THE REAL MOJITO
This is an authentic recipe for mojito. I sized the recipe for one serving, but you can adjust it accordingly and make a pitcher full. It's a very refreshing drink for hot summer days. Be careful when drinking it, however. If you make a pitcher you might be tempted to drink the whole thing yourself, and you just might find yourself talking Spanish in no time! Tonic water can be substituted instead of the soda water but the taste is different and somewhat bitter.

- Place mint leaves and 1 lime wedge into a sturdy glass. Use a muddler to crush the mint and lime to release the mint oils and lime juice. Add 2 more lime wedges and the sugar, and muddle again to release the lime juice. Do not strain the mixture. Fill the glass almost to the top with ice. Pour the rum over the ice, and fill the glass with carbonated water. Stir, taste, and add more sugar if desired. Garnish with the remaining lime wedge.

- Fill the glass all the way to the top with crushed ice and add the rum. Stir with a bar spoon.
- Top off with club soda and garnish with a mint sprig, lime wedge, and pomegranate arils. Add a straw next to the mint garnish and enjoy immediately.

- In a sturdy, heavy-bottomed, tall cocktail glass, add the sugar and 3 sprigs of the mint (we’ll reserve the last sprig for garnish).
- Muddle the mint with the sugar about 5 to 10 times, until the mint is very fragrant (not so much that the mint completely falls apart).
- Pour in the rum and the lime juice, and gently stir a few times to help dissolve the sugar. Fill the glass with ice.
- Fill the glass with club soda nearly to the top. Gently stir in a circular motion to combine, then use your spoon to drag some of the muddled mint higher up into the glass.

- Muddle the mint and limes: Add the limes, mint, and rum to large glass. You can muddle right into the pitcher, but I find adding everything to a large glass is much easier to the limes can't slip away. Muddle until the limes are crushed and mint leaves are bruised.
- Finish the mojito: You can add ice straight to the pitcher now or put ice individually in glasses to avoid having the mojito in your pitcher becoming watered down. Add the muddled mint and lime to your pitcher and rinse the glass with 1/2 cup soda water. Add the rest of the soda to the pitcher along with the simple syrup, mix with a large spoon, and serve.

- Mix 1 cup of hot water with 1 cup of sugar and keep stirring until all the sugar dissolves. Let the mixture cool down and store in the fridge for up to 1 month.
- Pull about 8 mint leaves from the lower part of your mint sprigs and keep the upper, more aromatic and attractive part for later use as garnish. In case you are using spearmint, which is a sweeter, more delicate type of mint, there is no need to muddle the leaves at all. All you need to do to get the flavor out of your mint is slap it sharply a couple of times. Then, place the mint into a frozen highball glass. Next add 1 part sugar syrup, 1 part fresh lime juice (all solids strained out) and 2 parts light rum. Fill 3/4 of the glass with ice cubes or crushed ice and stir until all ingredients are nicely mixed together. Fill your glass to the top with ice and pour in the sparkling water. Give the drink a gentle final stir and toss in a straw. As a final touch, choose a couple of nice looking mint sprigs, hold them together into a tight bunch and slightly bruise the leaves by hitting them on the back side of your hand and place them right next to the straw. This will release more minty a
