These chocolate zucchini muffins are a great way to use up all that garden zucchini! Moist, chocolatey, delicious muffins that everyone will love!

1 1/2 cups all purpose flour
1/2 cup unsweetened cocoa powder (Dutch process)
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1/2 cup canola oil
1/2 cup milk
2 large eggs
1 teaspoon vanilla
1/2 cup granulated sugar
1/4 cup brown sugar, lightly packed
1 1/2 cups grated zucchini, drained
1/2 cup semi-sweet chocolate chips

Steps:

  • Preheat the oven to 350 degrees F.
  • Line a muffin tin with paper liners or lightly spray with non-stick cooking spray and set aside.
  • In a large bowl, whisk together the flour, cocoa powder, baking powder, baking soda and salt until well combined.
  • In another bowl, whisk together the oil, milk, eggs, vanilla, sugar, and brown sugar until smooth and well combined.
  • Stir in the grated zucchini.
  • Add this mixture to the dry ingredients and stir until just combined.
  • Fold in the chocolate chips.
  • Fill the prepared muffin tin until the cups are 3/4 full and bake for 20-22 minutes, or until a toothpick inserted in the centre of a muffin comes out clean.
  • Cool for 5 minutes in the muffin tin, then remove the muffins to a wire rack to cool completely.
  • Store the muffins at room temperature in an airtight container for 3-5 days, or freeze for up to 3 months.

I found this recipe on Allrecipes. It is so delicious! Perhaps not for those on a low-fat diet, but all in all, pretty good for you. Moist, chocolate-y and so good. My husband hates zucchini, but he will eat these. Prep time does not include shredding zucchini. At the advice of a reviewer, I am posting this note. If you find that the cocoa will clump if you mix it with the vanilla and zucchini, you can add it instead with the flour and other dry ingredients. Enjoy!

2 cups shredded, unpeeled zucchini ((about 1 small/medium zucchini))
1/2 cup mashed ripe banana (about 1 medium/large or 4 ounces)
1/4 cup coconut oil
1/4 cup honey
1/4 cup brown sugar (light or dark)
1 teaspoon pure vanilla extract
2 large eggs (at room temperature)
1 teaspoon ground cinnamon
1/2 teaspoon baking soda
1/2 teaspoon baking powder (I recommend aluminum free)
1/2 teaspoon kosher salt
2 cups white whole wheat flour
1/3 cup semi-sweet chocolate chips (mini or regular (I used mini))

Steps:

  • Preheat the oven to 375 degrees F. Lightly grease a standard 12-cup muffin tin or line with paper liners.
  • Grate the zucchini, then throughly squeeze it with a paper towel to remove as much excess water as possible. Repeat as needed. If you have not already, melt the coconut oil and let come to room temperature
  • In the bowl of a standing mixer or a large mixing bowl, beat together the banana, honey, brown sugar, coconut oil, and vanilla extract until smooth. Add the eggs (make sure they are room temperature or the coconut oil may resolidify), then beat again until combined.
  • Sprinkle the cinnamon, baking soda, baking powder, and salt over the top of the batter, then mix to combine. Sprinkle in the flour, then mix on low speed, just until the flour disappears. By hand, fold in the zucchini and chocolate chips.
  • Scoop the batter into the prepared muffin cups, filling them 3/4 of the way. Bake for 20-25 minutes, until a toothpick inserted in the center comes out clean. Remove the muffins from the oven and place the pan on a wire rack. Let cool for 5 minutes in the pan, then carefully lift the muffins out of the pan and place them on a wire rack to cool completely (this will keep the muffins from becoming soggy).

Steps:

  • Preheat the oven to 350°F, and lightly coat 12 muffin cups with nonstick spray.
  • In a medium bowl, stir together the oat bran, Greek yogurt, ½ cup of milk, and vanilla extract. Let the mixture rest for at least 10 minutes while preparing the remaining ingredients.
  • In a separate bowl, whisk together the cocoa powder, flour, baking powder, cinnamon, nutmeg, allspice, and salt. In a third bowl, whisk together the coconut oil and egg whites. Stir in the molasses and maple syrup. Add the oat bran mixture, stirring until fully incorporated. Alternate between adding the flour mixture and remaining ¼ cup of milk, beginning and ending with the flour mixture, and stirring just until incorporated.
