These creamy, satisfying peanut butter balls are made with wholesome ingredients and take just a few minutes of hands-on time to make.

Number Of Ingredients 5

6 tbsp coconut flour ((or tigernut flour))
1 cup natural peanut butter ((creamy))
1/4 tsp sea salt
10 tsp maple syrup ((reduce to 5 teaspoons if using tigernut flour))
1 tsp vanilla extract ( (use this recipe to make your own))

Steps:

  • Place all ingredients in a bowl and mix together with a fork until well-combined.
  • Refrigerate dough for about 20 minutes, then roll it into one large ball and divide in half. Repeat this process until you have 16 balls.
  • Best served right away, but can be stored in an airtight container in the fridge for a few hours. If left longer they tend to lose their soft, chewy texture and become more firm.

These 5 minute peanut butter balls can be thrown together faster than you can make it to the cookie shop!

2 Cups Oatmeal
1 Cup Peanut Butter
4 Tablespoons Honey
3 Tablespoons Ground Flax Seed
1/2 Cup Dairy Free Chocolate Chips

Steps:

  • In a medium bowl, add the oatmeal, peanut butter, honey, flax seed and chocolate chips.
  • Mix all ingredients well
  • Take approximately 1 1/2 Tablespoons of batter and roll into a ball
  • Put the balls on a plate and let sit in the fridge for 1 hour or overnight. You can eat it immediately but it tastes best after it sits.

No oven but need a dessert that satisfies your taste buds AND your stomach? Look no further than these no-bake Buckeyes. All you need are four easy-to-find ingredients and a decent sweet tooth - we know you've got it all. It's never not the time to throw together this quick and easy dessert that's perfect for entertaining or even just for yourself!

½ cup melted butter, melted
1 ½ cups peanut butter
2 ½ cups powdered sugar
1 cup chocolate chips, enough for dipping

Steps:

  • Mix butter, peanut butter, and powdered sugar until well blended. More or less powdered sugar can be used to make mixture more or less dry.
  • Make 1 inch balls and freeze for about 20 minutes or until firm.
  • Microwave chocolate chips for 60 seconds, stopping every 15 seconds to check and stir. Adding some vegetable shortening can make the chocolate thinner and easier work with.
  • Remove balls from freezer and dip most of the way into the chocolate, coating all but a small circle on top. Using a toothpick for this works well but simply dipping it in and pulling it out with a fork also works. Place completed buckeyes on wax paper and allow to harden. Refrigerate if needed.
  • Enjoy!

  • In the bowl of an electric mixer, add the peanut butter, ½ cup softened butter, vanilla, salt, and cinnamon. Beat on high until the mixture is very smooth. Scrape the bowl with a rubber spatula. Then turn the mixer on low and slowly add in the powdered sugar. If the mixture seems too sticky to roll after adding 3 ½ cups, add another ½ cup of powdered sugar. Beat until smooth.
  • Set out a large baking sheet lined with parchment paper or wax paper. Scoop the peanut butter ball batter with a spoon and roll into 1 inch balls. Try to make them all the same size. Place on the baking sheet.
  • Once the balls are very cold and stiff, place the chocolate chips and remaining 1 tablespoon butter, in a microwave-safe bowl. Microwave in one-minute increments, stirring in between, until the chocolate is melted and smooth. (You can also melt the chocolate in a small sauce pan over low heat.)
