Perfect easy little treat for the vegans in your life ! Too hot to cook, so these are a summer go-to dessert

Number Of Ingredients 7

1 1/8 c pecan pieces, divided
12 medium pitted dates, chopped
1/8 tsp salt
1 Tbsp brown sugar
1 Tbsp honey
1 tsp vanilla
12 medium whole pecan halves or pieces

Steps:

  • 1. Place 1 cup of pecans, dates, salt ,brown sugar, honey and vanilla extract in a food processor with and process until the mixture sticks together.
  • 2. Place the processed pecan mixture into a bowl and mix in the 2 tablespoons of chopped pecans.
  • 3. Form into 12 small patties and press one whole pecan half or pieces into each patty. Place on a flat plate covered with wax paper and refrigerate for 30 minutes or more. Serve chilled.

1 cup firmly packed light brown sugar
1 cup granulated sugar
1/2 cup light cream
2 tablespoons salted butter
1 cup pecan halves

Steps:

  • Place both types sugar and the cream in a heavy saucepan and bring to a boil over medium heat, stirring constantly. When the temperature reaches 228 degrees on candy thermometer, stir in the butter and pecans and continue to cook, stirring constantly, until the mixture reaches 236 degrees. Remove the pan from the heat and allow the mixture to cool for 5 minutes. Beat the mixture with a wooden spoon until the candy coats the pecans but does not lose its gloss. Drop the pralines 1 tablespoon at a time onto a well-greased piece of aluminum foil or a slab of confectioner's marble. Allow the pralines to cool. They can be eaten as is, stored in tins, or crumbled over vanilla ice cream for a New Orleans - style dessert.

1 cup granulated sugar
1/2 cup heavy cream
2 tablespoons butter
2 cups pecan halves
1/2 teaspoon vanilla

Steps:

  • Place all ingredients into a heavy bottomed sauce pan fitted with a candy thermometer. Heat until ingredients reach 238 degrees, or soft ball stage. Scoop and drop by the tablespoonful onto well greased or non-stick baking sheet or marble baker's counter. Allow to cool to room temperature.

NO-BAKE CORNFLAKE-CHOCOLATE PRALINES

1/2 cup pecans
2 cups cornflakes
6 tablespoons unsalted butter
1/4 cup pure cane syrup (such as Steen's) or 2 tablespoons each molasses and light corn syrup
2 tablespoons heavy cream
Pinch of salt
1 ounce semisweet chocolate, chopped
1 ounce white chocolate, chopped

Steps:

  • Toast the pecans in a medium skillet over medium heat, stirring, about 5 minutes. Transfer to a cutting board; let cool, then coarsely chop.
  • Line 2 baking sheets with parchment paper. Toss the pecans and cornflakes in a large bowl.
  • Make the caramel: Bring the butter, cane syrup, heavy cream and salt to a boil in a medium saucepan over medium heat and cook, stirring with a wooden spoon, until the mixture pulls away from the sides of the pan and comes together into a loose ball, about 5 minutes. Remove from the heat. Once the caramel stops bubbling, stir in the semisweet chocolate until melted.
  • Pour the chocolate caramel over the cornflake mixture and toss to coat. Scoop heaping tablespoonfuls of the mixture onto the prepared baking sheets and pack into compact mounds with your fingers. Let set, about 1 hour.
  • Put the white chocolate in a small microwave-safe bowl and microwave in 30-second intervals, stirring, until melted. Drizzle over the cookies and let set, about 1 more hour.

2 cups granulated sugar
1 cups half-and-half
1/3 stick butter
1/8 teaspoon baking soda
1 1/2 cups whole pecans

Steps:

  • Combine all ingredients except the pecans in a heavy saucepan. Over medium heat stir mixture until it comes to a boil. Turn heat down to medium-low and continue to stir. Spoon mixture up on sides of pan to melt any sugar that hasn't melted.
  • Cook until mixture reaches 238 to 241 degrees F on a candy thermometer or soft ball stage. Stir in the pecans. Remove from heat. Stir until the mixture begins to thicken and becomes creamy and cloudy. Drop onto parchment paper, buttered pan or buttered marble slab, using a spoon or ice cream scoop. Let cool.

1 cup sugar
1 cup packed brown sugar
1/2 cup water
2 tablespoons honey
1/2 teaspoon ground cinnamon
3 teaspoons vanilla extract
1/4 teaspoon rum extract
3 cups pecan halves

Steps:

  • In a heavy saucepan, combine the sugars, water, honey and cinnamon. Bring to a boil over medium heat; do not stir. Cook over medium heat until a candy thermometer reads 240° (soft-ball stage). Remove from the heat; add extracts. Cool to lukewarm without stirring., Beat with a mixer for 2-3 minutes or until creamy. Stir in pecans until coated. Turn onto waxed paper (mixture will be sticky); separate large clumps. Cool for several hours or until dry and sugary. Store in an airtight container.

2 cups sweetened flaked coconut
1 1/2 cups sugar
1 cup brown sugar
1/2 cup evaporated milk
1/2 cup light corn syrup
1/2 cup unsalted butter
1 teaspoon vanilla extract
1/2 teaspoon salt

Steps:

  • In a large saucepan over medium-high heat, stir together sugars, evaporated milk, corn syrup and butter until melted and smooth.
  • Bring to a boil and cook for 3 minutes, then remove from heat and stir in vanilla extract and salt. Fold in shredded coconut and pecans until incorporated, then continue stirring for 3-4 minutes, or until mixture begins to cool.
  • Once thick, use a tablespoon or small ice cream scoop to drop spoonfuls of cookie "dough" onto wax paper-lined baking sheets.
  • Let set completely (freezing if necessary), then enjoy!

1 1/2 cups granulated sugar
3/4 cup packed brown sugar
1/2 cup butter, cut into pieces
1/2 cup milk
2 tablespoons corn syrup
5 cups pecan halves, toasted

Steps:

  • Line 15x10-inch pan with sides with waxed paper. In heavy 3-quart saucepan, stir together granulated sugar, brown sugar, butter, milk and corn syrup. Heat to boiling over medium heat, stirring constantly. Boil 7 to 8 minutes, stirring constantly, to 234°F on candy thermometer or until small amount of mixture dropped into a cup of very cold water forms a ball that flattens when removed from water.
  • Remove from heat; vigorously stir in pecans. Spoon mixture into pan, spreading in even layer. Let stand 20 minutes or until firm. Break into pieces. Store in airtight container at room temperature up to 1 week.
