NO BAKE PUMPKIN OATMEAL COOKIES
Our no bake pumpkin cookies take just minutes to make and are so sweet, chewy, and delicious!

Steps:
- Line a baking sheet with either wax paper or a silicone mat.Add the pumpkin puree, butter, milk and sugar to a small pan and warm over medium heat. Bring to a simmer, then boil for around 1 minute. Remove from heat.
- Meanwhile, add both your 1-minute oats and old fashioned oats to a bowl. Add the pumpkin spice and salt, and mix through.
- Add the vanilla extract to the pumpkin-butter mixture and then add it to the bowl with the oats. Mix well.
- Take spoonfuls of the mixture (I use a slightly heaping tablespoon measure) and press together with your hands just slightly to form into a somewhat flat ball. Set on the prepared baking sheet and allow to cool.

- Combine sugar, butter and milk in a pan on top of the stove. Bring to a hard rolling boil and then boil for 1 minute, stirring to make sure ingredients do not stick.
- Remove from heat and stir in vanilla extract, pumpkin pie spice and pumpkin until mixture is melted and smooth. Fold in oats and drop by spoonfuls onto wax paper.
- Let cool in refrigerator for several hours. This is not a hard cookie but more of a chewy, gooey pumpkin cookie. Store in an air tight container in the refrigerator.

- Position a rack in the center of the oven and preheat to 350 degrees F. Line 2 heavy large baking sheets with parchment paper.
- In a medium bowl, combine the flour, oats, cinnamon, baking soda, salt and allspice. Stir to blend well. In a large bowl, combine the sugar, pumpkin puree, oil, syrup and vanilla; whisk to blend. Using a flexible rubber spatula, gradually stir the dry ingredients into the pumpkin mixture. Stir in the raisins.
- For each cookie, drop 1 generous tablespoon of batter onto the prepared baking sheet, spacing the mounds about 1 inch apart (or use a mini ice cream scoop). Using moistened fingertips, flatten each to a 2-inch-diameter round. Sprinkle each cookie with a bit more raw sugar.
- Bake the cookies until brown and a bit firm to the touch, 17 to 20 minutes. Using a metal spatula, transfer the cookies to a rack and cool completely.

- Preheat oven to 350°F; lightly grease cookie sheet.
- Combine flour, oats, baking soda, cinnamon, and salt in medium bowl. Beat butter, brown sugar, and granulated sugar in a large bowl until light and fluffy. Add pumpkin, egg, and vanilla mix well. Add flour and mix well. Stir in nuts and raisins.
