No-Fuss Beef Stew image

Simmering frozen whole kernel corn and broccoli cuts in robust canned consommé speeds preparation of beef stew.

2 teaspoons olive oil
1 1/4 lb boneless beef top sirloin, trimmed of fat, cut into cubes
2 to 3 cloves garlic, finely chopped
1 cup water
1/3 cup all-purpose flour
1 can (10 1/2 oz) condensed beef consommé
1 cup frozen corn
3 cups Frozen Broccoli Cuts
1 cup chopped red bell pepper

Steps:

  • In 4-quart saucepan, heat oil over medium-high heat until hot. Cook beef and garlic in oil; cook, stirring occasionally, until beef is brown.
  • In small bowl, beat water and flour with wire whisk until well blended. Add flour mixture, consommé and corn to meat mixture. Heat to boiling, stirring frequently. Reduce heat to medium-low; cook, stirring occasionally, about 3 minutes. Add broccoli and bell pepper; cook until thickened and vegetables are tender.

1 1/2 pounds beef chuck, cut into 1-inch pieces
1/4 cup all-purpose flour
2 cans (14.5 ounces each) diced tomatoes with green chiles
Coarse salt and pepper
3/4 pound small potatoes, halved
1/2 pound frozen peas and carrots, thawed

Steps:

  • Preheat oven to 375 degrees. In a large heavy pot, toss beef with flour. Stir in tomatoes, 1 teaspoon salt, 1/2 teaspoon pepper, and 4 cups water. Bring to a boil over medium-high, transfer to oven, and cook 1 hour. Stir in potatoes and cook until beef and potatoes are tender, about 1 hour more. Stir in peas and carrots and let sit 5 minutes before serving.

1 onion, chopped
2 (16 ounce) cans chili beans
1 (15 ounce) can tomato sauce
1 (10 ounce) can diced tomatoes with green chile peppers
1 (14.5 ounce) can peeled and diced tomatoes
11 ½ fluid ounces tomato juice
1 (4 ounce) can diced green chiles
1 (1.25 ounce) package chili seasoning mix

Steps:

  • Cook ground beef and onion until done.
  • In slow cooker or Dutch oven add all ingredients together. Simmer several hours.

  • If using a chuck roast, cut into 1-1/2 inch pieces and place in a large bowl. Sprinkle spices (salt, pepper, coriander, cloves) and minced garlic over the meat and toss to coat evenly. Place beef into the bottom of a 6-quart Dutch oven.
  • Add diced onions on top of the beef stew meat. Cut red potatoes into 1-inch cubes (no need to peel) and place on top of the onions, followed by sliced carrots, and quartered mushrooms.
  • In a separate bowl, whisk together tomato paste, beef broth, and red wine. Pour over the vegetables. Sprinkle with 5 tablespoons of tapioca. DO NOT STIR.
