ALMOST NO-KNEAD BREAD FROM AMERICA'S TEST KITCHENS

Almost No-Knead Bread from America's Test Kitchens image

Crusty Rustic Artisan Bread

Provided by America's Test Kitchens

Categories     Bread

Time 1h5m

Yield 1 loaf

Number Of Ingredients 7

15 oz. (about 3 cups) unbleached all-purpose flour, plus extra for dusting
1-1/2 tsp. kosher salt
¼ tsp. Rapid rise or instant yeast
¾ cup room-temperature tap water
3 oz. mild-flavored beer, such as Budweiser room temperature
1 Tbsp. white vinegar
Vegetable Oil Spray

Steps:

  • Whisk flour, salt, and yeast in a large bowl. Add water, beer, and vinegar. Using a rubber spatula, fold mixture, scraping up dry flour from bottom of bowl until shaggy ball forms. Cover bowl with plastic wrap and let sit at room temperature 8-18 hours.
  • Turn dough out onto lightly floured board; knead lightly 10-15 times to form a smooth, round ball; shape into round by pulling edges of dough up onto the middle. Lay on the counter 12" x 18" sheet of parchment; spray with nonstick cooking spray. Place dough round on parchment, seam side down and gently place in a dutch oven. Mist lightly dough with nonstick cooking spray. Cover with plastic wrap; let rise about 2 hours, until double. (If you poke a finger into the dough and the dent remains, it's double.)
  • Lightly flour top of the loaf (I forgot to do this -- still worked) Using a sharply serrated knife, cut ½ -inch X into the top of the loaf (Yes, I forgot this too). Remove plastic wrap from dough
  • Adjust oven rack to the middle position. Cover the pot and put it in a cold oven. Heat oven to 425F. Once the oven reaches 425 degrees, bake for 30 minutes.
  • Remove lid and bake, uncovered, 20-30 minutes longer, till bread is deep brown and the center of the loaf registers 210F on an instant-read thermometer. Carefully remove bread from the pot and place it on a wire rack to cool. Let cool 2 hours before slicing.
  • Note: This bread is best eaten the day it's made, but will keep wrapped in a double layer of plastic and stored at room temperature for up to 2 days. To re-crisp crust, place unwrapped bread in a 450-degree oven for 6 to 8 minutes. Freezes well for up to 3 months.

NO KNEAD CRUSTY BREAD

No Knead Crusty Bread image

I just had to share this recipe - find the full recipe with more detail here: http://www.simplysogood.com/2010/03/crusty-bread.html

Provided by Donna Graffagnino

Categories     Savory Breads

Time 15h15m

Number Of Ingredients 5

3 c unbleached all purpose flour
1 3/4 tsp salt
1/2 tsp instant or rapid-rise yeast
1 1/2 water
1 Tbsp sugar

Steps:

  • 1. In a large mixing bowl, whisk together flour, salt, yeast, and sugar. Add water and mix until a shaggy mixture forms. Cover bowl with plastic wrap and set aside for 12-18 hours. Overnight works great. Note: Regular active yeast can be used in place of the instant or rapid rise yeast but it will need to be activated in 1/4 cup warm water with 1 tsp sugar. Stir and let sit for 5-10 minutes. However, the rapid rise works the best.
  • 2. DO NOT REFRIGERATE. This is not optional. It takes that much time to proof the dough. The reason why you need a large bowl, is because the dough will start to rise.
  • 3. Heat oven to 450 degrees. Once the oven has reached 450 degrees place a cast iron pot with a lid in the oven and heat the pot for 30 minutes.
  • 4. Right after you put the pan in the oven to preheat, dump the dough out onto a HEAVILY floured surface and shape it into a round ball. A pastry cloth works great! Cover with plastic wrap and let set for 30 minutes while the pot is heating.
  • 5. Remove hot pot from the oven and carefully drop in the dough. You do NOT have to have an enamel covered cast iron pot. You can use anything with a lid that can take the heat, such as a 5.5 quart cast iron enamel covered pot. You DO NOT need to oil the pot. At least not in a enamel covered cast iron or regular cast iron pot.
  • 6. Cover and return to oven for 30 minutes. After 30 minutes remove the lid and bake an additional 15 minutes.
  • 7. Remove bread from oven and place on a cooling rack to cool. Remember the pot is HOT so use a couple of hot pads and carefully pull out the bread.
  • 8. Tips: Use your imagination and add other ingredients like garlic, onion, cheese, pepperoni, dill, herbs, sun dried tomatoes, dried fruits, nuts, etc.
  • 9. Enjoy!

NO-KNEAD LOAF BREAD

No-Knead Loaf Bread image

This no-knead bread recipe takes no more than 7 to10 minutes of actual hands-on time. Just mix the ingredients, let rise, briefly shape, then bake.

Provided by Diana Rattray

Categories     Bread

Time 5h35m

Number Of Ingredients 5

3 cups flour (all-purpose or bread flour)
1 1/2 teaspoons yeast (instant)
1 1/4 teaspoons salt (kosher)
Optional: 2 teaspoons sugar (or honey)
1 1/2 cups water (room temperature)

Steps:

  • Gather the ingredients.
  • In a large mixing bowl, combine the flour, yeast, salt, and sugar or honey, if using.
  • Use a whisk or spoon to blend well.
  • Slowly add the water and stir with a wooden spoon or your hands, until well mixed.
  • Cover the bowl with plastic wrap and set in a draft-free place to rise for 4 hours.
  • Grease an 8-by-4-inch loaf pan with butter.
  • Scrape the dough out onto a well-floured surface, such as a silicone mat, parchment paper, or a cutting board.
  • With floured hands, shape the dough into a rough rectangle about 8 1/2 inches by 12 inches. Add small amounts of flour, if needed, to keep it from sticking to the surface. Try to handle the dough gently so it doesn't deflate too much. You want lots of little air bubbles through the loaf.
  • Gently fold the ends to form a rough loaf shape. Drop it into the prepared pan.
  • Cover the pan loosely with a clean, lightweight dish towel, and set in a draft-free place for 1 hour, or until it is approximately double in size.
  • Heat the oven to 425 F. With a sifter or fine-mesh sieve, dust the risen loaf with a little more flour.
  • Bake the loaf for 25 minutes, until it's a deep golden brown and sounds hollow when tapped.
  • Remove from the oven and turn the bread out onto a rack to cool completely before slicing.
  • Enjoy!

  • Add luke warm water and mix it with a wooden spatula/spoon. There should be no lumps and the dough should come together. Scrap the edges of the bowl if required.
  • Cover the bowl with shower cap – it works better than cling film as it could be loosened up on top. But if you use large enough bowl, cling wrap should be fine too.
  • Leave this dough on the kitchen counter for about 2 hours until the dough has risen to double its original volume.

  • Stir together the flour, salt and yeast in a large mixing bowl until combined. Add in the warm water and stir with a wooden spoon or spatula until the dough is evenly mixed and no large flour streaks remain. (The dough will look quite loose and shaggy, which is ok.)
  • Cover the bowl with plastic wrap or beeswrap, and let the dough rest at room temperature for 12 to 18 hours.
  • Transfer the dough to a well-floured surface. Fold the dough on top of itself — pulling the outer edges up and into the center a few times until the dough feels a bit tighter and holds its shape — to form a round dough ball. (If the dough is sticky or feels too loose at any point, just keep sprinkling on extra flour as needed.) Lightly flour the top of the dough ball, and then carefully flip it upside-down onto a piece of parchment paper, so that the smooth side is on top. Use your hands to shape the ball into an even circle. Lightly flour the top of the dough ball, then loosely cover it with plastic wrap or beeswrap to rest while the oven heats.
  • Place the Dutch oven inside of your oven*, then set oven to 450°F. Wait for 20-30 minutes for the oven to heat, while the dough continues to rest. (If the dough rises and spreads out more than you would like during this time, just use your hands to shape it into a tighter ball once more just before baking.)

  • Stir everything together. Mix the ingredients together. Let the soft dough rise at room temperature (in a container with enough room for expansion), then refrigerate for up to 7 days.
  • Shape the dough as you like. Shape the dough into balls, or stretch it into longer loaves. Don't worry about making perfectly round loaves or ruler-straight baguettes; I never do.
  • Enjoy crusty loaves with superior flavor and wonderful texture. Crusty/crackly outside. Soft/chewy inside. Packed with flavor, thanks to the dough's substantial fridge-time.
