CREAMY CARBONARA

Creamy Carbonara image

This Creamy Carbonara recipe is a plate of heavenly, creamy pasta. Silky spaghetti with crispy pancetta in a super creamy and cheesy sauce. Simply delicious and so easy to make at home.

Provided by Joanna Cismaru

Categories     Main Course

Time 30m

Number Of Ingredients 7

8 ounces spaghetti (uncooked)
6 ounce pancetta (chopped)
2 cups half and half
2 large egg yolks
1 ½ cups Parmesan cheese (freshly grated, plus more for garnish)
1 teaspoon pepper (freshly ground)
4 tablespoon basil (chopped)

Steps:

  • Bring a large pot of salted water to boil over high heat. Add the pasta and cook according to package instructions. Drain and set aside.
  • Add the pancetta to a large skillet and saute over medium-low heat until crisp, about 8 minutes. Transfer the pancetta to a bowl using a slotted spoon.
  • Add the half and half to the skillet and bring to a simmer. Whisk the egg yolks into the sauce. Whisk in the Parmesan cheese. Stir in the black pepper. Taste for salt and season if needed. I find no salt is needed since the cheese adds plenty of saltiness.
  • Add the cooked spaghetti, bacon and basil to the skillet and toss well to combine.
  • Garnish with more Parmesan cheese if desired and serve immediately.

TRADITIONAL ITALIAN SPAGHETTI CARBONARA

Traditional Italian Spaghetti Carbonara image

Spaghetti Carbonara is one of the most famous Pasta Recipes of Roman Cuisine. It's a simple pasta dish, whose authentic recipe wants only 5 simple ingredients: eggs, guanciale, ground black pepper, grated pecorino romano and spaghetti. This is the traditional recipe for spaghetti carbonara, so you need no other ingredients; DO NOT use garlic, parsley, onion, cream, milk or parmigiano Reggiano. If you read this recipe thoroughly, you will see that there are many Spaghetti Carbonara variants, also here in Italy, but they are...variants of this authentic recipe. Which is very simple and fast to make. The only difficulty is to make sure that the eggs do not cook so much to look like scrumbled eggs or too little to be raw and cold. There are a few tricks to make a perfect carbonara and now we'll let you know.

Provided by Recipes from Italy

Categories     pasta recipes

Time 30m

Yield 4

Number Of Ingredients 5

350 g (12 oz) of spaghetti
200 g (7 oz) of guanciale
4 whole medium eggs (1 egg each yeld)
100 g ((1 cup + 1 tablespoon) of grated Pecorino Romano cheese
ground black pepper

Steps:

  • Cut the guanciale into small pieces then simmer in a frying pan over medium heat for about 2 or 3 minutes. When ready, turn off the heat, cover with a lid and set aside.
  • Whisk grated Pecorino Romano with eggs. Add a little bit of ground black pepper. Stir quickly until you get a creamy sauce and set aside.
  • Cook the spaghetti al dente in plenty of salted water, following the cooking time you find on the pasta packaging.
  • With the help of a spaghetti spoon, drain when they are ready. Then put them in the frying pan, OVER HIGH HEAT, to season them properly with the fat of the guanciale.
  • When the spaghetti and guanciale are sizzling in the pan, turn off the heat. Now quickly add the eggs and pecorino cream and stir. Pay attention to the consistency, which must be creamy, but not fluid. If you notice that your spaghetti carbonara is too liquid, add some grated pecorino. On the other hand, if you see that they are too sticky and dense, add 1 or 2 tablespoons of cooking water.
  • With the help of a ladle and a fork, create a pasta nest and place it on a plate. Add guanciale (the one left in the pan), freshly grounded black pepper and grated pecorino Romano cheese to taste.

EASY CARBONARA

Easy carbonara image

This easy pasta sauce will cook in about the same time it takes to cook some dried pasta in boiling salted water - we're talking about quick and easy options here. These amounts serve 2 but are easy to scale up or down. Remember you want about 75g of dried pasta per person - use whatever shape you've got. Or, check out my super-simple method for fresh pasta, using just flour and water.

Provided by Jamie Oliver

Categories     Pork     Keep cooking and carry on

Time 10m

Yield 2

Number Of Ingredients 5

150 g dried spaghetti
2 rashers of higher-welfare smoked streaky bacon
olive oil
2 free-range eggs
30 g Parmesan cheese, plus extra for grating

Steps:

  • Cook the pasta in a pan of boiling salted water according to the packet instructions.
  • Slice the bacon and place in a non-stick frying pan on a medium heat with half a tablespoon of olive oil and a really good pinch of black pepper. Leave it to get super-golden and crispy, tossing occasionally, then turn off the heat.
  • Meanwhile, beat the eggs in a bowl, then finely grate in the Parmesan and mix well.
  • Use tongs to transfer your pasta straight into the pan and toss with the bacon.
  • Pour the Parmesan eggs into the pan, and keep everything moving, loosening with splashes of the pasta cooking water until you have a silky sauce. Make sure the pan isn't too hot otherwise the eggs will scramble.
  • Plate up the pasta, and finish with an extra grating of Parmesan.

NO-CREAM CARBONARA

No-Cream Carbonara image

Got this recipe from somewhere in the net, after I browsed for some info about the history of spaghetti carbonara. And to my surprise, the original carbonara didn't even use any cream! Instead it got the "creamy" thingy from the partially-cooked egg.

Provided by j.sugiarto

Categories     Spaghetti

Time 30m

Yield 1 serving(s)

Number Of Ingredients 7

100 g spaghetti
1 tablespoon olive oil
1 egg
100 g pancetta, chopped
25 g parmesan cheese, grated
salt, to taste
black pepper, to taste

Steps:

  • Get the spaghetti boiling in plenty of salted water.
  • Heat olive oil in pan over medium-high heat and fry the pancetta for 1-2 minutes. Transfer to a bowl.
  • Beat the egg lightly using a fork in another bowl.
  • When the pasta is cooked, drain it but put a bowl under the colander in order to retain some of the water; you may need that later.
  • Now return the pasta to the pan, and stir in first the pancetta with the hot oil, and then the beaten eggs. The egg will cook in the heat from the pasta, but here is where the flair comes in; you need to stir the egg into the mix so that it cooks into a cream and not hundreds of pieces of tiny omelette.
  • Add the cheese, and if the mixture is too dry, stir in a little of the cooking water from the pasta (no more than a spoonful). Cook until the cheese just starts to melt and the egg is still creamy.
  • Serve with coarse-ground black pepper.

  • In a bowl, beat together 2 whole eggs and 3 egg yolks until the eggs drip neatly through the fork (no gloopy bits). Stir in 2.6oz/75g pecorino and a good few pinches of black pepper. Place to one side, away from direct heat.
  • Pop your spaghetti in heavily salted boiling water and cook until al dente (a teeny bit hard). Scoop a cup of starchy pasta water out towards the end. Don't fill the pot up with too much water - try and keep the water nice and shallow so it's as starchy as possible.
  • Meanwhile, add a clove of gently crushed garlic and 9oz/250g pancetta to a pan over medium heat. If your pancetta is fairly lean then heat 1 tsp olive oil beforehand. Fry until nice and crispy, with the fat fully rendered.
  • Remove garlic and TURN OFF HEAT. If you have an electric stove top then take the pan off the heat completely. Wait for a minute until the oil stops sizzling.
