PERFECT HOMEMADE BISCUITS

These easy, homemade biscuits are soft, fluffy, made completely from scratch and can be on your table in about 15 minutes! A weekend staple in our house!

3 cups all-purpose flour
3 tbsp sugar
1/2 tsp salt
4 tsp baking powder
1/2 tsp cream of tartar
3/4 cup COLD butter
1 egg
1 cup whole milk

Steps:

  • Preheat oven to 450 degrees.
  • The secret to excellent biscuits is COLD BUTTER. Really cold. Many times the biscuit dough gets worked so much that the butter softens before the biscuits even go in the oven. Try cutting the butter into small pieces and stick back in the fridge pulling out only when ready to incorporate into the dough.
  • Combine the dry ingredients in a large bowl.
  • Use a pastry cutter to cut cold butter into flour mixture. Don't go too crazy here - you want to see small, pea-sized pieces of butter throughout the dough.
  • Add in the milk and egg and mix just until the ingredients are combined. The dough will be sticky but don't keep working it. You should be able to see the butter pieces in the dough.
  • Turn the dough out onto a generously floured surface. Sprinkle some flour on to the top of dough so it won't stick to your fingers and knead 10-15 times. If the dough is super sticky just sprinkle on some additional flour.
  • Pat the dough out to 3/4 - 1 inch thickness and cut with a biscuit cutter or glass. I ended up with nine this time but depending on who is snacking on biscuit dough, I can get up to 12 biscuits.
  • Place the biscuits on a lightly greased baking sheet or parchment lined baking sheet and bake for 10 to 15 minutes or until golden brown on top.
  • For extra yumminess, brush the tops of the biscuits with melted butter...

Quick, easy Drop Biscuits. Tender, fluffy, and completely fuss free! So simple to whip up and they turn out perfectly every time.

1/4 cup butter (cold)
1 cup all-purpose flour
1 cup whole wheat pastry flour (or swap white whole wheat flour or regular whole wheat flour*)
1 tablespoon baking powder (I recommend aluminum free)
1/2 teaspoon kosher salt
1 cup whole milk (or buttermilk)
3 tablespoons plain Greek yogurt (I used nonfat)
1 teaspoon honey
Grated parmesan and finely chopped fresh chives (try adding a pinch of garlic powder to the dry ingredients with this one!)
Shredded sharp cheddar and ground black pepper
Shredded gruyere and finely chopped fresh rosemary or thyme

Steps:

  • Place a rack in the center of your oven and preheat to 450 degrees F. Line a large baking sheet with parchment paper or a silicone baking mat. Dice the butter into small pieces and place it in the freezer while you prepare the other ingredients.
  • In a large mixing bowl, whisk together the all-purpose flour, whole wheat flour, baking powder, and salt. (If adding any herbs, garlic powder, or black pepper, do it here.)
  • Scatter the cold butter pieces over the top. With a pastry blender (or my favorite, your fingers), cut in the butter until the mixture resembles coarse crumbs. Some pieces may be the size of small pebbles and others as large as peas.
  • In a separate bowl or large measuring cup, whisk together the milk, Greek yogurt, and honey until smoothly combined. Pour the milk mixture into the dry ingredients a little at a time, stirring lightly between additions. (If adding cheese, add it slowly as you add the milk.) Stop stirring as soon as the dough holds together. It will be very moist and seem wet.
  • Drop the batter by spoonfuls onto a cookie sheet. I like to use a muffin scoop for this-you'll have 9 large or 12(ish) more moderately sized biscuits total. Bake for 10 to 13 minutes, until the tops are golden and spring back lightly when touched. Enjoy warm.

Steps:

  • 1. Preheat oven to 35o degrees. Coat baking sheet with cooking spray. In med. bowl, combine flour, baking powder, salt, and butter and mix til crumbly. (Do not over blend.) Add egg and milk and mix till moistened. Drop by heaping tablespoonfuls onto the baking sheet. Bake for 20 to 25 min. or until golden brown. 2 c flour
1 Tbsp + 1 1/2 tsp. baking powder
1 tsp salt
1/2 tsp baking soda
1 1/2 c sour cream, i would not suggest subbing light
1 Tbsp + 1 tsp. vegetable oil
4 Tbsp soft butter

Steps:

  • 1. In medium-sized bowl, whisk first 4 ingredients til well mixed.
  • 2. Add sour cream in spoonfuls on top, add oil and mix til all is just moistened with a spoon. Switch to using your hands turning the dough to get all the last of the dry stuff on the bottom of the bowl. Knead 8 times on floured surface.
  • 3. Roll thick to only about an 8" circle. Just a few passes with your (floured) rolling pin. Cut out 6 biscuits with a biscuit cutter or a floured glass. Get 2 more out of the last of the dough. (Bunch it back together, knead it just a bit, pat or roll it and cut.) Pitch any last little tidbit if any left. I place mine on my old round metal pizza pan covered with foil and sprayed with butter-flavored Pam. But a cookie sheet will work just fine.
  • 4. Place little pats of butter on top, or spread it a little if the butter is VERY soft and doesn't deflate the biscuits while doing so. Bake in hot, preheated 425 oven for 12-15 minutes (ovens vary) or til golden brown on top. Remove from oven and butter tops again with other half of butter. Serve warm with more butter and homemade jam or honey. Makes 8 tall sour cream biscuits.

  • Before starting to preheat the oven to 400°F. Sift the flour using a colander or a sifting device. Add the flour to a large mixing bowl. Add the salt and the baking powder and whisk.
  • Add the cold butter pieces to the dry ingredients and using a fork or a pastry cutter start incorporating the unsalted butter to the flour. Take your time and make sure all ingredients mix together. You will know this has happened when the flour looks like sand.

  • Add the chicken to a large pot of water. Add the bouillon cubes, salt & pepper and bring to a boil over high heat.   • Whisk the cornstarch into the cup of milk. Add the milk to the hot broth and stir constantly over medium heat until the mixture thickens. This takes about 2 to 3 minutes. Remove the pot from the heat and taste the broth. Add additional salt and pepper to taste, then transfer the dumplings back to the pot.
