I found this recipe years ago, and have not made any other since. This dough freezes very well.

2 ½ cups all-purpose flour
1 cup shortening
¼ teaspoon salt
1 egg
¼ cup cold water
1 tablespoon distilled white vinegar

Steps:

  • Combine flour and salt in a large bowl. Cut in shortening until it resembles coarse crumbs.
  • Mix egg, water, and vinegar together in a separate bowl. Pour into flour all at once and blend with a fork until dough forms into a ball. Divide into 3 equal-sized rounds.
  • Wrap with plastic and chill in a refrigerator until ready to prepare.

This is a great recipe. You don't have to add a bunch of sugar with the condensed milk. Light not to sweet but sweet enough custard like pie. If ya like it a little sweeter you can add 1/5 c of brown sugar. Thanksgiving must.

15 oz canned pumpkin
1 can(s) sweentend condensed milk
2 eggs
1 1/2 tsp cinnamon
1/2 tsp ginger
1/4 tsp clove, ground
1/4 tsp nutmeg ground
1 9 inch pie crust
1/5 c brown sugar. optional

Steps:

  • 1. Whisk eggs
  • 2. Add condensed milk and whisk well
  • 3. Add cinnamon clove ginger nutmeg and mix well ( if adding brown sugar do it now)
  • 4. Add pumpkin and mix well
  • 5. Pour into crust and bake in preheated 450° oven for 15 minutes
  • 6. Turn oven down to 350 ° and continue to bake 30 - 40 minutes or until crust is browned and pie is almost set.
  • 7. Serve warm or cold with whip cream

9 inch unbaked pie shell (I used a frozen Marie Callender's)
15 oz pumpkin puree (1 can)
14 oz sweetened condensed milk (1 can)
2 whole eggs
1 1/2 teaspoons pumpkin pie spice (or a mixture of cinnamon and nutmeg)
pinch salt
sweetened whipped cream ( for garnish, if desired)

Steps:

  • Preheat oven to 350 degrees.
  • In a large bowl, whisk pumpkin, condensed milk, eggs, cinnamon, nutmeg and salt together until uniform in color and smooth. Pour pumpkin mixture into unbaked pie shell and spread evenly.
  • Bake 40-45 minutes until the center is set. Remove from oven and cool completely.
  • Refrigerate until ready to serve.
  • Cut into slices, top with cream and serve!

3/4 cup honey
2 tablespoons molasses
1/4 teaspoon ground cloves
3 teaspoons cinnamon

Steps:

  • Mix in order given.
