Mom's Apple Fritters image

My mom made these for us after school in the fall with the apples we'd pick and buy from a fruit farm. Warm, crisp, and sweet, a perfect fall treat.

1 quart vegetable oil for deep-frying
1 ½ cups all-purpose flour
1 tablespoon white sugar
2 teaspoons baking powder
½ teaspoon salt
⅔ cup milk
2 eggs, beaten
1 tablespoon vegetable oil
3 cups apples - peeled, cored and chopped
1 cup cinnamon sugar

Steps:

  • Heat the oil in a deep-fryer or electric skillet to 375 degrees F (190 degrees C).
  • In a large bowl, stir together the flour, sugar, baking powder and salt. Pour in the milk, eggs and oil and stir until well blended. Mix in apples until they are evenly distributed.
  • Drop spoonfuls of the batter into the hot oil and fry until golden on both sides, about 5 minutes depending on the size. Fry in smaller batches so they are not crowded. Remove from the hot oil using a slotted spoon and drain briefly on paper towels. Toss with cinnamon sugar while still warm.

½ cup white sugar
3 tablespoons ground cinnamon
1 (10 ounce) can refrigerated buttermilk biscuits, separated and cut into 1-inch chunks
1 apple, peeled and chopped
½ cup chopped pecans
½ cup butter, melted
¾ cup brown sugar
1 teaspoon vanilla extract

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Mix white sugar and cinnamon together in a large resealable bag; add biscuits and seal. Shake bag until biscuits are coated in cinnamon-sugar.
  • Arrange half the apples and half the pecans in a round formation in an 8x8-inch pan; top with half the coated biscuits. Arrange half the remaining apples and pecans in a second layer and top with coated biscuits.
  • Melt butter in a saucepan over medium heat; dissolve brown sugar and vanilla extract in the melted butter. Pour butter-sugar mixture over biscuit mixture.
  • Bake in the preheated oven until biscuits are cooked through, about 35 minutes. Cool fritters in pan for 10 minutes before serving.

These Air Fryer Apple Fritters are just as delicious but much healthier and easier to make than the old fashioned deep fried version. With crisp edges, a soft buttery donut crumb, and loads of fresh apples, you'll want to make these delicious fritters all the time!

2-3 Granny Smith or Honeycrisp apples (yield 2 cups diced)
1 1/2 c all purpose flour
3/4 tsp baking powder
1/2 tsp salt
2 tsp ground cinnamon
1/4 tsp ground cloves
1/4 tsp ground nutmeg
1/2 c light brown sugar, lightly packed
4 Tbsp cold butter
1/3 c + 2 Tbsp whole milk
1 egg
1/2 tsp vanilla extract
2 c powdered sugar
2 Tbsp whole milk

Steps:

  • Prepare the air fryer basket or tray with a piece of parchment.
  • Peel, core and dice the apples. Place in a bowl and set aside.
  • In a large bowl, whisk together the flour, baking powder, salt, spices and sugar until well combined.
  • Shred the butter using a cheese grater and add it into the flour mixture. You can also work the butter in using a pasty cutter, but the cheese grater method will distribute the butter more evenly.
  • Stir the butter until well coated with the flour mixture.
  • In a glass measuring cup or separate bowl, combine the milk, egg and vanilla.
  • Pour milk mixture into the bowl with the flour and gently stir until just combined (do not overwork the batter).
  • Fold in the diced apples.
  • Using a small cookie scoop (1 1/2 tsp size) cluster 2-3 scoops of batter (to form 1 fritter) onto the parchment lined tray. With the back of the scoop, slightly flatten the top.
  • Leave at least 1 1/2 inches of space between each fritter.
  • Spray the tops with a neutral oil cooking spray.
  • Air fry for 9 minutes at 375 degrees until medium golden brown.
  • While the fritters cool, prepare the glaze.
  • In a bowl, mix the powdered sugar and milk until smooth.
  • Generously top each fritter with glaze. Allow to set 1 hour before storing.
  • Will keep for 2-3 days in an airtight container.

Steps:

  • In a large bowl, whisk together the flour, baking powder, salt, and cinnamon. Set aside.
  • In a medium bowl, combine the eggs, sugar, and vanilla.
  • Add the egg mixture to the flour mixture, stirring until smooth. Follow with milk and stir to combine.
  • Fold in the apples, just until covered. Don't overmix.
  • Fill a Dutch oven with at least 2 inches of vegetable oil and heat over medium-high until it reaches 350°F.
  • Using a tablespoon or a cookie scoop, dollop the batter into the oil, cooking 3-4 fritters at a time. Cook the fritters, turning them over, about 2 minutes per side, until deep golden brown.
  • Remove fritters from the oil with the spider tool and place on a tray lined with paper towels.
  • Make the glaze by combining powdered sugar, water, and lemon juice. Dip the fritters in the glaze.

Classic apple fritters are easy to make at home! Sweet dough full of apples is pan fried to a golden brown color and glazed for a sweet crunchy exterior.

1 ½ cups all purpose flour (regular or gluten-free measure-for-measure flour blend)
1 tablespoon granulated sugar
1 ½ teaspoons baking powder
¼ teaspoon salt
½ teaspoon ground cinnamon
1/8 teaspoon nutmeg
2/3 cup milk
2 large eggs
1 cup apple pie filling (OR fresh apple (see NOTES below))
1-2 cups Vegetable oil for frying the fritters
2 cups powdered sugar
4 tablespoons milk

Steps:

  • Heat the vegetable oil in a skillet or Dutch oven to 350 degrees. If a thermometer is not available, follow the test method in Notes below.
  • Using a knife or kitchen shears, cut up the apple filling into tiny pieces. Set aside.
  • In a large bowl, whisk together the flour, sugar, baking powder, salt, cinnamon, and nutmeg.
  • Add in the milk and eggs; mix until combined.
  • Fold in the apple pie filling with a spatula.
  • Drop the batter by ¼ cup full into the hot oil, spread them with a spoon to flatten the fritter out. Do not crowd the skillet or pan. Cook only 1-2 fritters at a time.
  • Allow the bottom side of the fritter to become golden brown, flip and cook the opposite side to golden brown; about 2 minutes on each side.
  • Transfer to a plate lined with a paper towels to absorb any excess oil. Transfer to a wire cooling rack to cool completely before glazing.Repeat for all fritters.
  • Line a rimmed baking sheet with parchment or foil. Place the cooling rack in the baking sheet. This allows excess glaze to drip down and not pool under the fritters.In a medium bowl, whisk together the powdered sugar and milk. Spoon the glaze over the fritters on the wire rack. To coat the entire fritter gently dip into the glaze allowing any excess to drip back into the bowl. Place on the wire rack for the glaze to set.
  • Best served warm same day. Can be stored in a container at room temperature or in the fridge.
