SIMPLE WHOLE GRAIN, NO-KNEAD BREAD



Simple Whole Grain, No-Knead Bread image

Number Of Ingredients 5

For 2 loafs (4" x 10")
1050 gram = 37.0377 ounces freshly ground whole grain flour (I use spelt, but any grain works).
½ - teaspoon SAF instant yeast, SAF yeast simply works best.
1 tablespoon salt (or to taste)
4 cups room temperature water (See note in the article)

Steps:

  • Mix dry ingredients together in a big bowl.
  • Add the water and mix well, you do not have to knead.
  • Cover with plastic or lid (so it does not dry out) and leave for 12 - 16 hours at room temperature.
  • Forming the loaf: Put a bit of oil and gently place the dough on a clean surface, do not disturb the texture too much.
  • Spread it out a bit and fold it so it fits into the baking form. I usually fold it twice and then roll it to a loaf.
  • Let it rise for 1 -2 hours.
  • Place it in a cold oven, turn on the heat to 400 F, and set the timer for 1 hour.

Number Of Ingredients 9

1/2 cup whole wheat flour
1/2 cup cornmeal
1/3 cup plus 2 tablespoons assorted seeds, such as sesame seeds, flaxseed, sunflower kernels and poppy seeds, divided
1-3/4 teaspoons salt
1/4 teaspoon active dry yeast
3 cups bread flour, divided
2-1/4 cups cool water (55° to 65°)
2 tablespoons molasses
Additional cornmeal

Steps:

  • In a large bowl, combine the whole wheat flour, cornmeal, 1/3 cup seeds, salt, yeast and 2-1/2 cups bread flour. Stir in water and molasses until blended; dough will be wet and sticky., Cover with plastic wrap and let stand at room temperature until more than doubled in size and bubbles are present on surface, 12 to 18 hours. Stir in remaining bread flour., Grease a baking sheet and sprinkle well with additional cornmeal; turn dough onto prepared pan. Gently shape with a spatula into a 9-in. round loaf. Cover and let rise at room temperature for 2 hours or until dough holds an indentation when gently pressed (loaf will slightly increase in size)., Arrange one oven rack at lowest rack setting; place second rack in middle of oven. Place an oven-safe skillet on bottom oven rack; preheat oven and skillet to 475°. Meanwhile, in a small saucepan, bring 2 cups water to a boil., Gently press remaining seeds onto top of loaf. Wearing oven mitts, place bread on top rack. Pull bottom rack out by 6-8 in.; add boiling water to skillet. (Work quickly and carefully, pouring water away from you. Don't worry if some water is left in the saucepan.) Carefully slide bottom rack back into place; quickly close door to trap steam in oven., Reduce heat to 425°; bake for 10 minutes. Remove skillet from oven; bake bread 20-25 minutes longer or until deep golden brown and bread sounds hollow when center is tapped. Cool on a wire rack.

If needed, add a few more teaspoons of water, just enough to get the dough barely wet throughout. Cover the mixing bowl with a cloth or plastic wrap and let it rest overnight (about 12 hours) at room temperature.
  • In the morning, preheat the oven to 450°F (230°C) and place a 4 to 6-quart heavy covered pot (cast iron, enamel or ceramic) inside, until you reach the desired temperature, or ideally for 30 minutes.*
  • Once the oven is hot, remove the covered pot, and carefully line with parchment paper (be careful, it’s hot!). Gently scrape the dough from the bowl, shape onto a ball with your hands and place in the pot (the dough will look a little bit sticky and messy but it’s normal, just let it be). Sprinkle the extra seeds on top, and place in the oven with the lid on for 30 minutes. Remove the lid, and bake for another 10-15 minutes to get the outside crust golden brown and crispy. Transfer onto a cooling rack, and let cool. It’s done!

  • Stir the water, yeast, honey, all-purpose, whole-wheat and rye flours, salt, sesame seeds, sunflower seeds, pumpkin seeds, flax seeds and multigrain cereal together in a large bowl with a rubber spatula to form a sticky, lumpy dough. Cover the bowl with plastic wrap and leave to ferment and rise at room temperature for at least 12 and up to 20 hours. It will rise and look very bubbly.
  • Dust the counter lightly with flour and scrape the dough out onto it. Flour your hands and fold the dough in thirds like a letter, flip it over and let it rest on the counter for about 15 minutes.
  • Meanwhile, line a large bowl or colander with a linen kitchen towel and sprinkle it thickly flour all the way up the sides along with the multigrain cereal. Sprinkle a handful of additional pumpkin seeds in the bowl for decoration, if desired.
  • Dust your hands with flour and scoop up the dough, using a bench scraper to tuck the edges under to form a ball. Flip it over, smooth side down into the prepared bowl. Cover the dough with a towel or plastic wrap and let it rise in a warm place (70-75 degrees F) for 1 1/2 hours.

I tend to bake this bread for longer as it is very moist, but it will depend on your oven. Remove from the oven and use the overhanging baking paper to lift the loaf out of the tin. Place the loaf on a cooling rack.
  • When the loaf is cool enough to handle, gently peel off the baking paper, then allow to cool completely before slicing. I throw any of the seeds or oats that fall off the top into my muesli jar!
