I found this in a Pillsbury "slow cooker" cookbook. Made these last Sunday and they were very tasty. A hashbrown casserole with a Mexican flair!

Number Of Ingredients 7

1 can condensed cream of mushroom soup
1 (8 ounce) container sour cream
1 (4 1/2 ounce) can chopped green chilies
1 1/2 cups shredded colby-monterey jack cheese
1 (32 ounce) package frozen southern-style cubed hash brown potatoes
3 green onions, sliced
1/2 cup finely crushed nacho chip

Steps:

  • Spray 4 to 6-quart slow cooker with nonstick cooking spray.
  • In medium bowl, combine soup, sour cream, chiles, and cheese, mix well.
  • Arrange half of potatoes in sprayed slow cooker.
  • Top with half of sour cream mixture; spread evenly.
  • Top with remaining potatoes and sour cream mixture; spread evenly.
  • Cover, cook on high setting for 3 1/2 to 4 1/2 hours.
  • Just before serving, sprinkle top with onions and chips.

This recipe has been in our family for years. They take about 5 minutes to prepare and there is no mess to clean up, no more grating potatoes

Number Of Ingredients 7

1/4 cup milk
2 cups potatoes, peeled and cut in chunks (about 2 large potatoes)
1 medium onion, cut in quarters
2 eggs
3 tablespoons flour
1 pinch baking powder
salt and pepper

Steps:

  • Place all ingredients in a blender, in the order of the recipe.
  • Blend pulsating until well mixed.
  • Pour onto a hot griddle (380°) that has been greased (I use margarine). Pour to the size you desire.
  • Turn when edges are brown.
  • These are great served with sour cream, applesauce, jam, syrup or cheese.

I love cooking anything with no fuss & no muss. This is an easy & yummy side dish. Plus its colorful with the skins on.

2 pound(s) red potatoes, unpeeled & cut into chunks
5 - garlic cloves, peeled
1/3 cup(s) miracle whip dressing
1/4 cup(s) parmesan cheese, grated
1 teaspoon(s) parsley,fresh & chopped

Steps:

  • Add the potatoes & garlic to a large pot with boiling water. Cook for about 20 mins or until tender. Drain out water & return to pot.
  • Then mash the potatoes & garlic with dressing & cheese until light & fluffy.
  • Then sprinkle with the parsley & serve immediately.
  • Special Tip: The leftovers reheat well in the microwave.
