1/4 cup creamy peanut butter
1 cup La Choy® Chow Mein Noodles
1/2 cup miniature marshmallows

Steps:

  • Place morsels and peanut butter in large microwave-safe container. Heat in microwave on HIGH 1 minute or until almost melted, stirring after 45 seconds. Then stir until smooth.
  • Add chow mein noodles and marshmallows. Stir until well coated.
  • Drop mixture by spoonfuls onto waxed paper-lined plate. Cool in freezer 10 minutes or until firm. Store leftovers in refrigerator.

Our No-Bake Chow Mein Cookies recipe has been a family favorite for years! It's a simple refrigerator drop cookie that only needs 4 ingredients: crunchy chow mein noodles, butterscotch chips, chocolate chips, and peanuts.

11-12 ounces butterscotch chips (about 2 cups)
11-12 ounces chocolate chips (about 2 cups)
12 ounces chow mein noodles (about 6 cups)
1 cup salted peanuts

Steps:

  • Line a baking sheet with wax paper or parchment paper.
  • Place both the butterscotch chips and the chocolate chips in a large microwave-safe bowl. Melt the chips together in the microwave, stirring chips every 30-45 seconds, until smooth.
  • Remove from microwave and begin folding in the chow mein noodles a little at a time until they are completely coated with the melted chip mixture. Fold in peanuts until they are completely coated.
  • Drop chow mein mixture by the spoonful onto prepared baking sheet. Place baking sheet in the refrigerator until Chow Mein Cookies have completely set.
  • Once Chow Mein Cookies have set, store covered at room temperature.

Marshmallow Peanut Butter No Bake Cookies are made with only 4 ingredients - marshmallows, peanut butter, butterscotch chips and chow mein noodles!

1 cup butterscotch chips
1 cup peanut butter
1 cup chow mein noodles
2 cups mini marshmallows

Steps:

  • First, melt the butterscotch chips and peanut butter in a medium saucepan over low heat, stirring just until barely melted and smooth. Remove from heat and add the chow mein noodles.
  • Wait 1-2 minutes before stirring in the marshmallows - you don't want them to melt so if your mixture is really hot, wait until it cools a bit before adding the marshmallows. Your peanut butter mixture shouldn't be very hot, but if you heated it a little bit too long, give it time to cool.
  • Use two spoons to drop mixture by cookie size onto wax paper to cool. The setting process will take a few hours at room temperature but takes a lot less time if you put the cookies in the fridge to set.

12 ounces butterscotch chips
1 cup peanut butter (, (avoid natural peanut butters))
12 ounces chow mein noodles

Steps:

  • Add the white chocolate and butterscotch chips together in a large microwave safe glass bowl.
  • Microwave in 30 second increments, stirring well in between each one, until fully melted (should be 90 seconds total).
  • Stir in the chow mein noodles and the peanut butter until well mixed.
  • Using a 2 tablespoon sized scoop, scoop out 30 "cookies" onto two parchment paper lined baking sheets and let them sit at room temperature for 1 hour to harden or put them in the refrigerator for 10 minutes to harden before serving.

Haystack Cookies with Peanut Butter and crunchy chow mein noodles are a delicious variation of our normal no bake Haystack cookies with just butterscotch chips. These haystack cookies combine creamy peanut butter with baking chips to create a really rich and amazing cookie that can be ready to enjoy in literally minutes.

2 cups Butterscotch Chips (11 0z bag)
1 can of Chow Mein Noodles (5 oz)
1/2 cup of Peanut Butter
Holiday Sprinkles
Parchment Paper

Steps:

  • Add parchment paper to a baking sheet
  • Melt down Baking Chips and Peanut Butter - Melt down your Butterscotch chips and peanut butter together in a microwave safe bowl and heated for 20 seconds at a time.
  • Pull out, stir, 20 seconds back in, until chips are completely melted. Be careful, the chips (and bowl) can get quite hot.
  • DO NOT OVERHEAT or you will end up with a hard mess.
  • This process takes only about 1-2 minutes or less in total.
  • Add your crunchy noodles and melted chocolate together in a bowl and stir until well combined. This mixture will be quite thick at this point.
  • Use a 1 tablespoon scoop (or 2 spoons) to carefully lift out the haystacks and add in little stacks on your parchment paper. We were able to get 20 cookies out of our mixture.
  • Sprinkles - While still not set, go ahead and add your sprinkles.
  • Freeze - Put pan in freezer to harden, will take 5-7 minutes and then you can transfer to a cookie tin or zip lock bag.
  • You can also put in fridge, but may take longer to harden.

This is a quick and simple no-bake cookie that I used often as my kids were growing up - too many times I would realize that I was expected to bring cookies to a school progam in a couple hours and had nothing prepared. There were never any left to bring home so I can tell you from experience that it is easily doubled and that tripled, I used exactly one 12 oz package of chow mein noodles! There are other chow mein noodle cookies on here but all that I found called for chips, this one does not.

1/2 cup corn syrup
1/2 cup sugar
1 cup creamy peanut butter
1 cup chow mein noodles (I use a bit more)

Steps:

  • Bring sugar and syrup to a full boil in a heavy pan. Remove from heat at once. (Over cooking will make a hard cookie.)
  • Add peanut butter and noodles. Mix thoroughly.
  • Drop into rounded mounds onto waxed paper.
  • Let set for at least 15 minutes.
  • NOTE: I usually add more noodles for a crunchier cookie. I add a half cup or so at a time, stirring them in to make sure they will still stick together before deciding whether to add more or to stop.
  • PREP time includes cooling.

3/4 c chunky peanut butter
3/4 pkg chow mein noodles any size available in your area
1 pkg marshmallows (small bag)
1/4 c butter or margarine
1 pkg butter scotch morsels (any size ) add more or less according to taste
3 medium chocolate candy bars melted to drizzle

Steps:

  • 1. Melt butter in 5 qt sause pan swirling around to coat sides and bottom.
  • 2. Over Low Heat,Add peanut butter and 1/2 bag of butterscotch morsels. Stir till melted.
  • 3. Add marshmallows stirring quickly and add chow mein noodles, and all of the other items stirring quickly. Just untill mixed well. Drop onto wax paper your choice of size. Cool an hour.Drizzle with chocolate making a big dollop in the middle. Cool and put in a covered container,enjoy!!
