ALMOST NO-KNEAD BREAD FROM AMERICA'S TEST KITCHENS

- Whisk flour, salt, and yeast in a large bowl. Add water, beer, and vinegar. Using a rubber spatula, fold mixture, scraping up dry flour from bottom of bowl until shaggy ball forms. Cover bowl with plastic wrap and let sit at room temperature 8-18 hours.
- Turn dough out onto lightly floured board; knead lightly 10-15 times to form a smooth, round ball; shape into round by pulling edges of dough up onto the middle. Lay on the counter 12" x 18" sheet of parchment; spray with nonstick cooking spray. Place dough round on parchment, seam side down and gently place in a dutch oven. Mist lightly dough with nonstick cooking spray. Cover with plastic wrap; let rise about 2 hours, until double. (If you poke a finger into the dough and the dent remains, it's double.)
- Lightly flour top of the loaf (I forgot to do this -- still worked) Using a sharply serrated knife, cut ½ -inch X into the top of the loaf (Yes, I forgot this too). Remove plastic wrap from dough
- Adjust oven rack to the middle position. Cover the pot and put it in a cold oven. Heat oven to 425F. Once the oven reaches 425 degrees, bake for 30 minutes.
- Remove lid and bake, uncovered, 20-30 minutes longer, till bread is deep brown and the center of the loaf registers 210F on an instant-read thermometer. Carefully remove bread from the pot and place it on a wire rack to cool. Let cool 2 hours before slicing.
- Note: This bread is best eaten the day it's made, but will keep wrapped in a double layer of plastic and stored at room temperature for up to 2 days. To re-crisp crust, place unwrapped bread in a 450-degree oven for 6 to 8 minutes. Freezes well for up to 3 months.

- 1. In a large mixing bowl, whisk together flour, salt, yeast, and sugar. Add water and mix until a shaggy mixture forms. Cover bowl with plastic wrap and set aside for 12-18 hours. Overnight works great. Note: Regular active yeast can be used in place of the instant or rapid rise yeast but it will need to be activated in 1/4 cup warm water with 1 tsp sugar. Stir and let sit for 5-10 minutes. However, the rapid rise works the best.
- 2. DO NOT REFRIGERATE. This is not optional. It takes that much time to proof the dough. The reason why you need a large bowl, is because the dough will start to rise.
- 3. Heat oven to 450 degrees. Once the oven has reached 450 degrees place a cast iron pot with a lid in the oven and heat the pot for 30 minutes.
- 4. Right after you put the pan in the oven to preheat, dump the dough out onto a HEAVILY floured surface and shape it into a round ball. A pastry cloth works great! Cover with plastic wrap and let set for 30 minutes while the pot is heating.
- 5. Remove hot pot from the oven and carefully drop in the dough. You do NOT have to have an enamel covered cast iron pot. You can use anything with a lid that can take the heat, such as a 5.5 quart cast iron enamel covered pot. You DO NOT need to oil the pot. At least not in a enamel covered cast iron or regular cast iron pot.
- 6. Cover and return to oven for 30 minutes. After 30 minutes remove the lid and bake an additional 15 minutes.
- 7. Remove bread from oven and place on a cooling rack to cool. Remember the pot is HOT so use a couple of hot pads and carefully pull out the bread.
- 8. Tips: Use your imagination and add other ingredients like garlic, onion, cheese, pepperoni, dill, herbs, sun dried tomatoes, dried fruits, nuts, etc.
- 9. Enjoy!
NO-KNEAD LOAF BREAD
This no-knead bread recipe takes no more than 7 to10 minutes of actual hands-on time. Just mix the ingredients, let rise, briefly shape, then bake.

- Gather the ingredients.
- In a large mixing bowl, combine the flour, yeast, salt, and sugar or honey, if using.
- Use a whisk or spoon to blend well.
- Slowly add the water and stir with a wooden spoon or your hands, until well mixed.
- Cover the bowl with plastic wrap and set in a draft-free place to rise for 4 hours.
- Grease an 8-by-4-inch loaf pan with butter.
- Scrape the dough out onto a well-floured surface, such as a silicone mat, parchment paper, or a cutting board.
- With floured hands, shape the dough into a rough rectangle about 8 1/2 inches by 12 inches. Add small amounts of flour, if needed, to keep it from sticking to the surface. Try to handle the dough gently so it doesn't deflate too much. You want lots of little air bubbles through the loaf.
- Gently fold the ends to form a rough loaf shape. Drop it into the prepared pan.
- Cover the pan loosely with a clean, lightweight dish towel, and set in a draft-free place for 1 hour, or until it is approximately double in size.
- Heat the oven to 425 F. With a sifter or fine-mesh sieve, dust the risen loaf with a little more flour.
- Bake the loaf for 25 minutes, until it's a deep golden brown and sounds hollow when tapped.
- Remove from the oven and turn the bread out onto a rack to cool completely before slicing.
