Steps:
- Place all ingredients in a bowl and mix together with a fork until well-combined.
- Refrigerate dough for about 20 minutes, then roll it into one large ball and divide in half. Repeat this process until you have 16 balls.
- Best served right away, but can be stored in an airtight container in the fridge for a few hours. If left longer they tend to lose their soft, chewy texture and become more firm.

Steps:
- Mix butter, peanut butter, and powdered sugar until well blended. More or less powdered sugar can be used to make mixture more or less dry.
- Make 1 inch balls and freeze for about 20 minutes or until firm.
- Microwave chocolate chips for 60 seconds, stopping every 15 seconds to check and stir. Adding some vegetable shortening can make the chocolate thinner and easier work with.
- Remove balls from freezer and dip most of the way into the chocolate, coating all but a small circle on top. Using a toothpick for this works well but simply dipping it in and pulling it out with a fork also works. Place completed buckeyes on wax paper and allow to harden. Refrigerate if needed.
- Enjoy!

- In the bowl of an electric mixer, add the peanut butter, ½ cup softened butter, vanilla, salt, and cinnamon. Beat on high until the mixture is very smooth. Scrape the bowl with a rubber spatula. Then turn the mixer on low and slowly add in the powdered sugar. If the mixture seems too sticky to roll after adding 3 ½ cups, add another ½ cup of powdered sugar. Beat until smooth.
- Set out a large baking sheet lined with parchment paper or wax paper. Scoop the peanut butter ball batter with a spoon and roll into 1 inch balls. Try to make them all the same size. Place on the baking sheet.
- Once the balls are very cold and stiff, place the chocolate chips and remaining 1 tablespoon butter, in a microwave-safe bowl. Microwave in one-minute increments, stirring in between, until the chocolate is melted and smooth. (You can also melt the chocolate in a small sauce pan over low heat.)
