/PREPARE
  • 2. You do not want the beer and milk to be too warm, or else it will kill the yeast. My suggestion would be between 106f - 110f (41c - 43c).
  • 3. I made this recipe using a muffin-top baking pan, and a cast-iron cornbread pan. Both of those items worked well. However, you could divide the dough and place into two regular pie pans.
  • 4. Gather your ingredients (mise en place).
  • 5. These are the two pans I used.
  • 6. Add the sugar and warm beer together, and then sprinkle on the yeast. Warm up the milk.
  • 7. Add the milk, salt, and baking soda to a mixing bowl and add about a cup of the flour. Then whisk until completely smooth.
  • 8. Add the remainder of the flour, and the yeast mixture, and whisk until smooth. It will be wet, sticky, and almost pourable.
  • 9. Add some oil, or softened butter to your baking pans, and add enough of the dough to a depth of about 0.5 - 0.75 inches (1.3 - 1.9 cm).
  • 10. Place in a warm part of the kitchen and allow to rise for 1 hour.
  • 11. Look at all of those beautiful bubbles... that is going make for a lovely crumb.
  • 12. Place a rack in the middle position, and preheat the oven to 375f (190c)
  • 13. Bake until golden brown, about 18 - 22 minutes.
  • 14. Here is a photo of how the ones baked in my cornbread pan looked. So yummy.
  • 15. Cool for about 30 minutes before serving.
  • 16. PLATE/PRESENT
  • 17. Serve with a meal or eat with some butter and jam... whatever you choose. Enjoy.
  • 18. Keep the faith, and keep cooking.

ALMOST NO-KNEAD BREAD

Almost No-Knead Bread image

Recipe paraphrased from a recipe in Cooks Illustrated 1/2008 This recipe comes out best made in an enameled cast-iron dutch oven with a lid that fits tightly. It can also be made in a regular cast-iron dutch oven or a heavy stockpot. Use a mild flavored beer like Budweiser or a mild flavor non-alcoholic beer. The bread is best the day it's baked. It can be wrapped in foil and stored in a cool dry place for 2-days. This recipe makes one large, round loaf of bread

Categories     Breads

Time 2h

Yield 10 serving(s)

Number Of Ingredients 8

3 cups unbleached all-purpose flour (15-oz)
1/4 teaspoon fast rise yeast
1 1/2 teaspoons regular table salt
3/4 cup water, plus
2 tablespoons water, at room temperature (7-oz)
1/4 cup mild-flavored beer, plus
2 tablespoons mild-flavored beer (3 oz)
1 tablespoon distilled white vinegar

Steps:

  • In a large bowl, whisk together flour, yeast and salt. Now add the water, beer and vinegar. Fold batter using a rubber spatula. Scrape the dry ingredients from the bowl bottom and continue folding until a ragged ball of dough forms. Cover bowl with some plastic wrap. Allow to sit at room temperature for 8 to 18 hours.
  • In a 10-inch skillet, place a 12 x 18 inch piece of parchment paper. Spray parchment paper with nonstick cooking spray. Take the bowl of dough and turn out onto a lightly floured work surface. Knead dough 10 to 15 times. Pull edges of dough from edges into the center to form a ball of dough. Place the dough with the seam side down, into the parchment lined skillet. Spray dough with nonstick cooking spray. Cover the dough loosely with a piece of plastic wrap. Allow to rise at room temperature until the dough is doubled in size, about 2-hours. The dough should not easily spring back when poked.
  • Place a 6 to 8 quart, heavy bottom, Dutch oven with lid, on lowest oven rack. Preheat the oven at 500°F for 1/2 hour. Lightly dust top of dough with flour and then make single 6-inch long, 1/2 inch deep cut on the top of the dough with a sharp knife or razor blade. Take preheated Dutch oven from from the 500°F oven and remove lid. Using edges of parchment paper, pick up dough from frying pan and place into Dutch oven. Allow extra parchment paper to hang out of Dutch oven and cover dough with lid. Return covered Dutch oven to oven and turn temperature down to 425°F Bake bread covered for 30-minutes. Remove lid and continue baking until bread is deep brown and an instant read thermometer, inserted in loaf center, reads 210°F This may take 20 to 30 minutes after removing cover. When done, remove bread from Dutch oven and cool on wire rack for 2 hours, until bread reaches room temperature.

NO KNEAD ARTISAN BREAD

No Knead Artisan Bread image

No Knead Artisan Bread Recipe - This artisan style crusty bread gets its complex flavors and chewy interior from a 24 hour rising time. With only 4 ingredients, even the most intimidated baker can easily make this practically foolproof bread.

Provided by Aysegul Sanford

Categories     Bread

Time P1DT1h

Number Of Ingredients 4

3 cups (360 grams) of bread flour
¼ teaspoon active dry yeast
2 teaspoons kosher salt
1 ⅓ cups (316 ml) lukewarm water*

Steps:

  • Mix in the dry ingredients in a large mixing bowl.
  • Pour in 1 ⅓ cups (316 ml.) lukewarm water.
  • Give it a mix using a wooden spoon. At this point, the dough needs to be quite sticky. If it is not, after you fully mixed it, add in more water in 1-tablespoon increments. Alternatively, you can use your clean hands to mix and feel the stickiness.
  • Cover the bowl with a clean kitchen towel and let it sit in a warmer part of your house for 18-24 hours.
  • Lightly flour your kitchen counter, gently remove the dough from the bowl, and place it onto your work surface. While removing, you will realize that it is quite sticky. However, if you take your time and gently pull it by folding it onto itself, you will see that it will come out easily without any dough remaining in the bowl.
  • Form the dough into a ball tucking the sides of the dough under. Transfer the dough onto a large parchment paper, lightly dust with a little bit of flour, cover it with a clean kitchen towel, and let it rise for 1-2 hours or until it doubles in size. Again, I recommend letting it sit in a warmer part of your house.
  • Towards the end of the rising time, place your dutch oven in the oven and pre-heat it to 450 F degrees (230 C Degrees).
  • When ready to bake, take the now-very hot dutch oven out of the oven. Using the edges of the parchment paper carefully place the dough into the dutch oven. Put the lid on and let it bake for 30 minutes. Then remove the lid and continue to bake another 20-30 minutes or until the top is nicely golden brown as you see in the photos.
  • At the end of the baking, remove it from the dutch oven, place it onto a cooling rack and let it cool for 30-45 minutes before slicing.

Steps:

  • Cover with a clean cloth and let rise until doubled in volume.
  • Stir dough down gently, and spoon into a lightly greased 9x5 inch loaf pan (the batter should be sticky). Pat down with floured hands to help shape. Cover again, and let rise for about 30 minutes.

NO-KNEAD LOAF BREAD

No-Knead Loaf Bread image

This no-knead bread recipe takes no more than 7 to10 minutes of actual hands-on time. Just mix the ingredients, let rise, briefly shape, then bake.

Provided by Diana Rattray

Categories     Bread

Time 5h35m

Number Of Ingredients 5

3 cups flour (all-purpose or bread flour)
1 1/2 teaspoons yeast (instant)
1 1/4 teaspoons salt (kosher)
Optional: 2 teaspoons sugar (or honey)
1 1/2 cups water (room temperature)

Steps:

  • Gather the ingredients.
  • In a large mixing bowl, combine the flour, yeast, salt, and sugar or honey, if using.
  • Use a whisk or spoon to blend well.
  • Slowly add the water and stir with a wooden spoon or your hands, until well mixed.
  • Cover the bowl with plastic wrap and set in a draft-free place to rise for 4 hours.
  • Grease an 8-by-4-inch loaf pan with butter.
  • Scrape the dough out onto a well-floured surface, such as a silicone mat, parchment paper, or a cutting board.
  • With floured hands, shape the dough into a rough rectangle about 8 1/2 inches by 12 inches. Add small amounts of flour, if needed, to keep it from sticking to the surface. Try to handle the dough gently so it doesn't deflate too much. You want lots of little air bubbles through the loaf.
  • Gently fold the ends to form a rough loaf shape. Drop it into the prepared pan.
  • Cover the pan loosely with a clean, lightweight dish towel, and set in a draft-free place for 1 hour, or until it is approximately double in size.
  • Heat the oven to 425 F. With a sifter or fine-mesh sieve, dust the risen loaf with a little more flour.
  • Bake the loaf for 25 minutes, until it's a deep golden brown and sounds hollow when tapped.
  • Remove from the oven and turn the bread out onto a rack to cool completely before slicing.
  • Enjoy!
